- In small bowl, whisk together the miso, water, sugar, vinegar, soy sauce, and salt. While whisking constantly, gradually add the peanut and sesame oils until you have a creamy dressing. Use now or store covered, in the refrigerator, for up to 3 days.

Cover and shake vigorously until well combined. DO AHEAD: Can be made 2 days ahead. Cover and chill.

SESAME TUNA WITH SOY MISO DRESSING
This recipe is served at a seafood restaurant in Royal Oak, Michigan. The sesame covered tuna is done medium rare inside (almost like sushi) and has a fantastic soy miso dressing drizzled over the top. One of the best seafood dishes I love!

- In a shallow bowl, mix together 1/2 cup of sesame seeds, seasoning salt, white pepper, onion powder, wasabi powder, kosher salt and flour; set aside. In a separate bowl, mix together the eggs and milk.
- Dip tuna steaks in the egg mixture, then dredge in the flour mixture until well coated on both sides. Press on as many extra sesame seeds as possible, so it is well coated. Heat the vegetable oil in a large heavy skillet over medium-high heat. Fry tuna steaks for 2 minutes per side, and immediately remove from heat. The inside of the fish should still be red.
- To make the soy miso dressing, mix together the miso soup mix and soy sauce. Heat in a small saucepan or microwave, and drizzle over steaks.

- Steam beans 12 minutes or until crisp-tender, OR cook in boiling salted water 3 to 5 minutes until crisp-tender. Drain and plunge into iced water to cool 10 minutes. Drain again and pat dry. To cut the beans, fit a food processor with slicing blade. Trim beans to fit feed tube horizontally. With lid in place, stack beans in feed tube, then push beans through feed tube with food pusher while motor is running. OR, cut beans diagonally into 2-inch lengths with a sharp knife.
- Add miso, sugar,mirin, lemon juice, soy sauce, and optional lemon zest to ground sesame seeds. Gently toss mixture with prepared beans. Garnish with a sprinkle of roasted sesame seeds before serving.

GREEN BEANS WITH SESAME-MISO DRESSING
Green beans (or almost any other vegetable for that matter) gain an exciting twist from this miso-based dressing. You can find miso (see page 123) at well-stocked supermarkets and Asian markets; red miso (which is actually brown) is most often used in this dressing, but you can also use white. If you cannot find miso, see the variation, which is worth trying in any case.

- Bring a large pot of water to a boil and add salt. Cook the green beans just until tender, about 3 minutes, drain, and rinse under cold water (better still, plunge them into a bowl of ice water) to stop the cooking. Drain again and set aside.
- Whisk the sugar into the mirin until it is dissolved; stir in the sesame seeds and miso until well combined. Toss with the green beans until well coated, then serve or let stand for up to an hour before serving.
- Substitute 1 tablespoon soy sauce and 1 teaspoon honey for the miso.
MISO SESAME DRESSING
Great light dressing to pair with cabbage or romaine lettuce, fresh mandarin oranges, and toasted almonds! Place greens in a bowl and add garnishes. Ladle toasted sesame dressing around salad and toss to coat greens evenly. Sprinkle with 1 teaspoon toasted sesame seeds.

STEAMED BROCCOLI WITH MISO-SESAME DRESSING
An outstanding member of the Brassica family, broccoli aids in detoxification, and steaming is the best cooking method for retaining the vegetable's potent nutrients. Miso, or fermented soybean paste, contains B vitamins, protein, and probiotics, which strengthen immunity.

- Fill a pot with 2 inches of water. Set a steamer basket (or colander) in pot; bring water to a boil. Place broccoli florets in basket, and steam until bright green and just tender, about 5 minutes.
- Meanwhile, mix together miso, sesame seeds, the lemon juice, and oil in a bowl. Slowly add tofu and 2 tablespoons water, stirring until combined; if dressing is too thick, add up to 1 tablespoon more water.
- Transfer broccoli to a serving dish; drizzle with dressing, and garnish with red bell pepper.
