Mini Baked Brie en Croute is an elegant but surprisingly simple appetizer made with mini wheels of cheese and frozen puff pastry. It's the ultimate holiday finger food!

1 sheet thawed puff pastry
16 mini Brie rounds
1 egg beaten with 1 Tbsp water for brushing

Steps:

  • set oven to 400F
  • When the pastry has thawed, lay it out on a floured surface. Roll it out gently into a 12x12 square. You can use your hands at the end to get it just right. Cut the sheet into sixteen 3" squares.
  • Lay a Brie round in the center of each square, and bring up the corners to meet in the middle. You can do a little stretching--- it won't tear the dough. Twist the ends together to secure.
  • Set the pastries on a parchment or silicone lined baking sheet and lightly brush with the egg mixture.
  • Bake for about 20-25 minutes until the pastries are golden browned.
  • Serve hot with your favorite jam.

1 egg
1 tablespoon water
1 (17.3 ounce) package frozen puff pastry (such as Pepperidge Farm®), thawed
½ cup apricot preserves
¾ cup dried cranberries
½ cup sliced almonds
1 (7 inch) wheel Brie cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk egg and water together to make egg wash.
  • Roll out puff pastry gently to a 14-inch square. Trim corners with a knife or pizza cutter to make a circle. Spread apricot preserves over the pastry, leaving a 1-inch margin around the edge. Sprinkle cranberries and almonds over the pastry, and place Brie cheese in the center.
  • Brush the edges of the pastry with some of the egg wash. Fold top and bottom of pastry over the dough; trim 2 inches off each edge. Fold remaining pastry on top to cover the Brie cheese completely. Press the seams with your fingers to seal. Remove any excess apricot preserves that leaks out.
  • Transfer wrapped cheese, seam-side down, to baking sheet. Brush top with egg wash.
  • Bake in the preheated oven until top is golden brown, about 20 minutes. Let stand before serving, about 30 minutes.

1 egg
1 tablespoon water
1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
1/2 cup apricot preserves
seedless raspberry jam
1/3 cup dried cranberry
1/4 cup toasted sliced almond
1 (13- to 16-ounce) Brie cheese round
1 package (13 ounces) Pepperidge Farm® Entertaining Quartet Distinctive Crackers

Steps:

  • Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Spread the preserves on the pastry to within 2 inches of the edge. Sprinkle with the cranberries and almonds. Place the cheese in the center of the pastry. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Brush the seam with the egg mixture. Place seam-side down onto a baking sheet. Decorate with the pastry scraps, if desired. Brush with the egg mixture.
  • Bake for 20 minutes or until the pastry is golden brown. Let stand for 45 minutes. Serve with the crackers.

Mini Brie En Croute With Cranberry image

I learned how to make brie en croute this year, and wanted to make a "bite sized" version for a recital reception. I adapted the Pillsbury baked brie recipe. It was a great success! Here is my recipe.

4 (8 ounce) cans pillsbury crescent roll dough (not the actual crescent rolls)
8 ounces round brie cheese
1 (14 ounce) can whole cranberry sauce
2 eggs, beaten

Steps:

  • Cut the brie into 4"x4" square and discard the rounded edges.
  • Cut the square into 1-inch cubes (there should be 16).
  • Cut each 1-inch cube in half, and put the cheese aside.
  • Open 1 can of crescent roll dough, and lay the dough flat on a greased counter space.
  • Cut the dough in half lengthwise, and then into quarters widthwise. I recommend using a pizza cutter. This should result in 8 squares of dough.
  • Place 1 piece of cheese and 1 table spoon of cranberry sauce onto a square of dough.
  • Take the edges of the dough, and pinch them together at the top of the pastry to create a purse-like sculpture.
  • Repeat this process to use all of the dough, cheese, and cranberry sauce.
  • Place the little brie en croute "purses" 2 inches appart on a greased cookie sheet.
  • Pour/brush the beaten egg over the tops of the purses. Make sure the purses are covered in egg from top to bottom.
  • Bake purses in oven for 20 minutes at 350 degrees or until golden brown.
  • Let cool for 1/2 an hour.
  • Enjoy!
