MINI SHRIMP ROLLS

Kosher salt
1 bay leaf
1 pound medium shrimp, peeled and deveined
1 rib celery, minced
1 small shallot, minced
1 tablespoon chopped fresh tarragon
1/3 cup mayonnaise
1/2 teaspoon Dijon mustard
1/2 lemon, juiced
Freshly ground pepper
12 slider rolls, split
3 tablespoons butter
1 clove garlic, minced

Steps:

  • Heat the broiler. Bring a large pot of water to a simmer. Add a large pinch of salt, bay leaf and the shrimp and simmer for 2 minutes. Drain and rinse under cold water to stop the cooking. Dry very well with paper towels and then chop the shrimp.
  • Combine the celery, shallot, tarragon, mayonnaise, Dijon mustard, lemon juice, salt and pepper in a medium bowl, and then stir in the shrimp.
  • Combine the butter and garlic together in a medium-size microwave-safe bowl and melt in the microwave until melted, about 20 seconds. Brush the top and bottoms of the rolls with the garlic butter. Place under the broiler and cook until toasted and golden brown, about 2 minutes.
  • Add about 2 tablespoons of the shrimp mixture to the bottom bun and top with the remaining bun halve. Secure with a bamboo skewer. Serve immediately.

1/2 cup seafood cocktail sauce
30 peeled and deveined cooked shrimp (31-40 per pound), tails removed

Steps:

  • Beat the first 5 ingredients until blended. Place tart shells on a serving plate. Fill with cream cheese mixture; top with cocktail sauce and shrimp., Refrigerate until serving. If desired, sprinkle with parsley and serve with lemon wedges.

2 tablespoons olive oil
1 clove garlic, minced
1 cup canned chopped tomatoes in juice
1/2 teaspoon dried thyme
2 tablespoons chopped fresh Italian parsley leaves
1/2 cup dry white wine
1 pound uncooked large shrimp, peeled and deveined
Salt and freshly ground black pepper
6 (4-ounce) pieces of purchased or homemade pizza dough, recipe follows
3 cups shredded mozzarella
1 large egg, beaten to blend (for egg wash)
Extra-virgin olive oil
1/2 cup warm water (105 to 110 degrees F)
2 teaspoons active dry yeast
2 cups all-purpose flour, plus more for kneading
1 teaspoon salt
3 tablespoons olive oil, plus more for bowl

Steps:

  • Heat the oil in a heavy large skillet over medium-low heat. Add the garlic and saute until fragrant and tender, about 2 minutes. Add the tomatoes, thyme, parsley, and wine. Increase the heat to medium and simmer until most of the liquid evaporates, about 8 minutes. In a small bowl, season the shrimp with salt and pepper. Add the shrimp to the skillet and saute until just cooked through, about 2 minutes. Set aside to cool in a small bowl.
  • Position 1 oven rack in the center and the second rack on the bottom of the oven and preheat to 450 degrees F.
  • Line 2 heavy large baking sheets with parchment paper. Roll out each piece of pizza dough into a 7-inch-diameter floured round. Sprinkle half of the mozzarella over the lower half of each pizza dough, dividing equally and leaving a 1-inch border. Spoon the shrimp mixture over the cheese. Sprinkle the remaining cheese over the shrimp mixture. Brush the edge of the dough with egg wash. Fold the plain dough halves over the filling, forming half circles. Pinch the edges of dough firmly together and crimp to seal.
  • Transfer the calzones to the 2 prepared sheets. Bake until the calzones puff and become golden brown, about 12 to 15 minutes. Brush extra-virgin olive oil over calzones and serve.
  • Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 minutes. Mix the flour and salt in a food processor to blend. Blend in the oil. With the machine running, add the yeast mixture and blend just until the dough forms. Turn the dough out onto lightly floured surface and knead until smooth, about 1 minute. Transfer the dough to a large oiled bowl and turn the dough to coat with the oil. Cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. Punch the down dough and form into ball. The dough can be used immediately or stored airtight in the refrigerator for 1 day.

1/2 lb shrimp, cooked, chopped (save 36 shrimp whole)
4 eggs, beaten
1 cup small curd cottage cheese
4 tablespoons parmesan cheese, grated
4 tablespoons chives, chopped
1 dash hot pepper sauce (Tabasco "or" peri-peri "or" your choice)
1 cup monterey jack cheese or 1 cup your favorite cheese, grated

Steps:

  • Bake the tart shells in a 375°F oven for about 5 minutes.
  • Coarsely chop the shrimp (except for 36 you have set aside for garnish).
  • Beat together the eggs and cottage cheese.
  • Stir in the chopped shrimp, Parmesan, chives, hot pepper sauce and pepper.
  • Spoon the cooked, shrimp mixture into the tarts shells.
  • Top with grated cheese and the reserve shrimp.

