Number Of Ingredients 10

6 tablespoons fresh lime juice (about 3 limes)
4 cups cubed fresh pineapple (1 inch)
40 fresh mint leaves
2/3 cup superfine sugar
1/8 teaspoon kosher salt
1-1/2 cups light rum
Ice cubes
7 cups club soda, chilled
GARNISH:
Fresh pineapple slices and additional fresh mint leaves

Steps:

  • Place the first 5 ingredients in a blender; cover and process until pureed. Transfer to a 1-1/2-qt. pitcher; stir in rum. Pour 1/3 cup mixture into each glass. Add ice; pour 1/2 cup soda over ice. Garnish with pineapple slices and additional mint leaves.

I love pineapple and I love mojito. So combining the two was a winner. When fresh pineapples are available, I like to add a tablespoon of chopped pieces to my mojito and muddle them with the mint leaves.

1 ripe pineapple - peeled, cored, and cut into chunks
1 (750 milliliter) bottle gold Barbados rum (such as Mount Gay® or Trader Joe's® Rum of the Gods)

Steps:

  • Place pineapple in a large glass container. Pour in rum, covering pineapple completely.
  • Store container on a cool, dark shelf, stirring and tasting once a day, until rum reaches desired flavor, at least 1 week but preferably 2.

This pineapple rum cocktail is a stunning mixed drink with a tropical flair! Use any type of rum you have (even pineapple rum).

6 large leaves mint
1 teaspoon sugar
2 lime wedges
2 ounces golden (aged), dark, white, or pineapple rum*
1 1/2 ounces pineapple juice
1/4 ounce Maraschino liqueur
2 shakes orange bitters (optional but recommended)
For the garnish: Mint, lime wedges, and/or pineapple slice

Steps:

  • In a cocktail shaker, muddle the mint with the sugar and lime wedges.
  • Add the rum, pineapple juice and Maraschino liqueur to the cocktail shaker. Fill it with ice and shake until cold.
  • Strain the drink into a glass. Shake on the bitters if desired. Garnish with mint, a lime wedge and a pineapple slice.

3 tablespoons dark rum
1/2 cup unsweetened pineapple juice
2 tablespoons minted simple syrup
For minted simple syrup:
1 1/2 cups packed fresh mint leaves
1 cup sugar
1 cup water
Garnish: pineapple slices and fresh mint sprigs

Steps:

  • In a tall glass filled with ice stir together rum, juice, and syrup until combined well.
  • Garnish drink with pineapple and mint.
  • To make simple syrup:
  • Chop mint. In a saucepan bring sugar, water and mint to a boil, stirring until sugar is dissolved. Simmer syrup, undisturbed, 2 minutes. Pour syrup through a fine sieve, pressing hard on solids, and cool. Syrup keeps, covered and chilled, 2 weeks. Makes about 1 1/2 cups.

32 ounces (1 quart) chilled pineapple juice (preferably from a carton)
1 cup mint leaves
2 tablespoons sugar
1/4 cup fresh lime juice
12 ounces (1 1/2 cups) gold rum
Garnish: mint sprigs; lime wedges

Steps:

  • Blend one fourth of pineapple juice with all of mint and sugar in a blender until mint is finely chopped, then pour into a pitcher with lime juice and remaining pineapple juice. Chill until ready to use.
  • Just before serving, fill tall glasses halfway with ice and add 3 tablespoons rum to each, then top with 1/2 cup juice.
