½ cup unsalted butter
1 cup rolled oats
3 tablespoons self-rising flour
½ cup white sugar
1 egg, beaten
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Line cookie sheets with parchment paper.
  • Melt butter over low heat. Pour into bowl and stir in the rest of the ingredients. Mix well.
  • Drop on one inch apart by the teaspoonful onto parchment paper. Bake 10 to 12 minutes until light golden brown. Let cool on rack.

1 cup shortening
1 cup light brown sugar, packed
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon table salt
1 teaspoon baking soda
3 cups oats
1/2 cup pecans, chopped
1 cup chocolate chips (optional)

Steps:

  • In an electric mixer fitted with the paddle attachment cream together sugars and shortening.
  • In a seperate small bowl combine vanilla extract and eggs.
  • Slowly add vanilla/egg mixture to creamed sugars.
  • In a seperate larger bowl sift together flour, salt and baking soda.
  • Slowly add flour mixture to electric mixer while it is running.
  • Remove nuts from stove top and finely chop.
  • Add nuts and oats and 1/2 cup of the chocolate chips to mixer.
  • Turn off mixer and add remaining chocolate chips, mix well.
  • Place dough on a piece of wax paper and form into a log. (you can divide it into as many logs as you want and freeze).
  • Refridgerate until ready to bake.
  • Preheat oven to 350 degrees.
  • Unwrap dough and slice to desired thickness.
  • Place on cookie sheet and bake 8-10 minutes, until golden brown.

Have been using this recipe for years for my cookie baskets during the holidays as well as sending to my brother when he was overseas. It is a basic,good refrigerator cookie dough that travels well.

1 cup softened butter
1 cup light brown sugar
1 cup granulated sugar
2 eggs, beaten
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 cups old-fashioned oatmeal
1/2 cup chopped pecans or 1/2 cup walnuts

Steps:

  • Cream butter.
  • Add sugars; mix well.
  • Add eggs and vanilla and beat well.
  • Add flour, soda, salt, oatmeal and nuts and mix well.
  • Shape into rolls on waxed paper.
  • Chill in refrigerator or freezer.
  • Slice 1/4-inch thick.
  • Bake 10 minutes at 350°F.
  • Yield: 5 dozen cookies.

I got this recipe out of an old cookbook of my mothers. We like crispie cookies and this one is just the ticket. Cook time is per cookie sheet.

1 cup shortening
1 cup packed brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups sifted all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3 cups quick-cooking oats
1 cup chopped walnuts or 1 cup pecans

Steps:

  • Thoroughly cream shortening, brown sugar and granulated sugar.
  • Add eggs and vanilla and beat well.
  • Add sifted flour, salt, soda, oats and nuts.
  • Mix all well and drop by teaspoons full onto greased baking sheet.
  • Bake@ 350 degrees F for 10 minutes or until light brown.
  • You may make these up into rolls and wrap with wax paper and store in fridge.
  • Take out and cut 1/4" thick and cook.

Made some changes from the original. added splenda instead of sugar. I also added optional orange butter frosting! This is from the Amish! Crispie, crunchy and nutty!

1 1/4 c butter or margarine softened
2 1/2 c sugar or splenda
1/3-1/4 c dark molasses
2 eggs, one at a time
3/4 Tbsp baking powder
1/2 tsp baking soda
1/2 Tbsp ground cinnamon
1/2 Tbsp vanilla extract, or sub. orange extract
1 tsp salt
2 1/4 c all purpose flour
2 1/4 c old fashioned rolled oats(not instant)
1 c chopped pecans

Steps:

  • 1. Preheat oven to 375 F. Grease 2 baking sheets
  • 2. In large bowl, cream butter and add sugar or splenda gradually, then the molasses and beat until mixture is light and fluffy. Beat in eggs, one at a time. Shut off the mixer and add the baking powder and soda, salt, cinnamon, and vanilla to the batter. Turn the beater back on and blend.
  • 3. Add the flour and blend. Last add the oats and nuts and blend. Drop by spoonfuls onto baking sheet.
  • 4. Bake for 5-9 min. or until cookies are medium brown and a bit crinkly looking. Allow the cookies to cool on cookie sheet 3-5 min. Move to wire rack until fully cool.
  • 5. These cookies Freeze very well. I chose to add Orange Butter Frosting. 1 1/2 c. powered sugar 1/3-1/4 c. softened butter or margarine 1-2 tbls. orange juice 1-1 1/2 tsps. orange zest (depending how orangey you like it!)
