2 heads romaine lettuce or 2 heads butter lettuce
1 (11 ounce) can mandarin oranges, drained
1 small red onion, sliced
1/2 cup slivered almonds, toasted
1/2 cup sugar
1/3 cup oil
1/4 cup red wine vinegar
1 tablespoon mustard
2 teaspoons poppy seeds
1 teaspoon salt

Steps:

  • For the salad: Chop lettuce into bite-sized pieces.
  • Top lettuce with drained mandarin oranges and toasted slivered almonds.
  • Slice red onion and add to salad.
  • Toss everything together.
  • For dressing: Mix together sugar, red wine vinegar, mustard, poppy seeds, and salt. Once all other ingredients are mixed together, add the oil and mix well.
  • Serve salad and dressing separately to avoid a soggy, wilted result.

1/4 cup balsamic vinegar
1/4 cup orange juice

1 (13 x 9-inch) pan cornbread, cooled and crumbled
1 (8 oz.) pkg. herb stuffing mix
2 tbsp. chopped fresh parsley
1/2 tsp. salt
1/2 tsp. ground ginger
3/4 cup butter
1 cup celery, chopped
1 cup onion, chopped
2 cups apple juice
2 cups apple, chopped
3 eggs
1/2 cup pecans, chopped

Steps:

  • 1. Heat oven to 350 degrees and butter a 3-quart casserole dish. 2. In a large bowl combine the cornbread, stuffing mix, parsley, salt and ginger. 3. In a heavy saucepan melt the butter and sauté the celery and onion for 8 to 10 minutes or until tender. Add this to the cornbread mixture and mix well. Stir in the chopped apple, chopped pecans, apple juice and beaten eggs. Toss lightly. Spoon dressing into the prepared casserole dish. 4. Bake at 350 degrees for 30 to 35 minutes.

2 slices of frittata (see Goat's cheese & caramelised onion frittata recipe in 'goes well with', right)
75g baby spinach
25g pine nuts (or hazelnuts)
1 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
juice ½ lemon
¼ tsp wholegrain mustard

Steps:

  • In a small bowl, stir together the oil, vinegar, lemon juice and mustard.
  • Add the pine nuts to the dressing and mix them in. Fill a bowl with the salad leaves and mix through the dressing if eating now, or add just before you eat. Serve with the frittata.
