This recipe from the second volume of "Mastering the Art of French Cooking" is nontraditional but very Julia Child, with her famous love of cocktail snacks. Caviar d'aubergines, fluffy eggplant caviar, is popular in the South of France, but this one contains raw ginger and hot sauce, two of the least-French ingredients imaginable. Feel free to tinker with the spices (cumin and coriander are also good) and the heat level. This dip ripens very well over a few days in the refrigerator. Taste and re-season before serving.

2 firm, shiny eggplants (about 2 pounds total)
1 cup finely chopped toasted walnuts
1 to 3 garlic cloves, smashed, peeled and minced or put through a press
1 teaspoon freshly grated ginger
1/4 teaspoon ground allspice (or another warm spice or spice blend, like cinnamon, coriander or garam masala)
Salt and freshly ground black pepper
Hot sauce, such as Tabasco
5 to 8 tablespoons extra-virgin olive oil

Steps:

  • Heat oven to 425 degrees. Cut green caps off eggplants and place them whole in a baking dish. Bake until very soft and collapsing, 30 to 35 minutes. When cool enough to handle, scrape flesh into the bowl of a mixer (or use a hand mixer).
  • Beat at high speed for about two minutes, until smooth and fluffy. Add walnuts, garlic, ginger, allspice, two big pinches of salt and one of pepper. Shake in a few dashes of hot sauce. Mix well.
  • With the mixer running, gradually drizzle in oil, as if making mayonnaise, just until mixture is emulsified and creamy. Stop, taste and adjust the seasonings with salt, pepper and hot sauce. If desired, beat in remaining olive oil.
  • Serve immediately, or cover and refrigerate for up to one week.

2 tablespoons soy sauce
1 tablespoon light-flavoured vinegar (try rice vinegar or white vinegar)
1 garlic clove, crushed
1 teaspoon caster sugar
1 eggplant (about 500g)

Steps:

  • Combine soy sauce, vinegar, garlic and sugar in a bowl. Set aside.
  • Slice eggplant into thin slices and place on a heatproof plate. Place plate in a steamer, cover with lid and steam for 15 minutes.
  • Pour over sauce and steam for another 5 minutes.
  • Serve sprinkled with 1 finely sliced small red chilli and 1 small handful chopped coriander.

2 slices stale bread, crusts removed
2 tablespoons stock
1 cup walnuts, toasted
1/2 cup parsley
3 cloves garlic
1 pinch cayenne pepper
1/2 teaspoon sea salt
1/8 teaspoon black pepper
6 tablespoons olive oil

Steps:

  • Soak the bread in the stock.
  • Combine the bread with the walnuts, parsley, garlic, salt& pepper in a food processor.
  • Process, adding the olive oil in a very slow stream until you have a thick paste.
  • Toss with your favourite hot pasta or spoon a dollop on new potatoes, steamed broccoli, or green beans.

2 medium eggplants, cut into 1/4-inch thick round slices
salt
olive oil, for shallow frying
5 garlic cloves
1/4 cup white vinegar
4 tablespoons ground almonds
1/2 cup olive oil
1 1/2 tablespoons lemon juice
2 slices white bread
2 tablespoons of fresh mint, chopped
salt

Steps:

  • Sprinkle some salt over the brinjal slices and keep aside.
  • Cut each garlic clove into two pieces and soak in vinegar for 8-10 minutes.
  • Soak the bread in water then squeeze out the water completely. Crumble with hands and set aside.
  • Next, remove the garlic from vinegar and pound the garlic pieces with a little salt to form a paste.
  • Gradually add the crumbled bread alternating with a little vinegar.
  • When it is well ground into a smooth paste, mix in the ground almonds, olive oil, remaining vinegar, lemon juice and salt to taste.
  • Beat well to obtain a thick creamy consistency.
  • This forms the garlic sauce.
  • Then,towel dry the brinjal slices and shallow fry them.
  • Arrange the fried brinjal slices on a flat serving dish, spoon a dollop of garlic sauce over each slice.
  • Garnish with mint leaves.
