ORANGE BALSAMIC ROASTED OKRA



Orange Balsamic Roasted Okra image

This easy to make and healthy roasted okra is slightly crispy and has the most beautiful orange zing to it. These unexpected flavors are incredible.

1 lb okra (cut in half lengthwise)
1 teaspoon olive oil
½ teaspoon sea salt
Zest and juice from 1 orange
1 ½ tablespoons balsamic vinegar
1 tablespoon honey
1 small garlic clove (very finely minced)
Orange slices and fresh ground pepper (to serve)

Steps:

  • Preheat your oven to 450 degrees. Line a baking tray with parchment paper.
  • Toss the okra with the olive oil and sea salt and spread them out on the prepared baking sheet in a single layer. Roast the okra for 25 minutes.
  • While the okra is roasting, prepare the glaze. In a small frying pan over high heat, add the orange zest, orange juice, balsamic vinegar, honey, and garlic. Bring it to a boil and let it boil rapidly, whisking occasionally until it has reduced by half, about 5 minutes. If it reduces a little too much, just add another splash of orange juice or water.
  • Once the okra is nicely browned remove it from the oven and toss it with the orange glaze. Serve the okra with orange slices and a little fresh ground pepper.

I love okra !! yummy. This Recipe has come from watching my aunt as I was a little girl making this delicious concoction, the smell of this cooking oh my!! This recipe comes from south Louisiana, If you have some okra lovers, I suggest doubling this recipe. Also this recipe can be used with squash instead of okra, it is just as delicious as the okra!!! Just don't use the tomatoes with the squash, not unless you would like it that way, but do try the squash once without the tomatoes.

1 lb okra
4 slices bacon
1 small onion
1 (8 ounce) can stewed tomatoes (or 2 or 3 fresh tomatoes)
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne
1/4 teaspoon garlic powder
1/2 teaspoon sugar or 1/2 teaspoon Splenda sugar substitute

Steps:

  • Fry bacon until crisp, remove from skillet, set aside to drain and cool.
  • saute onions in the bacon grease until they turn clear.
  • add Okra to onions,cut up tomatoes or add can of stewed tomatoes.
  • add seasonings, crumble bacon add to skillet. Stir often.
  • cook until okra is no longer slimey.

1 cup orange juice
1 (40 g) packet orange jelly powder (orange jelly crystals)
3/4 cup boiling water
2 cups yoghurt
1/2 cup cream
oranges (to garnish) or lemon, segments (to garnish)

Steps:

  • Dissolve jelly in hot water and cool to room temperature, stir in orange juice and then yoghurt until smooth.
  • Refrigerate until mixture begins to set.
  • Remove from fridge & whip until mixture is foamy.
  • Beat cream, until fluffy and fold into mixture.
  • Spoon into serving glasses & refrigerate until mixture is set, garnish with orange or lemon segments & somw whipped cream.

2 lbs okra, cut crosswise in 1/2 inch pieces
1 1/2 teaspoons salt
1 teaspoon black pepper
1/2 cup cornmeal
3/4 cup butter

Steps:

  • Preheat oven to 450 degrees.
  • Mix okra, corn meal, salt and pepper in a baking dish until the okra is thoroughly coated with the corn meal.
  • Slice the butter on top of the okra.
  • Bake for 45 minutes, turning half-way through with a spatula so the okra will brown evenly.
  • Remove from oven and drain on a paper towel.

60 Ritz crackers, rolled fine
1/3 cup butter, melted
1/4 cup sugar
1 (8 ounce) Cool Whip
1 (6 ounce) frozen orange juice, slightly thawed
2 (11 ounce) cans mandarin oranges, drained
1 (15 ounce) can eagle brand sweetened condensed milk

Steps:

  • Mix together crackers, butter and sugar.
  • Press in a 13x9-inch baking dish. (Save a little bit of the crumbs for top).
  • Refrigerate this while making rest of recipe so it becomes firm.
  • Fold the rest of ingredients together.
  • Spread over crumbs in dish.
  • Top with remaining crumbs.
  • Refrigerate until ready to serve.
