1/2 cup butter (or other fat)
3 onions, sliced

Steps:

  • Put the onions in the bowl with the fat or butter. Cover the bowl and microwave for 10 minutes on high.
  • Take off the cover, and stir the onions--there should be good bit of liquid in the bowl. Microwave (uncovered) for approximately 10 more minutes, but keep an eye on it. It should get brown around the edges, so stir it periodically.
  • Eventually it'll be a brown mass of onions. If you like them crispy, microwave them a bit longer but, again, keep an eye on them--it's a real short moment between crispy and burnt.
  • You can do this in a conventional oven too, but it takes longer; say around 20 minutes at 350°F with the cover on and another 20 min with the cover off, stirring periodically. Once again, keep an eye on it.

This dish is a perfect addition to the traditional holiday turkey dinner. In my family, neither Thanksgiving or Christmas dinner would be complete without serving creamed onions.

16 -20 fresh boiling onions, golf ball size, from produce department
2 tablespoons flour (I prefer Wondra.)
1 cup cold milk
2 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika

Steps:

  • Fill a large stock pot with water and heat to a rolling boil.
  • Add unpeeled onions and blanch for about 3 minutes.
  • Drain and allow onions to cool.
  • Re-fill stock pot with water and again heat to boiling temperature.
  • Peel each onion by cutting the root end, not the tail end) and then squeezing the onion from its skin.
  • Add the onions to the boiling water and cook until fork tender but not mushy.
  • Meanwhile, stir together all remaining recipe ingredients in a medium saucepan and cook over medium heat, stirring constantly, until boiling. Continue to cook and stir about one more minute, until sauce has thickened.
  • Combine the fork tender cooked onions with the sauce and sprinkle with paprika.

24 small white onions, peeled
1/2 cup butter
1/2 cup flour
2 cups whipping cream, unwhipped
salt and pepper
2 tablespoons grated parmesan cheese (optional)
1 dash cayenne pepper
1/2 cup sharp cheddar cheese, shredded
1/2 cup breadcrumbs
2 -3 tablespoons melted butter
1 -2 tablespoon grated parmesan cheese

Steps:

  • Cook onions in water (enough to cover the onions) until tender; reserve 1/2 cup liquid from the onions, discard the remaining liquid.
  • In a saucepan, melt 1/2 cup butter, whisk in flour, slowly add in the cream, and the reserved liquid from the onions; whisk until smooth and thick.
  • Add in the cheddar and Parmesan cheeses, salt, pepper and the cayenne pepper; mix until the cheese are melted.
  • Add in the onions, mix to combine.
  • Transfer to a greased baking dish.
  • In a small bowl, combine the breadcrumbs, melted butter and the 1-2 Tbsp grated Parmesan cheese; mix to combine.
  • Sprinkle the breadcrumb mixture over the top of the casserole.
  • Cover, and bake at 350 degrees for 40-45 minutes, uncover the last 20 minutes of baking to brown the top.
  • Note: If desired, 2-3 cloves fresh minced garlic may be added to the melted butter before whisking in the flour.

MICROWAVE BAKED ONIONS

If you have a microwave oven, this recipe will become as basic for you as baked potatoes. It is SO easy, yet tasty and impressive, too. The onions may also be baked in a conventional oven.

4 large sweet onions, preferably Vidalias
salt
fresh ground black pepper
butter
shredded cheddar cheese

Steps:

  • Peel onions and cut in half horizontally. Place in a 1-quart casserole dish.
  • Top each onion half with salt and pepper to taste. Add a pat of butter, using 1/2 teaspoon to 1/2 tablespoon per onion.
  • Cover and cook at 100% power (HIGH) for 8 to 10 minutes, or until onions are soft.
  • Uncover and top each half with shredded cheese to taste.
  • Pop back in microwave and zap just long enough to melt the cheese.
  • If you prefer, bake the onions one hour in a conventional 350-degree oven, topping with cheese when baking has finished.
  • An alternate topping: Prepare onions as above, but top each half with 1/2 tablespoon EACH butter and brown sugar.
