2 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon coarse salt
1/4 teaspoon ground cinnamon
3 extra-ripe bananas, mashed (1 cup)
3/4 cup light brown sugar
1 stick unsalted butter, melted
1 large egg
1/4 cup milk
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
  • Divide batter evenly between prepared cups, adding a scant 1/4 cup to each. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

1 teaspoon baking soda
½ teaspoon salt
¾ cup sugar
1 cup mashed bananas (about 3 medium)
1 large egg (room temperature)
½ cup vegetable oil
1 teaspoon vanilla extract
½ cup semi-sweet chocolate chips
¼ cup milk chocolate chips

Steps:

  • Preheat oven to 375°F. Line a muffin pan with paper liners.
  • Combine flour, baking soda, and salt in a small bowl. Stir in chocolate chips.
  • Combine sugar, bananas, egg, oil, and vanilla in a medium bowl.
  • Add dry ingredients and mix just until combined.
  • Pour into prepared muffin tin and bake 18-20 minutes or until a toothpick comes out clean. Do not overbake.
  • Cool 5 minutes in the pan before removing and cooling on a baking rack.

1 cup whole-wheat flour
3/4 cup all-purpose flour
1/4 cup wheat germ
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/3 cup granulated sugar
1/3 cup firmly packed light brown sugar
2 large eggs, at room temperature
2 medium bananas
1/3 cup 2 percent milk
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Line a 12-cup muffin pan with parchment squares so they come up over the sides, and set aside.
  • Whisk together the flours, wheat germ, baking soda and salt in a medium bowl. Beat the butter and sugars together with an electric mixer until light and fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition.
  • Mash the bananas with a fork in a separate bowl. Stir in the milk and vanilla. With the mixer on low, alternately add thirds of the flour mixture and halves of the banana mixture to the butter mixture, beginning and ending with the flour mixture. Mix until just combined. Fold in the chocolate chips.
  • Divide the batter among the muffin cups. Bake until a toothpick inserted in the center of a muffin comes out clean, 20 to 24 minutes.

¾ cup white sugar
6 tablespoons butter, softened
6 tablespoons ground flax seed
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3 ripe bananas, mashed
¾ cup chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with cooking spray or line with paper liners.
  • Beat sugar, butter, flax seed, vanilla, and eggs together in a bowl with an electric mixer until smooth and creamy.
  • Sift flour, salt, and baking soda together in a separate bowl. Mix creamed sugar mixture, 1/2 cup at a time, into the flour mixture until fully incorporated and batter is stiff. Beat bananas into batter with an electric mixer on low. Fold chocolate chips and walnuts into batter; spoon into the prepared muffin cups, filling each cup 3/4 full.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 25 minutes. Cool in the tins for 10 minutes before removing to cool completely on a wire rack.

My wife has made these a half dozen times since finding the original recipe in a Penzey's spice catalog. I was originally rather dubious about combining bananas and chocolate chips, but these taste great.

Number Of Ingredients 11

1/2 cup butter, softened
1 1/4 cups sugar
2 eggs
1 tablespoon pure vanilla extract
1 1/2 cups flour (plus up to 1/2 cup additional if batter is real loose)
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
3 very ripe bananas, mashed (about 1-1/2 cups)
1 cup miniature semisweet chocolate chips
2 cups chopped pecans

Steps:

  • Grease two 12 cup muffin pans and set aside.
  • Preheat the oven to 350 degrees F.
  • Cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla and mashed bananas.
  • In a separate bowl, sift together the flour, baking soda, salt, and cinnamon.
  • Mix the chocolate chips and nuts into the flour mixture, stir this into the bowl with the butter mixture, and mix until just blended.
  • Spoon the batter into the muffin pans, filling 22-23 holes 3/4 full.
  • Bake for 18-20 minutes or until a toothpick inserted in the center comes out completely clean.
  • Allow muffins to cool about 5 minutes, and carefully run a dinner knife around the outside of each muffin to loosen.
  • Allow muffins to cool completely before removing from pans or they will break up.
  • If the bottoms are still damp, set on a wire rack for a few hours before wrapping.
  • These freeze great.
