MY MOM'S CHICKEN BROCCOLI RICE CASSEROLE
I could eat a whole pan of this. ..I've found that the texture of the sauce comes out grainy when I use pre-shredded bags of cheese - for best results, use a good quality block of cheese and grate it yourself. ..I hope you enjoy this! It's pure comfort food to me.

Steps:
- Preheat oven to 350.
- Start the broccoli and rice:.
- Cook broccoli and rice as per the package instructions.
- When broccoli is done, drain, let cool and dice.
- Mix chicken, broccoli, and rice in a greased 9 x 13 pan.
- For the sauce:.
- Heat half and half in microwave til bubbles appear around sides of bowl, but it does not boil. Set aside.
- Melt butter in small saucepan.
- Add flour and stir crazily til incorporated but not browned.
- Add half and half.
- Bring mixture to a boil, whisking continuously.
- Reduce heat, and gradually add cheese, whisking to incorporate, til melted.
- Add cream of mushroom soup gradually, whisking til incorporated.
- Pour sauce over the dry ingredients and combine well.
- Season to taste with salt.
- Cover casserole with foil and bake for 45 minutes.
- Uncover and let bake 15 minutes.
- Garnish with paprika.

MOM'S SPANISH RICE
This is my Mom's Spanish Rice recipe. It's so good, that you can actually eat it by itself as a meal and not as a side-dish.

Steps:
- Being that I like to cook quick (and so do you, probably), I like to dice, chop, and get everything out and measured and put aside before I even begin the cooking, so dice your onions and chop up the bell peppers. You can leave the seeds of the peppers if you'd like but make sure to de-stem them.
- In a pot, heat vegetable oil over medium heat.
- Add the chopped peppers, diced onions, salt, pepper, cumin, chili powder, and cayenne. Stir VERY frequently (about 1-2 minutes) and make sure that the all the spices are mixed into the vegetables.
- Immediately, and in a separate pot, prepare your rice according to the package.
- When rice is cooked, add it to the cooking veggies.
- Add the canned tomatoes and stir frequently on medium heat.
- Cook for 30-45 minutes on medium heat, stirring frequently to avoid burning the rice and so that the rice can absorb the tomato, oil, cumin, chili powder, cayenne, salt, and pepper.
- If you want a variation, add small pieces of cooked hamburger meat (prepared in a separate skillet) to the mix. You can add salt, pepper, cumin, chili powder, and cayenne to that, as well, before finally adding it to the mix. If you are a brontosaurus and don't eat meat like your T-Rex friends, skip this step.
- You will know the rice has absorbed everything and that everything is cooked when the rice is golden. (Note: if you believe the rice to taste too salty, gradually add just pinches of sugar until the flavor balances back out; sugar, kids, is a great equalizer -- use it wisely.).
- Serve hot and enjoy!

MOM'S BAKED RICE PUDDING
I love this rich pudding. It is not a dieter's friend but I have lightened it up from time to time. What makes this special is the short grain rice, whole milk and butter. Comfort food at its finest.

Steps:
- Turn oven to 325F and grease large casserole dish.
- Pour in first 5 ingredients and stir well. It will look like a lot of milk but it isn't too much.
- If you want raisins and cinnamon stir it in now. I never put them in as my family prefers it without.
- Dot the top of the ingredients with chunks of butter.
- Bake for 2-3 hours. Stir every 15 minutes for the first hour and then just let it cook. Check it at 2 hours and if it is getting dry add another cup of milk and stir. Taste test to be sure rice is cooked.
- It will get a nice brown skin on top. You can remove it but I like to stir it in as I serve it. It is very flavourful.
- Enjoy!

- In a large skillet, saute the rice in butter for 2 minutes or until golden brown. Add celery and onion; cook and stir for 2 minutes. - Over high heat in a very large, heavy-bottomed pan or Dutch oven, heat olive oil with garlic and sausage until browned and crumbled. Add onion and saute until softened and translucent, about 10-12 minutes.
- Add saffron and turmeric and stir well. Stir in olives and cook for 2-3 minutes longer. Then add all the nuts and seeds and cook for 3-4 minutes, stirring constantly.
- Add rice and stir in well to coat with the oils and toast a bit, 2-3 minutes. Then add the water, stir again and bring to a boil. Cover and reduce to a simmer and cook 20-30 minutes or until all water is absorbed. Enjoy!
