6 tablespoons cocoa
1/2 cup butter
1/2 cup milk
1 1/2 cups sugar
1/2 teaspoon vanilla
3 cups oatmeal
1 cup coconut

Steps:

  • Boil first 4 ingredients for 2 minutes.
  • Remove from heat and add vanilla.
  • Pour over oatmeal and coconut and mix well.
  • Drop tsp fulls onto wax paper and wait until dry and easy to lift off paper.

Attention grabbing name isn't it!? We call them frogs where I live but I have heard of them referred to as Macaroons, No-bakes and even "blots". No matter what the name, they are DELICIOUS!Cook time includes time in the fridge.

1/2 cup cocoa
2 cups granulated sugar
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla extract
1 cup flaked coconut
3 cups quick-cooking rolled oats

Steps:

  • Line two baking sheets with waxed paper.
  • In a large saucepan, stir together cocoa, sugar, milk and butter.
  • Boil for 5 minutes, then remove from heat. Stir in vanilla extract, coconut and oats. Combine well.
  • Drop by tablespoonfulls onto prepared cookie sheets.
  • Refrigerate 1 hour or until set.
  • Keep refrigerated.

Peanut-free! These no-bake chocolate macaroons are also known as 'Frogs and Haystacks.' My mother has been making these since before I was born; she passed this down to me. There are many no-bake cookies out there, but I like these best. Store in an airtight container in a cool spot. These can be frozen.

2 ½ cups rolled oats
½ cup cocoa powder
½ cup flaked coconut
1 ½ cups white sugar
½ cup milk
½ cup butter
1 teaspoon vanilla extract

Steps:

  • Line a work surface with waxed paper.
  • Stir oats, cocoa powder, and coconut together in a large bowl.
  • Whisk sugar, milk, and butter together in a nonstick pot; bring to a boil and cook, stirring constantly, until sugar is completely dissolved, about 2 minutes. Remove from heat and stir vanilla extract into butter mixture.
  • Stir oat mixture into butter mixture until well-combined. Drop mixture by the spoonful onto waxed paper and let sit until set, at least 15 minutes.

This is a great no-bake cookie recipe. Very yummy and chocolaty! Hard to keep in the house. Sometimes I make them at Christmas and call them Reindeer droppings. Yield is approximate.

4 tablespoons cocoa
1/2 cup milk
1/2 cup margarine
3 cups oats
1 cup coconut
1 cup chocolate chips
1 teaspoon vanilla

Steps:

  • In a microwave safe bowl mix, sugar, cocoa, milk and margarine. Microwave (or cook in sauce pan) until boiling.
  • Add oats, coconut, chocolate chips and vanilla.
  • Drop tbsp sized cookies on a waxed paper covered cookie sheet. Chill in fridge until firm.

6 Tbsp cocoa powder
3 c oatmeal, uncooked
1 c coconut, shredded
1 tsp vanilla extract

Steps:

  • 1. Measure out all the ingredients before you begin.
  • 2. In heavy saucepan melt margarine and sugar. Add milk. Boil 1 minute.
  • 3. Add cocoa. Remove from heat. Add vanilla, oatmeal, coconut and mix well. Drop by spoonfuls onto waxed paper or parchment paper.
  • 4. Chill several hours before eating. Store in airtight container.
