My grandma gave me this recipe. I have made it many times since and never get a bad comment about it. This is very easy to make and very yummy to eat!

1 - 20 oz can of crushed pineapple in heavy syrup
1 - 21 oz can of cherry pie filling
1 box yellow cake mix, 2 layer size
1 c pecans, chopped (optional)
1/2 c butter or margarine, chilled

Steps:

  • 1. Heat oven to 350 degrees. Grease a 9x13 inch baking pan.
  • 2. Spread the Pineapple with its syrup evenly on the bottom of the pan. Spoon Pie filling evenly on top of the pineapple.
  • 3. Sprinkle all of the dry cake mix and chopped pecans evenly over the pie filling and pineapples.
  • 4. Slice butter into even strips and lay evenly on top of the dry cake mix and pecans.
  • 5. Bake for 50 mins or until golden brown on top. Serve warm.

Yesterday, while in a Thrift Shop in Paia, Maui, I found a spiral-bound cookbook called Maui's Marvelous Munchies. Many of the recipes start with a box or can of something and I always bake from scratch -- this recipe though, looks like a good go-to cake when you're in a hurry. I'm posting here to check nutritional info.

20 1/2 ounces apple pie filling (Comstock 'More Fruit')
2 eggs
2 cups sugar
1/2 cup canola oil
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups all-purpose flour
2 teaspoons baking soda
1 cup nuts (chopped)

Steps:

  • Preheat oven to 325°.
  • Grease a 9x13" pan.
  • Excluding the Chopped Nuts, put all ingredients in a mixing bowl and beat on medium speed for 3 minutes.
  • Add Chopped Nuts to mixture and pour into prepared pan and bake for 1 hour.
  • PLEASE NOTE: The instructions end with 'bake for 1 hour' but it seems to me like this would be good served warm or completely cooled.
