1 cup butter
2 eggs
1 cup sour cream
2 cups flour
1 teaspoon vanilla
1 teaspoon baking powder
2 cups persimmon pulp
1/2 teaspoon salt
2 cups sugar
1 cup pecans, chopped
1 teaspoon cinnamon
4 tablespoons brown sugar

Steps:

  • Cream butter, sour cream, vanilla persimmon pulp, sugar and eggs together.
  • Add flour, baking powder, salt and mix well.
  • Mix topping ingredients and set aside.
  • Spread half of the batter into a greased tube pan; sprinkle half of topping mixture over batter.
  • Spread remaining half of batter into pan and add remainder of topping.
  • Bake at 350 degrees until done about 30 minutes but this will depend on the moisture content of the persimmons.

4 large ripe persimmons
1 1/2 teaspoons baking soda
1 3/4 cups sugar
1/2 cup butter, room temperature
3 extra large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
3/4 cup chopped walnuts, toasted
3/4 cup dried currant
confectioners' sugar

Steps:

  • Position rack in center of oven and preheat to 350°F.
  • Butter and flour Bundt pan.
  • Peel persimmons.
  • Press pulp through coarse sieve into medium bowl.
  • Measure 1 1/3 cups persimmon puree into small bowl.
  • Mix baking soda into puree and set aside.
  • Beat sugar and butter in large bowl until blended (mixture will be grainy).
  • Add eggs, 1 at a time, beating well after each addition.
  • Mix in vanilla.
  • Sift flour, cinnamon, salt, allspice and cloves into butter mixture; blend well using rubber spatula.
  • Mix in persimmon mixture, walnuts and currants.
  • Transfer batter to prepared pan.
  • Bake cake until tester comes out clean, about 55 minutes.
  • Cook cake in pan on rack 5 minutes.
  • Turn out cake onto rack; cool completely.
  • Sift confectioners' sugar over cake.

This recipe Is from week 19 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and The Bahamas are my 19th stop. Johnny cakes are served all over the Caribbean, but they make them a little differently in the Bahamas (without cornmeal).

3 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup sugar
1/2 cup shortening
2/3 cup whole milk

Steps:

  • Mix all the dry ingredients together, then cut in the shortening. Work the mixture with your hands until the grains are about the size of rice.
  • Add milk until you get a soft dough (I had to use a bit more than the recipe called for).
  • Turn out onto a floured surface and knead until smooth.
  • Let the dough rest for 10 minutes, then transfer it to a greased 9x9 inch pan. You will have to press it down so it fills in all the corners. Poke the top of the dough a few times with a fork.
  • Bake at 350 degrees for 20 to 25 minutes. You can tell the cake is done when it starts to turn a little golden around the edges.

1 banana, peeled and chopped into 12 disks
6 spring roll wrappers, thawed if frozen
vegetable oil, for deep frying
icing sugar, for dusting
12 small chunks chocolate (See Variations in directions) (optional)
12 small sliced cream cheese (See Variations in directions) (optional)

Steps:

  • Cut each spring roll wrapper in half.
  • Brush the piece of wrapper with water to soften it, place a piece of banana at one end and roll it up just like you were rolling a spring roll - don't worry about making it too neat.
  • Continue with all the rest of the banana pieces and wrappers.
  • Heat a lot of oil in a wok, pan or deep fryer.
  • Take a small square of the wrappers or a cube of bread to test if the oil is hot enough - if the oil fizzles around it and it crisps up quickly then the oil is hot enough.
  • Deep fry the wrapped bananas in the hot oil for about 4-5 minutes or until they're browned slightly. Remove and drain on paper towel.
  • Roll them in the icing sugar and eat them immediately while they're nice and hot.
