Easy to make Vegetarian Taco Casserole recipe. Instead of meat, we use lots of vegetables and beans. This Mexican Casserole takes 30 minutes to bake.

1 cup of elbow macaroni
1 15 oz can of black beans (drained and rinsed)
1 cup frozen corn
1 large green pepper - chopped
2 cups fresh tomatoes - diced
1 10.75 ounce can of condensed tomato soup
1 package of taco seasoning mix
3/4 cup shredded taco blend cheese
2 jalapenos - chopped finely for garnish (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta until al dente. Drain.
  • Into a casserole baking dish add your elbow macaroni, black beans, corn, green pepper, tomatoes, tomato soup and taco seasoning mix. Stir the ingredients with a spoon.
  • Sprinkle shredded cheese on top of the casserole.
  • Add finely chopped up jalapenos on top. (optional)
  • Bake for 30 minutes or until cheesy is bubbly.
  • Enjoy!

1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 can (15.5 oz.) black beans, rinsed
1 can (14.5 oz.) diced tomatoes, drained
1 pkg. (10 oz.) frozen corn, thawed, drained
1 pkg. (7 oz.) KRAFT 2% Milk Cheddar Cheese, divided
1/4 cup chopped fresh cilantro

Steps:

  • Heat oven to 375ºF.
  • Combine first 6 ingredients; stir in 1 cup cheddar.
  • Spoon into 13x9-inch baking dish sprayed with cooking spray; top with remaining cheddar.
  • Bake 20 min. or until heated through.
  • Sprinkle with cilantro.

1 envelope taco seasoning
1 can (15 ounces) tomato sauce
1/4 cup chopped green pepper
1 teaspoon garlic powder
1 teaspoon dried oregano
8 ounces uncooked spiral pasta, cooked and drained
1 cup shredded cheddar cheese, divided
1/2 cup sour cream

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning, tomato sauce, green pepper and spices. Bring to a boil; remove from the heat. , Meanwhile, combine the pasta, 1/2 cup cheese and sour cream. Spoon into a greased 2-qt. baking dish. Top with meat mixture and remaining cheese. 1 lb ground beef
15 oz can corn (drained)
2 c. uncooked spiral pasta
15.5 oz jar salsa
10.75 oz can condensed cream of chicken soup
1 c. shredded Mexican cheese (divided)

Steps:

  • Preheat oven to 350 degrees.
  • Prepare pasta according to package directions.
  • Brown beef over medium heat in a large skillet until no longer pink. Drain off grease. Stir in salsa, corn, soup and 1/2 c. of cheese. Heat mixture through. Stir in drained and cooked pasta to mixture.
  • Transfer to greased 2 quart casserole dish. Sprinkle with remaining cheese.
  • Cover and bake at 350 degrees for 15-20 minutes or until cheese is melted.

2 red peppers, cored and cut into 1-inch wide strips
2 zucchini, quartered lengthwise and cut into 1-inch cubes
2 summer squash, quartered lengthwise and cut into 1-inch cubes
4 cremini mushrooms, halved
1 yellow onion, peeled and sliced into 1-inch strips
1/4 cup extra-virgin olive oil
1 teaspoon salt, divided
1 teaspoon freshly ground black pepper, divided
1 tablespoon dried Italian herb mix or herbs de Provence
1 pound penne pasta
3 cups marinara sauce (store bought or homemade)
1 cup grated fontina cheese
1/2 cup grated smoked mozzarella
1 1/2 cups frozen peas, thawed
1/4 cup grated Parmesan, plus 1/3 cup for topping
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat the oven to 450 degrees F.
  • On a baking sheet, toss the peppers, zucchini, squash, mushrooms, and onions with olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and dried herbs. Roast until tender, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook for about 6 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander.
  • In a large bowl, toss the drained pasta with the roasted vegetables, marinara sauce, cheeses, peas, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Using a wooden spoon, gently mix, until all the pasta is coated with the sauce and the ingredients are combined.
  • Pour the pasta into a greased 9 by 13-inch pan. Top with the remaining 1/3 cup Parmesan and butter pieces. Bake until top is golden and cheese melts, about 25 minutes.

