CLASSIC CHICKEN MARYLAND
This rich, delicious dish will leave you and your sweetie feeling very satisfied. It'll be on the table in no time so it's useful for a quick weeknight meal. I designed this for 2 but you can easily double or even triple this for a larger group. Serve over rice, pasta or biscuits.

Steps:
- In a medium skillet, melt butter and heat together with olive oil.
- Meanwhile, fillet chicken breasts so they are thinner and dredge in the flour seasoned to your taste with salt, pepper and garlic powder.
- Saute chicken in hot butter/oil until golden brown on both sides, about 7 minutes per side.
- Add cream, wine, dijon mustard, salt and pepper to taste and crabmeat. Simmer 5 minutes. Serve over rice.
- If serving over biscuits, remove the chicken from the pan after browning and dice into chunks then return to pan and proceed with the rest as written.
CHICKEN PUDDING
This is a great chicken dish. It's easy enough for every day, yet fancy enough for guests. The puffy pudding-like topping and chicken gravy make for a satisfying comfort-food dish. This is also a great way to use up left over fried chicken.

Steps:
- Combine 1/3 cup of the flour, 1/4 tsp salt, and the pepper.
- Coat prepared chicken pieces and fry in the oil over moderate heat for 4 minutes on each side or until browned.
- Add stock and bring to a boil. Lower the heat, cover, and simmer for 15 minutes. Transfer to a buttered 13"X9"X3", reserving the stock.
- Preheat the oven to 425 degrees F.
- In a large bowl, whisk the egg and egg whites. Whisk in the milk, 1 tbl of butter, and the remaining salt. Then, whisk in 1 cup of the flour until smooth. Pour over the chicken and bake, uncovered for 15 minutes. Reduce the temp to 350 degrees F and bake for 20 minutes longer or until the topping is puffed and golden.
- Meanwhile, in a medium size saucepan, heat the remaining 2 tbl of butter over medium heat. Add the remaining 1/3 cup of flour and cook until bubbly. Whisk in 3 1/2 cups of the reserved cooking liquid and bring to a boil. Lower heat and simmer for 6 minutes stirring frequently. Stir in parsley and thyme.
- Drizzle about 1/2 the gravy over the chicken. Serve with remaining gravy on the side.

NANNY'S BANANA PUDDING

- 1. Combine Sugar and Flour in a cast iron skillet over medium high heat.
- 2. Mix egg yolks and milk in a bowl and beat well with a whisk. Add vanilla extract and mix well.
- 3. Add egg mixture to the flour and sugar mixture in the skillet and mix together well, at first using a whisk, then use a wooden spoon to keep stirring. Mix well, you want to get rid of lumps.
- 4. Bring mixture to a boil, while constantly stirring. Bring heat down to medium, keep stirring well until mixture thickens. Remove from heat.
- 5. Add bananas to the pudding and stir well, careful to not break up your banana slices.
- 6. Line the bottom and sides of a 13 x 9 glass pan, or a glass bowl with nilla wafers.
- 7. Pour mixture over the nilla wafers and spread evenly with a spatula.
- 8. Begin making your meringue. I use a big bowl with about 3 " of ice water, then place my mixing bowl over the top to keep my egg whites cold while I beat them (I've had more luck this way, especially on a hot kitchen day)! Add egg whites to bowl and begin mixing them on medium high. Slowly add up to 2 tbs of sugar to the mixture, spinning the bowl to mix your egg whites until stiff peaks form. Your meringue is ready when you have the perfect taste of sweet and stiff enough it sticks to your spatula.
- 9. Spread the meringue over the pudding and place under the broiler in your oven. Keep turning the pudding until you have a nice toasty, even glow on the meringue. Don't forget your oven mitts!
- 10. Enjoy it right away, or let the pudding cool and place in the refrigerator to set before serving.
CHICKEN MARYLAND WITH A BAKED MUSTARD CRUST
From our local state paper and submitted by a gourmet butcher Vince Garreffa, it sounds so good, hoping to try it shortly so times are estimated. His intro was "The "love of my life" cooked this for me using turkey legs for Christmas. I loved it so much that I cook it often with chicken because it's quick, easy and tasty. Maybe you can use this recipe with turkey Marylands for Christmas in July but do cook them for longer because the bigger size of the Marylands." Christmas in July reference is that it is our winter and some people celebrate with a traditional Christmas lunch/dinner then and will do cold fare at Christmas during our summer.

