The Day After Thanksgiving Casserole image

A twist on using up that leftover Turkey from Thanksgiving. A Hearty meal to stick to the ribs in the cold weather. Which is a must in Northern Michigan. Hope you enjoy it as much as my Hub-bub and Friends do.

Number Of Ingredients 15

2 cup(s) cooked turkey, cubed
1 - celery rib, chopped
1/2 cup(s) onions, chopped
1 cup(s) coarsely crumbled cornbread
1 cup(s) cubed, day old bread
1 cup(s) + 2 t. turkey or chicken broth
1/4 cup(s) + 2 t. butter
1/4 teaspoon(s) poultry seasoning
1/4 teaspoon(s) ground sage
1/4 cup(s) all purpose flour
1/4 cup(s) milk
- dry bread crumbs
1 1/2 cup(s) stiff mashed potatoes
1 - egg, beaten
1/4 teaspoon(s) salt

Steps:

  • Preheat oven to 350^. Spray a 1 qt. baking dish with non stick cooking spray. Place mashed potatoes in bottom of the pan, mashing down and around to fill the bottom of the pan.
  • In a skillet, sate celery and onion in 2T. butter until tender. Transfer to a large bowl. Stir in the cornbread, bread cubes, 2T. broth and seasonings. Put in baking dish on top of potatoes.
  • For Gravy: In a large saucepan melt 1/4c. butter. Whisk in flour and salt until smooth. Gradually add broth and milk. Bring to a boil. Reduce heat cook and stir for 2 minutes. Remove from heat. Take a small amount of hot mixture into a bowl and beat with an egg, pour into saucepan, stirring constantly. Bring to a gentle boil. Cook and stir 2 minutes longer.
  • Spoon half of the gravy mixture over dressing mixture. Layer with Turkey and remaining gravy. Sprinkle with bread crumbs. Cover and bake 30 min.
