6 ice cubes
1 tablespoon white sugar
1 teaspoon instant coffee granules
1 teaspoon cocoa powder, or more to taste
½ teaspoon vanilla extract, or more to taste
1 tablespoon chocolate syrup
1 tablespoon whipped cream

Steps:

  • Blend milk, ice cubes, sugar, instant coffee granules, cocoa powder, and vanilla extract in a blender until smooth.
  • Lightly coat the inside of a glass with chocolate syrup. Pour the coffee mixture into the glass. Top with whipped cream to serve.

1/3 cup butter, softened
2/3 cup granulated sugar
2 teaspoons baking powder
2 eggs
4 teaspoons finely shredded lemons, rind of
1 teaspoon vanilla
2 cups all-purpose flour
1 1/2 cups unsalted pistachio nuts
1 cup sifted powdered sugar
lemon juice or milk

Steps:

  • Line 2 cookie sheets with parchment paper or light grease the cookie sheets; set aside.
  • In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds.
  • Add granulated sugar, baking powder, and 1/2 teaspoon salt; beat until combined, scraping side of bowl occasionally.
  • Beat in eggs, lemon peel, and vanilla until combined.
  • Beat in as much of the flour as you can with the mixer.
  • Using a wooden spoon, stir in any remaining flour and the pistachio nuts.
  • On alightly floured surface, divide dough into 3 portions.
  • Shape each portion into an 8-inch-long loaf.
  • Place loaves at least 3 inches apart on prepared cookie sheets.
  • Flatten loaves to about 2-1/2 inches wide.
  • Bake in a 375 degree F oven for 20 to 25 minutes or until golden and tops are cracked.
  • (Loaves will spread slightly.).
  • Let stand on cookie sheets on wire racks for 30 minutes.
  • Reduce oven temperature to 325 degree F.
  • Transfer loaves to a cutting board.
  • Cut each loaf diagonally into 1/2-inch-thick slices.
  • Place slices, cut sides down, on the same parchment-lined or greased cookie sheets.
  • Bake in a 325 degree F oven for 8 minutes.
  • Turn slices over and bake 8 to 10 minutes more or until dry and crisp.
  • Transfer to wire reacks; cool.
  • For icing, stir together powdered sugar and enough lemon juice or milk (1 to 2 tablespoons) to make icing of drizzling consistency.
  • Drizzle over biscotti.
  • Let stand until frosting is set.
  • Makes about 36 cookies.
  • Make-Ahead Tip: Prepare Lemon-Nut Biscotti as directed through Step 3, except do not drizzle with icing.
  • Transfer to self-sealing freezer bags or arrange in layers separated by waxed paper in a freezer container.
  • Seal, label, and freeze up to 3 months.
  • To serve, thaw biscotti at room temperature 15 minutes.
  • Drizzle with icing.

1 (20 ounce) package fudge brownie mix
3/4 cup ground almonds
1/2 cup all-purpose flour
3/4 teaspoon baking powder
1 egg
3 egg whites
1 teaspoon almond extract
1/4 cup sliced almonds (optional)
3 ounces white baking chocolate (or dark chocolate) (optional)

Steps:

  • In a large bowl, combine the brownie mix, ground almonds, flour and baking powder. In a small bowl, whisk egg, egg whites and extract. Add to brownie mixture; stir until combined.
  • Divide dough into thirds. On a greased baking sheet, shape each portion into a 7 inch. x 3-1/2 inch rectangle.
  • Bake at 350° for 24 minutes. Remove from the oven; cool on baking sheet for 5 minutes.
  • Move to a cutting board and cut diagonally with a serrated knife into 3/4 inch slices. Place cut side down on greased baking sheets. Bake 12-14 minutes longer or until firm.
  • Cool on wire racks. If desired, sprinkle with sliced almonds and drizzle with white or dark chocolate. Let stand until chocolate is completely set. Store in an airtight container.

2 cups all-purpose flour
1 cup granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 cup strong coffee, cooled
1 teaspoon strong coffee, cooled
1 tablespoon milk
1 teaspoon milk
1 large egg
1 teaspoon vanilla
3/4 cup walnuts
1 1/3 cups semi-sweet chocolate chips
3/4 cup dried cranberries

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together all dry ingredients (first 7 ingredients listed).
  • In a small bowl, whisk egg.
  • Add coffee, milk and vanilla.
  • Mix well.
  • Add egg mixture to dry ingredients.
  • If resulting mixture is too dry, add a little more coffee (1/4 tsp at a time).
  • Add chips, nuts and cranberries.
  • Turn dough onto well-floured board and with floured hands, form into 2 logs, each about 13-14 inches long and 3 1/2 inches wide.
  • Bake on greased and floured (or parchment-lined) baking sheet for 20-25 minutes.
  • Remove from oven (reduce oven temperature to 300 degrees at this point) and let cool for 8 minutes.
  • Using serrated knife, cut on a diagonal into 1/2 inch pieces.
  • Lay, cut side down, on baking sheet and bake another 6-8 minutes, one side only.
  • For a harder biscotti, bake 5 minutes EACH side.

Easily lasts for a month in an airtight container, and tastes best as a dessert or a breakfast goodie dipped in coffe. For lactose-free variations, select semi sweet chocolate that is made without milk, such as ghiradelli or valrhona. *TIME INCLUDES REFRIDGERATION* Taken from "Chocolate Chip Cookies" by Dede Wilson (all chocoholics must own this book).

2 cups all-purpose flour
2/3 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3 large eggs
1 tablespoon espresso beans, freshly ground
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon unsweetened cocoa powder, Dutch-processed

Steps:

  • PREPARATION.
  • Whisk flour, sugar, cinnamon, baking powder, and baking soda together in a large bowl.
  • Using an electric mixer, beat eggs into flour mixture, one at a time, on low spead until well mixed, scraping down the bowl once or twice.
  • Beat in espresso and vanilla. Stir in chocolate chips (dough should be very thick).
  • Cover with plastic wrap and chill until the dough is firm enough to be shaped (at least 30 minutes or overnight).
  • FIRST BAKING.
  • Preheat oven to 350°F Line 2 cookie sheets with parchment paper (optional) or cooking spray.
  • Stir together the toppings (sugar, cinnamon, and cocoa) in a small bowl and set aside.
  • On a lightly floured work surface, shape the chilled dough into squished logs that are bout 1 1/2 inch wide, 12 inches long, and 1/2 inch thick.
  • Place the logs onto the prepared cookie sheets and dust with the topping.
  • Bake until they are dry to the touch and light golden brown around the edges, about 25 minutes. Then let them cool off for at least 2 minutes on a rack.
  • SECOND BAKING.
  • Gently remove each log from the pan and put them on a cutting board. Slice the biscotti diagonally very thinly (about 1/4 inch thick). If the biscotti crumbles too much when you do this, but it back in the over for a few minutes so it will harden up. Also, try to slice them with one swift motion instead of a sawing action, so that the chocolate doesn't get smeared all over the place (presentation is key).
  • Place the slices back onto the cookie sheet cut side down and back them for another 6 minutes.
  • Remove them from the oven and flip the biscotti over (I find that flipping them individually by hand tends to be quickest and easiest).
  • Bake them for 6 more minutes or until dry, and then place the biscotti onto the racks to cool.
