2 cups packed brown sugar
1/2 cup butter, melted
1 tablespoon vanilla extract
4 large eggs, beaten
1 cup cooked pinto beans, mashed
1 unbaked pie shell (10 inches)
Whipped cream or vanilla ice cream

Steps:

  • In a bowl, beat together the sugar, butter, vanilla and eggs. Stir in beans. Pour into pie shell. , Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Serve warm or chilled with whipped cream or ice cream.

1 cup pinto beans, Mashed
2 cups sugar
3 eggs
1 pinch salt
to taste unbaked pie shell

Steps:

  • Preheat oven to 425 degrees.
  • Beat sugar, salt and eggs together.
  • Add beans.
  • Mix well.
  • Let ingredients stand for 1/2 hour.
  • Pour into pie shell.
  • Bake at 425 until crust begins to brown, then reduce temp to 375 degrees and bake 30 additional minutes or until center of pie is set. Serve warm with ice cream or whipped cream.

1 c mashed pinto beans
2 c sugar
3 eggs
salt, pinch
1 pie crust, unbaked

Steps:

  • 1. Heat oven to 425 degrees F. Mix mashed beans, eggs, sugar and salt. Allow to sit for 30 minutes. Pour into an unbaked pie shell.
  • 2. Bake until the crust browns. Turn the heat down to 375 and continue baking for 40 more minutes.
  • 3. I know it sounds crazy....but it really does taste like pecan pie.

Dough for single-crust pie
1/2 cup butter
2-1/2 cups coarsely chopped pecans
3/4 cup packed brown sugar
3/4 cup maple syrup
1/2 teaspoon salt
3 large eggs, beaten
2 tablespoons whiskey or bourbon, optional
2 teaspoons vanilla extract
Optional: Whipped cream and ground cinnamon

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a Dutch oven or large saucepan, melt butter over medium heat. Add pecans; cook, stirring constantly, until very fragrant and pecans start to brown, 4-5 minutes. Remove pecans with a slotted spoon, reserving butter in pan. Stir in brown sugar, maple syrup, and salt; bring to a boil. Reduce heat; simmer 2 minutes. Remove from the heat. In a bowl, whisk a small amount of the hot mixture into eggs; return all to the pan, whisking constantly. Stir whiskey, optional, and vanilla into brown sugar mixture; stir in pecans. Pour into crust. , Bake until a knife inserted in the center comes out clean, 55-60 minutes. Cover edges with foil during the last 30 minutes to prevent overbrowning if necessary. Cool on a wire rack. If desired, top with whipped cream and cinnamon. Refrigerate leftovers.

1 9 inch unbaked deep dish pie shell
3 large eggs, room temperature
2/3 c sugar
dash(es) salt
1 Tbsp all purpose flour
1 c dark corn syrup
1/3 c melted butter
1 1/2 tsp pure vanilla extract
1 c rolled oats, or steel cut oats

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES F.Mix flour with sugar in a medium size bowl. Then add eggs, & salt to sugar mixture and beat till mixed. Pour in melted butter and beat again.
  • 2. Spray measuring cup with non stick cooking spray. Add corn syrup, pour into egg mixture and beat until blended.
  • 3. Stir in oats. Whisk together to blend, and pour into unbaked pie crust.
  • 4. Bake in pre heated 350 degree F. oven for 50 minutes to one hour., or until knife inserted half way between outside and center of filling comes out clean. Cool completely before slicing. Top with a dollop of cool whip or a scoop of your favorite ice cream and serve.
  • 5. Note: You can also use crushed pretzels in this recipe, what ever you have on hand, either will be chewy , and look like the real thing. Enjoy

I had this delicious pie at a pie social in the small community of Freisland WI the woman told me how to make it. Since I didn't have paper and pen, my sister memorized the first half and I memorized the second half. That's team work.

1 cup(s) coconut
3/4 cup(s) light corn syrup
3/4 cup(s) regular oatmeal
1 stick(s) butter, melted
2 - eggs, beaten
1/2 cup(s) brown sugar
1/2 cup(s) white sugar
1 teaspoon(s) vanilla
1/2 cup(s) walnut pieces
1 - unbaked 9 inch pie shell

My kids don't like nuts, but love the inside of a pecan pie. I found this receipt in Southern Food and it has become a big hit with everyone. I now make a REAL pecan pie and a MOCK one.

2 eggs
2/3 c margarine/butter, melted
2/3 c granulated sugar
2/3 c light corn syrup
2/3 c regular rolled oats
1/4 tsp salt
1 tsp vanilla extract
1 unbaked 9-inch pie crust (i use a deep dish, forzen pie crust)

Steps:

  • 1. Combine the eggs, margarine, sugar, corn syrup, oats, salt and vanilla in a bowl. Mix well.
  • 2. Pour into unbaked pie crust and bake for 1 hour at 350. You may want to put the pie on a cookie sheet to catch any over flow
