2 (12-ounce) bags frozen mixed berries, thawed
1/2 cup dried cranberries
1/3 cup cranberry juice cocktail
1/4 cup quick cooking tapioca (recommended: Minute)
1/2 teaspoon ground cinnamon
1 cup sugar
1/2 cup baking mix
3/4 cup whole-grain cereal
1 cup almond biscotti (about 4 to 5 cookies), crushed
2 tablespoons butter, melted
Serving suggestions: vanilla ice cream or whipped topping

Steps:

  • Combine mixed berries, dried cranberries, cranberry juice, tapioca, cinnamon, and sugar in bottom of a 4 or 5-quart slow cooker. Stir thoroughly.
  • Cover and cook on high setting for 2 to 4 hours.
  • For crumble topping:
  • Preheat oven to 350 degrees F, 30 minutes before serving, Line a baking sheet with aluminum foil and set aside.
  • In a medium bowl, combine crumble topping ingredients. Spread out on prepared baking sheet and bake for 12 to 18 minutes or until crisp and golden brown.
  • Sprinkle crumble topping over warm berry mixture.
  • Serve with vanilla ice cream or with whipped topping, if desired.

BERRY CLAFOUTI WITH CREME FRAICHE



Berry Clafouti with Creme Fraiche image

2 eggs
1/3 cup sugar
1/2 vanilla bean, split and scraped
3 tablespoons flour
Pinch salt
2/3 cups creme fraiche
1/3 cup milk
1 pint mixed berries: strawberries, blueberries, raspberries, blackberries
1 tablespoon confectioners' sugar, plus extra for dusting

Steps:

  • Preheat oven to 375 degrees. Whisk together the eggs and sugar until frothy. Add vanilla specks, flour, and salt. Mix until incorporated. Fold in the milk and 1/2 the creme fraiche.
  • Spray a 10-inch Teflon pan with vegetable spray. Pour 1/3 of the batter into the pan. Bake in the oven for 3 minutes, just until the batter sets. Remove pan from oven and spread the mixed berries on as the next layer. Pour remaining batter over the berries. Return the pan to the oven and continue baking for 12 to 16 minutes, or until the edges start to brown and the middle rises. Take out and let cool for 20 minutes.
  • Mix the remaining 1/3 cup of creme fraiche with the confectioners' sugar. Cut the clafouti into 4 to 6 wedges, dust with the extra confectioners' sugar and serve with the remaining berries and sweetened creme fraiche.

1/2 cup all-purpose flour
1/2 cup light brown sugar
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1 pinch salt
1/2 cup oats
6 tablespoons cold butter, cut into small pieces
4 cups mixed berries
1/2 cup granulated sugar
2 tablespoons cornstarch
Equipment: 6 (6-ounce) ramekins

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl combine flour, brown sugar, 1/4 cup sugar, cinnamon, salt and oats. Using a pastry blender, a fork or your hands cut in butter. Keep cold until ready to use.
  • In a large bowl combine berries, 1/2 cup sugar, and cornstarch; toss to coat. Evenly divide the fruit mixture between the 6 ramekins. Top with crumble topping. Bake until top is golden and fruit is bubbly, about 35 minutes. Serve warm.
