This garlic butter is much better than any storebought. Vampires beware...it is a garlic lover's treat! Can easily be frozen in ice cube trays (make sure to plastic wrap the tray, or it will smell up your freezer) or ziplocks.

Number Of Ingredients 6

1 lb salted butter (room temp.)
4 tablespoons dried parsley
1 tablespoon fresh ground pepper
8 -10 cloves garlic, finely chopped
1/2 teaspoon salt
1/2 teaspoon sugar

Steps:

  • Mix all the ingredients together.
  • Butter is ready to use right away.
  • Can be stored in fridge for a couple of weeks, but if you don't use much of it, it can be frozen into desired portions.
  • I put this butter on vegetables of all kinds (Asparagus and Broccoli are best).
  • Use to make garlic toast, or garlic bread.
  • Best NOT to store in tupperware, as it is difficult to get the garlic smell out!

1 garlic clove
1/2 teaspoon salt
1/2 cup unsalted butter, softened
3 tablespoons chopped fresh flat-leaf parsley
2 teaspoons chopped fresh thyme
2 teaspoons grated fresh lemon zest
1/4 teaspoon black pepper

Steps:

  • Mince garlic and mask to a paste with salt using a heavy knife.
  • Transfer to a food processor along with the remaining ingredients and blend.
  • Roll into a 6-inch log in a sheet of plastic wrap, tisting the ends closed; Chill, covered, at least 2 hours for flavors to blend.
  • Bring to room temperature before using.

I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

18 new potatoes, quartered (about 2 3/4 lbs.)
1/4-1/3 cup butter
2 -4 garlic cloves, minced (more or less to taste)
1 tablespoon chopped fresh parsley
1/4 teaspoon pepper
1/4-1/2 teaspoon salt (not in original recipe) (optional)
1/2-1 tablespoon chopped fresh dill (not in original recipe) (optional)

Steps:

  • Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
  • Meanwhile, melt the butter in a small skillet over medium-high heat.
  • Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
  • Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.
  • Enjoy!

1 bulb of garlic
1 tablespoon extra virgin olive oil
1/4 lb butter

Steps:

  • Preheat the oven to 350°F.
  • Cut about a half inch off the top of the garlic bulb.
  • Place the bulb in a small baking dish. Drizzle the top with the olive oil.
  • Cover the dish with aluminum foil, and bake for 1 hour.
  • Set the butter out to soften as you put the garlic in the oven.
  • When the garlic is done, let it cool enough to handle. You should be able to just squeeze the cloves out of the husk.
  • Put the softened butter and the garlic cloves in a mixing bowl, and mix together until thoroughly integrated.
  • To store, scrape the mixture onto a piece of parchment or wax paper, roll into a fat, sausage shaped log, and the twist the ends shut.