I got this off of MSN and have modified it a little to our tastes. The recipe calls for making them in individual servings but I usually just make it as a casserole. Very rich and not for the fat conscious - we don't have this very often. It also makes for a few dishes.

12 ounces bow tie pasta, uncooked (about 5 cups)
1/2 cup onion, chopped
1/2 cup sweet red pepper, chopped
2 tablespoons butter
1/3 cup flour
2 tablespoons fresh cilantro, chopped and packed
1 teaspoon cumin
3 cups milk
6 ounces colby cheese, shredded
1 1/2 cups monterey jack cheese, shredded
1 cup salsa, chunky is best
2/3 cup olive, pitted
chili powder

Steps:

  • Preheat oven to 350 degrees. Butter six 12-1 6 ounce individual casserole dishes (or one 3 quart baking dish); set aside.
  • Cook pasta according to package directions. Drain and return to pan.
  • In a large saucepan, cook onion and sweet pepper in butter over medium heat about 5 minutes or until tender. Stir in flour, cilantro and cumin. Add milk all at once. Cook and stir until the mixture and thickened and bubbly. Reduce heat to low. Stir in Colby cheese and 1 cup of the Monterey Jack cheese; stir until melted.
  • Pour mixture over drained pasta; stir to combine.
  • Layer half the pasta mixture, all of the salsa and the remaining pasta mixture in the prepared casserole(s). Sprinkle with remaining 1/2 cup of Monterey Jack cheese and olives. Sprinkle lightly with chili powder on top.
  • Bake, uncovered, 15-20 minutes or until bubbly around the edges and heated through (if useing a large casserole, bake in 400 degree oven for about 20 minutes). Let stand for 5 minutes before serving.

I've given the baked feta trend a spring/summer twist. Full of veggies like asparagus, zucchini, corn, and peppers, and baked until golden brown and delicious.

1 pint grape tomatoes
1 bunch asparagus, trimmed and chopped
1 medium zucchini, halved lengthwise and cut in 1/4 inch slices
1 medium yellow onion, chopped
1 medium red bell pepper, chopped
1 ear fresh sweet corn, kernels cut from the cob
4 tablespoons extra-virgin olive oil, or as needed
1 teaspoon red pepper flakes
sea salt and freshly cracked black pepper to taste
1 (16 ounce) package block feta cheese
4 sprigs fresh thyme
1 (16 ounce) package rigatoni pasta
½ medium lemon
¼ bunch fresh parsley, chopped
1 tablespoon grated Pecorino Romano cheese, or more to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine grape tomatoes, asparagus, zucchini, onion, bell pepper, and corn kernels in a baking dish large enough to accommodate all vegetables. Drizzle generously with olive oil and sprinkle with pepper flakes as well as a hit of salt and pepper. Toss to coat and make a well in the center of the dish. Place feta blocks in the well and drizzle with more olive oil. Season feta with salt, pepper, and a pinch of pepper flakes. Nestle thyme sprigs into the veggies around the dish.
  • Bake uncovered in the preheated oven until vegetables are soft and feta is lightly browned, about 40 minutes.
  • When the vegetables and feta have cooked for 25 minutes, bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain, reserving 1 cup of pasta water. Set aside.
  • When the vegetables and feta are finished cooking, turn the broiler to 500 degrees F (260 degrees C) and broil vegetables for 1 minute for some final browning.
  • Squeeze lemon over vegetables and feta and stir in fresh parsley. Stir in rigatoni and reserved pasta water to help feta coat pasta evenly. Season with salt and pepper as needed and sprinkle with Pecorino Romano cheese.

Also a great way to use up leftover cottage cheese. I have used a drained can of corn in this recipe in lieu of the frozen--works just fine!

1/4 cup fresh cilantro (optional)

Steps:

  • Preheat oven to 375.
