MINTY MARGARITA GUACAMOLE
Two kinds of citrus -- lime and orange -- and plenty of fresh mint set this margarita-inspired guacamole apart.

- In a medium bowl, lightly mash avocados. Add lime juice, orange zest and juice, jalapeno, mint, 2 teaspoons salt, and 1/4 teaspoon pepper and mix to combine. Serve immediately or refrigerate in an airtight container with plastic directly on the surface for up to 1 day.

- Moisten rim of 1 cocktail glass with lime wedge. If desired, sprinkle salt on a plate; dip rim in salt. Fill glass with ice. In an empty cocktail shaker, combine tequila, Triple Sec and lime juice. Fill with ice; cover and shake until frost forms on the outside of the shaker, 15-20 seconds. Strain into prepared glass. Garnish with lime wedge.

- In a medium bowl, lightly mash avocados. Add lime juice, onion, jalapeno, cilantro, 2 teaspoons salt, and 1/4 teaspoon pepper. Fold in cherry tomatoes and eggs. Serve with plantain chips. Serve immediately or refrigerate in an airtight container with plastic directly on the surface for up to 1 day. If making ahead, hold off on stirring in eggs until just before serving.
