Fried Okra image

This is my aunt's version of fried okra. She did not like to use any flour. My mom preferred this recipe.

Number Of Ingredients 7

2 lb fresh okra, smaller ones are better!!
3 large eggs, beaten
1 tsp water
2 c cornmeal
1 tsp salt
1/4 tsp pepper
vegetable oil

Steps:

  • 1. Rinse the okra; drain well, and pat dry. Remove the tip and stem ends. Cut the okra crosswise into 1/2 inch slices. Set aside
  • 2. Combine the eggs and water in a bowl; stir well. Add the okra and toss gently to coat well.
  • 3. Combine the cornmeal, salt, and pepper in a bowl; stir well. Add okra to the cornmeal mixture, a few slices at a time, tossing gently to coat well.
  • 4. Pour the oil to a depth of 1 inch into a large heavy skillet; heat to 375 degrees. Fry the okra in hot oil over medium heat until golden. Drain on paper towels.
