HOMINY GRITS BAKE image

Yield 8 - 10 servings

Number Of Ingredients 7

4 cups water
1 cup quick-cooking hominy grits, uncooked
1 teaspoon seasoned salt
2 cups (8oz) shredded sharp cheddar cheese
1/4 cup margarine or butter
Several dashes Worcestershire sauce
3 eggs, well beaten

Steps:

  • In large saucepan, bring 4 cups water to boiling. Slowly add grits and seasoned salt, stirring constantly. Cook and stir until mixture comes to boiling. Reduce heat; cook and stir for 5 to 6 minutes more or until all water is absorbed and mixture is thick. Add shredded cheese, margerine or butter, and Worcestershire sauce to the grits mixture. Stir until cheese and margarine are melted. Gradually stir into beaten eggs or gradually add small amounts of hot grits mixture to egg mixture until egg mixture is very warm, stirring constantly. Then add all the egg mixture back into the grits mixture, stirring well. Turn into a greased 1 1/2 quart casserole or 2 qt souffle dish. Bake, uncovered, in a 350-degree oven for about 1 hour or until nearly set. Let stand for 10 minutes.
