FRESH MINT ICED COFFEE
Steps:
- Muddle the mint leaves in a large glass. Fill it with ice. Pour in the coffee, heavy cream and Simple Syrup, and give it a little swirl. Enjoy!
- In a small saucepan, whisk together the sugar and water and bring to boil, stirring often. Remove from the heat and let it cool. Transfer to a container and store in the fridge for up to 2 weeks.
MINT FRENCH VANILLA COFFEE (CHILLED)
An interesting take on the morning beverage. I came up with this at work while trying out some new things for a dinner party dessert. What ended up happening was I served this to our morning crews and dispatchers before they headed out on the road, and they absolutely loved it!

- Pour into glasses and top with whip cream.

- Put the first 5 ingredients into a blender.
- Pulse blend until the ingredients are smooth and frothy.
- Add the cold milk and pulse blend until all the ingredients are blended well.
- Pour of a few cubes of ice, add the chocolate and voula!
- Sometimes I add the ice to the blender after the first five ingredients have been blended and crush the ice and then add the milk and mix.

Okay, so I really like iced coffee, so one day I tried putting it in a blender and this is what I came up with. Very easy and yummy. Enjoy. Note: Prep time doesn't include brew time or chill time on coffee. I brew it for hot coffee one day and take leftovers and put in fridge for this.
