RASPBERRY CRUMBLE BARS image

Number Of Ingredients 8

1/2lb butter @ room temperature
3/4c sugar
1t vanilla
2 and 1/3c flour
1/2t kosher salt
10-12oz raspberry jam, with or without seeds (you can substitute any jam you prefer)
2/3c granola (any kind without fruit)
1/4c sliced almonds (blanched if you can find them)

Steps:

  • In mixer bowl with paddle attachment, mix butter and sugar on low speed; add vanilla. Once this is mixed, add flour slowly. Add salt. Mix until just combined. Press 2/3 of the dough gently into the bottom of a greased 9-inch square baking dish, working it about a quarter of an inch up the sides. Spread jam onto dough in pan, stopping just short of the edges. Put remaining 1/3 of dough into a bowl. Add granola and almonds and pinch it all together with your hands. Crumble pinches of this mixture on top of the jam; don't worry if not everything is covered. Bake at 350 degrees for 45 minutes.
