These refreshing strawberry smoothies from our home economists pair well with spicy Mexican fare. They're a fun addition to any table.

Number Of Ingredients 6

6 lime wedges
3 tablespoons plus 1/3 cup sugar, divided
1-1/4 cups water
1 can (6 ounces) frozen limeade concentrate, partially thawed
1 package (16 ounces) frozen unsweetened strawberries
25 ice cubes

Steps:

  • Using lime wedges, moisten the rim of six glasses. Set limes aside for garnish. Sprinkle 3 tablespoons sugar on a plate; hold each glass upside down and dip rim into sugar. Set aside. Discard remaining sugar on plate. , In a blender, combine the water, limeade concentrate, strawberries, ice cubes and remaining sugar; cover and blend until smooth. Pour into prepared glasses. Garnish with reserved limes. Serve immediately.

Lime wedges, if desired
Coarse salt, if desired
1 can (6 oz) frozen lemonade concentrate, thawed (3/4 cup)
1 can (6 oz) frozen limeade concentrate, thawed (3/4 cup)
1/4 cup powdered sugar
3 cups crushed ice
2 cups club soda, chilled

Steps:

  • Rub rims of glasses with lime wedges; dip in salt to coat.
  • In blender, place lemonade and limeade concentrates, powdered sugar and ice. Cover; blend until slushy. Add club soda; stir gently. Pour mixture carefully into glasses. Garnish with lime wedges.

This recipe is perfect for children & adults....or the perfect base for the real thing. Just add a cup of tequila before freezing!!!

1 (12 ounce) can frozen lemonade concentrate
1 (12 ounce) can frozen limeade concentrate
1 cup powdered sugar
6 cups crushed ice
lime wedge
coarse salt
1 (1 liter) bottle club soda, chilled

Steps:

  • Thaw lemonade& limeade but do not dilute.
  • Process the first 4 ingredients in batches in blender& pour each batch into a 4 liter jug.
  • Place into a freezer until mixture becomes firm.
  • Remove from freezer 30 minutes before serving.
  • Rub rim of glass with lime wedge; place salt in a saucer& dip the glass rim into the salt.
  • Add club soda to the lemon/lime mixture, stirring until it becomes slushy.
  • Pour into prepared glasses.

Frozen Raspberry Lime 'Mock' Margaritas image

This month of May, Girl's Night In was themed for Cinco de Mayo so I thought it in order to make some 'Mock' margaritas. I am pleased to say they turned out delicious even thought they didn't have tequila in them. My girlfriends just loved them and I will be sure to make them again. Drink up!

10 ounce(s) frozen red raspberries, package
3 tablespoon(s) lime juice concentrate
8 - 12 - ice cubes (approx)
6 - 8 package(s) truvia
1 1/2 cup(s) squirt, diet (approx)
RIM OF GLASS
- lime juice
- coarse salt

Steps:

  • 1. First thing is to moisten with juice and salt the rim of your margarita glasses. You can slice your lime into a wedge and moisten the rim of glass with it. Or you can pour some lime juice into a wide bowl and dip glass down into the juice. Have another wide bowl or plate filled with salt and dip glass into salt after the juice.
  • 2. Next in a blender add your ice, (start with 8 cubes), 10 oz. package of frozen red raspberries, lime juice, truvia or your favorite sweetener, and 1 cup of squirt. Turn blender on puree till combined. Taste and see if you want more tartness or a little more sour....add another 1/2 cup of squirt and more lime juice if needed. Pour into your pitcher and place on table.
  • 3. When ready pour into your salted margarita glasses and enjoy this delicious drink.
  • 4. Here is our Cinco de Mayo celebration tablescape all ready to eat some creamy bacon dip w/tortilla chips and flour tortillas filled with beef fajitas that were slowed cooked to perfection.

Some of the fun of this drink is preparing the glasses. Spin the rims in salt.

Number Of Ingredients 7

1 can frozen lemonade concentrate, thawed and undilouted, 12 oz
1 can frozen limeade concentrate, thawed and undiluted, 12 oz.
1 cup powdered sugar
6 cups crushed ice
lime wedges
coarse salt
1 bottle club soda, 1 liter, chilled

Steps:

  • 1. Process half of first 4 ingredients in blender til smooth. Pour mixture into a 4 1uart plastic container. Repeat procedure with remaining half of ingredients. Freeze til firm.
  • 2. Rub rims of stemmed glasses with lime wedges. Put salt in saucer; spin rim of each glass in salt.
  • 3. Remove container from freezer 30 minutes before serving; add club soda, stirring til slushy. Pour into glasses. Makes about 12 cups. Note: For the alcoholic version, stir 1 cup tequila into mixture before freezing.