- Preheat oven to 160°C.
- Season the centre of a 3 day old loaf (crumble the bread or give it a quick blitz in a food processor) with freshly cracked black pepper and lake salt.
- Combine mustard mix ingredients in a bowl and mix thoroughly.
- Roll chicken pieces in the mustard mix, then roll in the seasoned fresh breadcrumbs.
- Place skin side up (in a shallow baking tray and dob the breadcrumbs with small dots of the butter and then sprinkle with sweet paprika.
- Bake slowly for 1 to 1 1/4 hours (if doing turkey allow longer times and more of other ingredients to allow for size of turkey marylands compared to chicken).

NANNY'S SOUTHERN 'NANA PUDDIN'
I remember Nanny making this fast and easy pudding for us just like it was yesterday. It's a Southern staple in a Texas household and a must for any type of family gathering in the South. This recipe is so simple and easy you can't go wrong! Nanny's Tip: Make it in a cast iron skillet!

- 1. Combine sugar & flour in skillet on medium high heat. Mix egg yolks and milk in bowl and beat well. Add egg mixture to the flour & sugar in pan and stir well constantly until mixture thickens and begins to boil.
- 2. Remove pudding from the heat and add bananas. Mix together well. Line a glass dish large enough to hold the pudding mixture with 'Nilla wafers and pour pudding over the top of wafers (usually a 9 x 9 x 13" baking dish works well).
- 3. Layer meringue topping over the pudding and smooth over the top of the pudding to each edge. My recipe for meringue topping is listed below.
- 4. Place the dish under the oven broiler just until the meringue browns nicely.
- 5. Chill in the refrigerator for about an hour before serving...if you have the patience!
- 6. Meringue Topping: I use two large bowls for making my meringue, the bottom bowl I fill with about 3" of ice water, then I place the other bowl on top of the other to keep my egg whites chilled while I'm mixing them (metal or glass bowls work best for meringues). Place the egg whites in the bowl and mix on medium gradually adding up to 1 tbs of sugar (more or less according to your sweet tooth), until the eggs begin to form thick peaks. NANNY'S MARYLAND CHICKEN PUDDING
Meat pies and puddings are strictly English in origin. I've known about this recipe all of my adult life - it was one of my grandmother's oldest recipes dating back to the early days when she first got married. It takes a little time but is so well worth it. It is the best chicken dinners I've ever eaten!

- 1. Preheat oven to 375 degrees. Combine first 6 ingredients, 1tsp salt and 1/4tsp pepper in a dutch oven; add water to cover. Bring to a boil; cover and simmer 1 1/2 hour. Remove chicken from broth; cool. Strain broth and set aside.
- 2. Remove chicken from bone; shred and place in a 10-inch cast-iron skillet. Pour 1/2 cup broth over chicken. Set remaining broth aside.
- 3. Combine eggs, milk, 1 cup flour, 1/2tsp salt and 1/4 cup butter; beat until smooth. Pour over chicken in skillet.
- 4. Bake at 375 degrees for 1 hour. Cool slightly and cut into wedges.
- 5. While puddings is baking, cook remaining broth over high heat until reduced to 2 cups. Stir in 1/2 cup flour. Add parsley, 2TBS butter, 1/2tsp salt and 1/4tsp pepper. Cook over medium heat until thickened and bubbly. Spoon gravy over pudding.
