Sweet and Tangy Sauteed Collard Greens image

Honey and balsamic vinegar add the sweet and tangy aspects of this delicious and nutritious vegetarian side dish or salad!!

1 tablespoon vegetable oil
½ Vidalia or other sweet onion, sliced
1 ½ pounds collard greens - rinsed, trimmed and chopped
½ cup water
3 tablespoons balsamic vinegar
2 tablespoons honey
1 teaspoon grated fresh ginger root
5 tablespoons melted butter
salt and freshly ground black pepper to taste

Steps:

  • Heat oil in large skillet over medium heat. Add onion and cook, stirring, until softened, about 5 minutes. Stir in collard greens, in batches if necessary, until they wilt slightly and all fit in the skillet. Pour in water and cook, stirring occasionally, until bright green and tender, 5 to 7 minutes, regulating heat to prevent burning. Drain.
  • Meanwhile, whisk vinegar, honey, ginger and butter together in a serving bowl for dressing. Add greens to bowl and toss with dressing. Season to taste with salt and pepper; serve warm.

Steps:

  • In a jar with tight-fitting lid, combine the first seven ingredients; shake well. Toss with salad greens just before serving.

4 pounds mixed collard, mustard and turnip greens
8 strips bacon
6 cups water
Salt and pepper, to taste

Steps:

  • Wash the greens well, picking them over to remove any brown spots or blemishes. Drain well. Discard the discolored outer leaves and cut out the thick ribs. Tear the greens into pieces. Place the bacon strips in a large heavy saucepan and cook over medium heat until it is translucent and the bottom of the pan is coated with the rendered bacon fat. Add the greens and the water and bring to a boil over medium heat. Reduce the heat to low and continue to cook until the greens are tender, about 2 hours. Add the seasonings and serve hot. Top with traditional accompaniments, if desired.;

1 cup onion, cut into half moons
1 tablespoon toasted sesame oil
1 cup red bell pepper, seeded and cut julienne
4 cups kale, stemmed and cut julienne
2/3 cup water
4 cups napa cabbage or 4 cups bok choy, cut julienne
1 tablespoon tamari soy sauce
1/4 cup white miso
2 tablespoons tahini
1/4 cup lemon juice, freshly squeezed
1/4 cup water
1 tablespoon honey or 1 tablespoon brown rice syrup
2 teaspoons fresh dill weed or 1 teaspoon dried dill
1/2 teaspoon turmeric

Steps:

  • SALAD -----------.
  • In large skillet over medium high heat, saute onions in the sesame oil for 5 minutes.
  • Add pepper, toss and saute for 3 minutes.
  • Add kale and 1/3 cup of water. Cook until liquid has evaporated.
  • Add cabbage, tamari and remaining 1/3 cup of water. Cook until greens are tender, about 5 minutes.
  • DRESSING -----------.
  • Stir miso and tahini together in a bowl.
  • Add lemon juice and water and mix well.
  • Stir in remaining ingredients.
  • ASSEMBLE -----------.
  • Divide salad into 4 servings and spoon 2 tbsp of Tangy Miso Dressing over each.
