Steps:
- In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in egg. In another bowl, whisk flour, oats and salt; gradually beat into creamed mixture. Stir in chocolate chips and coconut., Divide dough in half. Shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 2-1/4-in. square cookie cutter. Place 1 in. apart on parchment-lined baking sheets., Bake 9-11 minutes or until edges are light brown. Remove from pans to wire racks to cool. , Freeze option: Transfer wrapped disks to a freezer container; freeze. To use, thaw dough in refrigerator until soft enough to roll. Bake as directed.

CHOCOLATE CHIP OATIES (COOKIES)
From a British cookbook of all chocolate recipes. Yum! The original recipe called for half semi-sweet and half milk chocolate. I don't usually keep milk chocolate on hand so use all semi-sweet and I don't think I'll ever try them with milk chocolate - the richness of the semi-sweet is so good. A mixture of chocolate chunks and chips is a nice variation instead of just chips.

- Preheat oven to 350°F.
- Beat butter and sugar together in a mixing bowl until light and fluffy.
- Beat in the egg, then milk and vanilla until well blended.
- Add oats and mix, then add flour, cocoa and baking powder. Mix until everything is well blended.
- Stir in chocolate.
- Line two baking sheets with parchment paper (or grease lightly).
- Scoop out dough in large gobs (about 1 1/4-1 3/8 oz each) and flatten slightly with a fork (dip fork in flour to prevent sticking).
- Bake for 15 minutes or until cookies are slightly risen and firm.
- Let cool on baking sheets for a few minutes then remove to wire racks to cool completely.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine butter and coconut oil in a saucepan over medium-low heat; cook until melted, 2 to 3 minutes. Set aside to cool.
- Mix 3/4 cup plus 1 tablespoon brown sugar, white sugar, eggs, and vanilla extract together in a mixing bowl.
- Combine flour, baking soda, and salt in a separate bowl. Add to egg mixture, mixing well. Stir in oats and chocolate chips.
- Roll heaping tablespoonfuls of cookie dough into balls. Place 2 inches apart on ungreased cookie sheets.
- Bake in the preheated oven until edges are set, about 12 minutes. Cool on the cookie sheets for 2 minutes, then transfer to wire cooling racks.

- 1. Preheat oven to 350 degrees. Grease two cookie sheets and set aside. place the butter and sugar in a bowl and beat together until light and fluffy. Beat in the egg, then add the oats, milk and vanilla. Beat together until well lended. Sift the flour, cocoa and baking powder into the cookie batter and stir. Stir in the chocolate morsels.
- 2. Place teaspoonfuls of batter on the two cookie sheets and flatten slightly with a fork. Bake for 15 minutes, or until slightly risen and firm. Let acool on the cookie sheets for two minutes, then transfer to wire racks to cool completely.
OATMEAL OATIES
Steps:
- Preheat oven to 350 Add all ingredients into a large bowl and mix until chunky smooth. depending on how large or small you want the cookies- roll them into balls. (Half fist size balls usually work best) Then lay each ball about 1cm away from the next on a buttered cookie pan. Lay them on the top rack and cook for about 10-20 minutes. keep checking on them every 5ish minutes. (When you think they are ready, stick a tooth pick through the top of the cookie and see if it needs more time cooking or not.) note: sticky remains on toothpick show uncooked; clean toothpick means they are perfect!)

- Tip the flour, baking powder, oats, sugar and cinnamon into a bowl, then mix well with your hands. Add the butter, then rub it into the mixture until it has disappeared.
- Stir in the blueberries and pecans, add the egg, then mix well with a cutlery knife or wooden spoon until it all comes together in a big ball. Lightly flour the work surface, then roll the dough into a fat sausage about 6cm across. Wrap in cling film, then chill in the fridge until solid.
- To bake, heat oven to 180C/fan 160C/ gas 4. Unwrap the cookie log, thickly slice into discs, then arrange on baking sheets. Bake for 15 mins (or a few mins more if from frozen) until golden, leave on the trays to harden, then cool completely on a wire rack before tucking in.

- In a large mixing bowl, cream butter, peanut butter, brown sugar, and granulated sugar.
- Blend in egg and vanilla.
- In another bowl, combine the rolled oats, flour, and baking powder.
- Blend into creamed mixture thoroughly.
- Do not add chocolate chips at this time.
- Drop by spoon onto ungreased cookie sheet.
- Bake at 350 degrees for 10-11 minutes or just until edges are golden brown.
- Cool on cookie sheet, then transfer unto cooling rack.
- Put the chocolate chips in a glass bowl.
- Melt in microwave by reducing the microwave heat 50% and melting for 30 seconds at a time, stirring after each interval.
- (Alternatively, melt the chocolate over low heat in a small pan on stovetop.) Take care not to scorch the chocolate!
- Spoon melted chocolate onto cooled cookies, or dip cookies in chocolate and place on waxed paper.

APPLE WALNUT OATIES

- 1. Preheat oven to 375-degrees
- 2. In a mixing bowl combine: flours, starch, baking soda, baking powder, salt, nutmeg, allspice, cinnamon and set aside.
- 3. In a second bowl combine oil, sugar, flax egg, and vanilla.
- 4. Pour the liquid into the dry mix and mix together until well combined.
- 5. Next, add in oats, apples and walnuts and fold together.
- 6. On a nonstick cookie sheet, drop a heaping tablespoon of the mix. Really press the mix into your tablespoon so that it forms a nice compact ball.
- 7. Bake for 10-12 minutes until slightly golden.
- 8. NOTES For an extra crunchy top, I like to pop them under the broiler for a minute. Since there is fresh apple in these, by nature, the cookies will get softer each day they are stored. *If you're not gluten free or vegan, all-purpose flour and a regular egg can be used.
CHOCOLATE TOFFEE OATIES

- Preheat oven to 375. In electric blender, blend the 2 1/2 cups of oatmeal to a fine powder, and set aside. In electric mixer cream together butter and both sugars. Add eggs and vanilla. In separate bowl mix together flour, oatmeal powder, salt, baking soda and baking powder. With mixer on low speed; gradually add flour to creamed butter mixture and mix well. Stir in chocolate chunks and toffee bits.
- Roll into 1 1/2 inch balls and place 2 inches apart on ungreased cookie sheet. With palm of hand flatten each ball to about 1/8 of inch.
- Bake for 10 minutes or until edges are golden.

- Grease a Swiss roll tin (jelly roll pan) and preheat the oven to 190C/375°F If using frozen raspberries, allow to defrost and drain.
- Mix the flour and salt and roughly rub in the butter.
- Stir the oats and sugar into the mixture and use your hands to combine (it will be a thick doughy mixture).
- Press half of the oat mixture into the prepared tin. Sprinkle over the raspberries, squashing slightly if using fresh raspberries, to release the juice. Cover with the remaining oat mixture then press down firmly.
- Bake for 20-25 minutes until golden brown. Leave to cool for 10 minutes then cut into squares.
