APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

- Toss apples with white sugar and 1/2 teaspoon cinnamon in a medium bowl to coat; pour into a 9-inch square baking dish.

- Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
- In medium bowl, mix 3/4 cup flour, the oats, brown sugar and 1/2 teaspoon cinnamon until blended. Cut in cold butter, using fork or pastry blender, until mixture is crumbly. (Do not overmix.) Set aside.

OH SO YUMMY APPLE OATMEAL CRISP
Made this again today. To me so much tastier than an apple pie and sooo addicting. Awesome hot with a big dollop of ice cream. The smell is so amazing. NOTE: I always double this recipe, as it's just that good and still doesn't last very long. But we share with the family.

Steps:
- 1. Preheat oven to 350º Lightly grease an 8" square pan.
- 2. In a big bowl, combine the oats, flour, brown sugar and melted butter. Mix till it becomes crumbly. (I do this step with clean hands, as it's just easier for me to get it to the consistency that it needs to be)
- 3. Place half of the mixture into the bottom of the pan. (I spray the bottom lightly with Pam)
- 4. Next, spread the chopped apples over the crumb mixture evenly.
- 5. Sprinkle the sugar and cinnamon over the apples. On top of that, add the remaining crumb mixture.
- 6. Bake for 40 to 45 minutes until golden brown.
- 7. NOTE: as I chop my apples I have a bowl of cold water with a little lemon juice to keep the apples from browning on me since I have about 5 to 6 apples to chop up depending on the size. I've always used gala apples, just because i really like the taste and they definitely hold up well in this recipe. Not mushy at all.
