CREAMED CORN FRITTERS

Make these creamed corn fritters in a jiffy with canned creamed and canned sweet corn kernels. It's a simple snack that kids and adults will love. Fluffy and light, these are great to serve at brunch, with a salad, or as an appetizer for dinners.

Number Of Ingredients 11

190 grams (6.7 ounces) plain flour
1 ¾ level teaspoon baking powder
½ level teaspoon coriander powder
¼ level teaspoon cumin powder
1 x 400 gram (14 ounces) canned corn kernels (drained
1 x 400 gram (14 ounces) canned creamed corn
60 ml (1/4 cup) buttermilk
2 large eggs (beaten)
15 grams fresh chives (chopped (about 3 heaped tablespoons))
2 teaspoons salt or to taste
½ cup oil for frying

Steps:

  • Place the flour, baking powder, coriander, and cumin into a large mixing bowl. Use a spoon or whisk to mix the dry ingredients until well combined.
  • Make a well in the center of the flour, add the corn, milk, eggs, and chives.
  • Stir until the ingredients are well combined and there are no lumps.
  • Season to taste with salt and pepper.
  • Heat the oil in a frying pan until hot. The oil is ready when you drop a little of the batter into the oil and it starts to bubble around the edges.
  • Drop heaped tablespoons of the batter into the pan, spaced about 2 cm (0.7 inches) apart, flatten the tops of the fritters with the back of a spoon. See note 2
  • Fry for about 2 minutes on each side or until light and golden on both sides and cooked through. Lower the heat, if the fritters are browning too quickly to avoid burning.
  • When cooked remove from the pan and drain on absorbent paper.
  • Best eaten hot or warm.

These are so good and perfect anytime. You can make them for breakfast, lunch or dinner.

1 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1 1 lb. can cream style corn
1 egg (slightly beaten)
1/2 to 1 cup canola oil (Can use any kind of cooking oil.)

Steps:

  • Sift together flour, baking powder, and salt. Mix corn and egg; add to dry ingredients, and stir. Heat canola oil in large skillet over medium heat.
  • Drop batter by large spoonfuls into hot canola oil. Fry about 2 minutes on each side or until golden brown. Drain on paper towels. Makes about 12 fritters

1 (17 oz) can of whole kernel corn
1 Tbsp (measuring) tablespoon baking powder
2 Tbsp heaping (regular) tablespoons of sugar (or sugar substitute)
2 Tbsp heaping (regular) tablespoons of flour
1 egg
1/2 tsp salt
3 c oil / 1 stick butter - more or less as needed

Steps:

  • 1. Drain corn well and combined with all ingredients. Mix well and let stand for approximately 15 minutes.
  • 2. Heat frying pan (griddle or caste iron griddle/pan) on medium heat. Add oil and one pat of butter to coat the bottom of pan/griddle. When oil/butter is hot and starting to sizzle, add corn fritter batter and fry on both sides to a golden brown.
  • 3. (Depending on the size you want the corn fritter to be, depends on the measuring vessel to use.) Drain on paper towels.

These fritters are a comfort food in my house. My dad always made them when I was feeling down and they are so tasty. For added texture, add a 1/4 cup of thawed frozen corn. If you feel like the mixture is too thin, add a few more crushed Ritz crackers.

1 cup low-fat Ritz crackers
1 egg
1/2 teaspoon black pepper
1/2 tablespoon butter

Steps:

  • Crush Ritz crackers in a plastic bag.
  • Combine all ingredients in a mixing bowl.
  • Melt butter in a non stick pan on medium high heat.
  • Drop pancake-size amount in pan and cook until bubbles start to form in the center of the fritters.
  • Flip to other side until browned.
  • Serve with maple syrup.

These wonderful corn fritters came down from my great-grandmother. They can be served with maple syrup for breakfast, or as a side dish with jambalaya, chili, or a Mexican dinner.

1 (14.75 ounce) can creamed corn
¾ cup all-purpose flour, or as needed
½ cup milk
1 egg, beaten
¼ cup white sugar
2 ½ teaspoons salt
2 teaspoons vegetable oil
2 teaspoons baking powder
1 teaspoon vanilla extract
1 dash ground black pepper
¼ cup oil for frying, or as needed

Steps:

  • Combine creamed corn, flour, milk, egg, sugar, salt, 2 teaspoons oil, baking powder, vanilla extract, and pepper in a bowl to create a thick batter. Add more flour to the mixture if it seems too thin.
  • Heat oil in a large deep skillet over medium-high heat.
  • Test the readiness of the oil by dropping a small drop of batter into the oil; it should immediately start to bubble and cook, indicating that the oil is hot enough. Carefully drop tablespoons of batter into the hot oil. Cook no more than 4 fritters at a time to avoid cooling the oil, which causes the fritters to absorb more oil than necessary.
  • Cook fritters in the hot oil for 1 1/2 to 2 minutes. Turn over and cook until both sides are golden brown, about 1 minute more. Lift from the oil and place on a paper towel to drain. Continue with remaining batter.