1/3 cup whipped cream cheese spread
1/3 cup seafood cocktail sauce

1/3 cup finely chopped green onion (optional)

Steps:

  • Spread each cracker with 1 tsp of the cream cheese spread.
  • Top evenly with the cocktail sauce and one shrimp.
  • Sprinkle some of the finely chopped onions on top (if you desire).

2 teaspoons ground coriander
Kosher salt and black pepper
1/4 cup fresh lime juice, plus 2 teaspoons lime zest, and 4 lime wedges (from 3 limes)
2 tablespoons thinly sliced mint, plus a few mint leaves for garnish
1 teaspoon honey
1 garlic clove, finely minced

3 cups fresh corn kernels (from about 4 ears)

Steps:

  • Pat the shrimp dry, then toss with the coriander and a sprinkle of salt and pepper. Let sit while you prepare the dressing.
  • Make the dressing: In a medium bowl, combine the lime juice, lime zest, mint, honey, garlic, chile, 1 teaspoon kosher salt and 1/4 cup olive oil. Whisk until well combined and emulsified.
  • Heat a large nonstick skillet over medium-high. Add 2 tablespoons olive oil, then add the shrimp in an even layer. Cook the shrimp until pink and just cooked through, about 2 to 3 minutes per side. Remove the shrimp to a plate.
  • Reduce the heat to medium and add the corn to the pan. Season with salt and pepper, and cook the corn without stirring until it begins to brown on one side, about 2 minutes. Give the corn a stir and cook for another minute.
  • Add the shrimp back to the pan, along with 2 tablespoons of the dressing, and stir to coat everything in the dressing and to rewarm the shrimp.

1 medium yellow onion, halved lengthwise and cut into thin half-moons
1 teaspoon finely minced garlic
1/4 teaspoon red pepper flakes (to taste)
3 cups ripe tomatoes, peeled, seeded and chopped or 2 (14 ounce) cans diced tomatoes, drained
1/4 cup pitted and coarsely chopped kalamata olive
1 tablespoon capers
2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
2 tablespoons ouzo (optional)
1/3 cup chopped fresh basil leaf
2 lbs large raw shrimp, peeled and deveined
8 ounces feta cheese, coarsely crumbled
minced parsley (to garnish)

Steps:

  • Warm the olive oil over medium-low heat in a skillet;
  • cook the onion, garlic and red pepper flakes in the oil until the onion is translucent.
  • Stir in the tomatoes, olives, capers and oregano; raise the heat just until the mixture rebring just to a boil; cover the pan, reduce the heat to medium-low, and simmer for 20 minutes.
  • Add the ouzo, basil leaves and shrimp, then immediately spoon the mixture into four shallow individual casseroles.
  • Top each casserole with crumbled feta and place them under the broiler until the shrimp are just pink and the cheese is browned, about 7 minutes.
  • Sprinkle with minced parsley and serve immediately with hot crusty bread for dipping.

1/4 cup finely chopped onion
1 pound large shrimp (21 to 25 per pound in shell), peeled, deveined, and coarsely chopped
2 tablespoons medium-dry Sherry
1 tablespoon chopped fresh tarragon
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (17 1/4-ounce) package frozen puff pastry sheets, thawed
All-purpose flour for dusting
1 large egg
1 tablespoon milk

Steps:

  • Put oven racks in upper and lower thirds of oven and preheat oven to 400°F. Line 2 large baking sheets with parchment paper.
  • Heat butter in an 8-inch skillet over moderately low heat until foam subsides, then cook onion, stirring occasionally, until softened but not browned, about 2 minutes. Transfer to a bowl to cool.
  • When onion is cool, add shrimp, Sherry, tarragon, salt, and pepper and stir until combined well.
  • Roll out 1 sheet of pastry on a lightly floured surface into a 12-inch square. Cut into thirds in one direction, then into fourths in the other direction to make 12 (3- by 4-inch) rectangles. Cut each rectangle in half diagonally to form 2 triangles. Place 1 triangle on a work surface with longest edge nearest you, then put 1 teaspoon shrimp filling in center of triangle. Bring bottom corner of shortest side up to top point, then wrap remaining corner around resulting cone. Pinch to seal, then transfer to a lined baking sheet. Form more cornets in same manner, then repeat with remaining sheet of pastry. Chill first sheet of cornets, loosely covered, while making second.
  • Whisk together egg and milk and lightly brush some of egg wash over top of pastries.
  • Bake in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden, 18 to 20 minutes total.
  • Cool cornets on sheets on racks 5 minutes, then gently loosen from parchment with a spatula. Serve warm.
