1 lb lean ground beef
1 large onion, chopped
1 teaspoon seasoning salt
1/2 teaspoon ground cumin
32 ounces refried beans
1 (1 1/4 ounce) package taco seasoning mix
2 cups grated monterey jack cheese
1 (4 ounce) can chopped green chilies, drained
1 cup grated cheddar cheese
3/4 cup chunky taco sauce or 3/4 cup salsa
2 cups crushed tortilla chips
guacamole
sour cream
chopped green onion
sliced black olives

Steps:

  • Brown meat and onion; drain well.
  • Add seasoned salt and cumin.
  • Combine beans, taco seasoning mix and Monterey Jack cheese; mix well.
  • Spread beans in a shallow baking dish (9x13); cover with meat mixture.
  • Sprinkle chilies over meat; scatter with crushed tortilla chips; top with Cheddar cheese.
  • Pour taco sauce (or salsa) over cheese.
  • Bake, uncovered, in preheated 400 degree oven for 20 to 25 minutes, or until thoroughly heated.
  • Garnish as desired.

1 lb ground chuck
1 medium onion, chopped
1 (30 ounce) can refried beans
1 (4 ounce) can chopped green chilies
3 cups cheddar cheese, shredded
3/4 cup taco sauce

Steps:

  • Preheat oven to 400 degrees.
  • Cook ground chuck with onion.
  • Spread refried beans in a 2 quart casserole.
  • Top with meat.
  • Top with green chilies.
  • Cover evenly with cheese.
  • Pour taco sauce over all.
  • Bake 20-25 minutes.
  • Garnish with your choice of chopped green onions, olives, avocado dip or sour cream.
  • Serve with tortilla chips.

Fast, tasty, and my family Loves it! Great way to use the crumbled chips at the bottom of the bag. I have used all kinds of beans and chips (plain, Doritos, Fritos), and cheese. It is always yummy!

3/4 lb ground beef
1 (1 1/4 ounce) package taco seasoning
1 (16 ounce) can beans
1 cup taco sauce or 1 cup salsa
2 cups shredded cheese, divided
3 cups crumbled tortilla chips
1 1/2 cups water
sour cream
black olives (optional)
jalapeno, slices (optional)

Steps:

  • Brown ground beef and drain.
  • Add water, taco seasoning and beans and sauce/salsa.
  • Bring to boil, then simmer 5 minutes.
  • Mix in tortilla chips and 1 cup cheese.
  • Cook 3-5 minutes more until cheese melts.
  • Serve with the rest of the cheese, sour cream, olives, and jalapeno peppers.
