SIZZLING CHICKEN PEPE

I haven't had a chance to try this recipe yet but it seems like it should be a simple, tasty dinner. Has ingredients that many people will already have on hand. You can never have too many chicken recipes! Prep time includes cooking the chicken first and then putting the casserole together. Recipe comes from the book "365 Easy Chicken Recipes."

2 (10 ounce) cans cream of chicken soup
1 cup milk
1 (1 ounce) packet taco seasoning
1 (4 ounce) can chopped green chilies
1 (10 ounce) package corn tortillas or 1 (10 ounce) package tortilla chips
5 -6 cooked boneless skinless chicken breasts
1 (16 ounce) package shredded monterey jack cheese

Steps:

  • Preheat over to 325 degrees.
  • Combine soups, milk, taco seasoning and green chilies in bowl.
  • Make 2 layers of following ingredients in 9x13 inch glass baking dish: chips, cubed chicken, soup mixture and cheese.
  • Bake for 1 hour.

1 medium onion, chopped
1 green bell pepper, chopped
1 teaspoon olive oil
1 (15 ounce) can pinto beans, rinsed and drained
1 (14 ounce) can diced tomatoes
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon unsweetened cocoa
1/2 cup acini di pepe pasta, cooked
1/4 cup chopped fresh cilantro
salt and pepper
3/4 cup monterey jack cheese, shredded

Steps:

  • Saute onion and pepper in oil in a large saucepan until tender.
  • Stir in beans, tomatoes and liquid, chili powder, oregano and cocoa.
  • Heat to boiling; reduce heat and simmer, covered, 10 minutes.
  • Stir in acini de pepe and cilantro; season to taste with salt and pepper.
  • Serve topped with cheese.

1 1/2 cups acini di pepe pasta
kosher salt
3 tablespoons olive oil
1 small carrot, diced
1 onion, diced
2 garlic cloves, minced
3/4 cup diced red and yellow pepper
1 zucchini, diced
1/4 cup white wine
3 tablespoons fresh parsley, chopped
1 tablespoon fresh oregano, chopped
1/4 cup grated romano cheese
ground pepper

Steps:

  • bring a pot of water to a boil, add acini di pepe and some salt, cook according to package directions until al dente, drain.
  • mix with 1 tbsp olive oil and set aside.
  • heat remaining oil in a skillet.
  • add carrots and onion, cook for 8 minutes.
  • add garlic, zucchini and peppers, season with salt and pepper to taste, saute 5 minutes.
  • add wine and scrape up any brown bits.
  • add the pasta to the pan and stir, combining everything.
  • remove pan from heat, stir in parsley, oregano, romano cheese. season with salt and pepper, serve.

1 1/2 cups acini di pepe pasta or 1 1/2 cups any small pasta such as orzo pasta
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
2 teaspoons kosher salt
1 cup red grape tomatoes, halved
1 cup yellow grape tomatoes, halved
1/2 cup pine nuts, toasted
1 cup finely sliced radicchio
1/2 cup finely diced red onion
1 1/2 cups basil leaves, torn into large pieces
1 cup crumbled feta cheese

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta for about 6 minutes or until tender. Drain and rinse under cold water to stop the cooking process.
  • Toss the pasta with the olive oil, red wine vinegar, and salt. Fold in the tomatoes, pine nuts, radicchio, onion, and basil.

This is a perfect soup to chase away those midwinter blahs. It is very quick and easy to put together. It is one of my favorite soups and the original recipe comes from 365 Ways to Cook Pasta by Marie Simmons. If you can't find acini di pepe pasta, you can use any solid tiny pasta shape.

2 tablespoons butter
1/2 cup onion, diced
1/2 cup carrot, diced
35 ounces Italian-style tomatoes, undrained
2 cups chicken broth
1 cup heavy cream
1 cup acini di pepe pasta, cooked (about 1/3 cup raw)
salt
fresh ground black pepper

Steps:

  • Heat butter in a large saucepan. Add the onion and carrot; saute until tender about 5 minutes. Set a food mill over the saucepan and puree the tomatoes. (I just usually put in blender or food processor and puree). Add the chicken broth. Heat to simmering.
  • Heat the cream in a small saucepan until simmering; gradually whisk into the tomato mixture; DO NOT BOIL.
  • Add the acini di pepe and heat through. Add salt to taste.
  • Sprinkle each serving with plenty of black pepper.
