EASY MEXICAN GOULASH
My stepson loves tacos, so I whipped this up one night when I didn't have taco shells.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef, onion, bell pepper, and Worcestershire sauce in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add tomatoes, corn, salsa, and taco seasoning. Cover and simmer while preparing macaroni.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain. Stir macaroni into beef mixture.

- Cook the ground beef and onion into a large skillet over medium heat until browned and crumbly, about 10 minutes. Break the meat apart as it cooks. Drain the excess grease.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Add the macaroni to the the beef and onion and place over medium-low heat; stir in the processed cheese until melted, about 3 minutes. Add the salsa, pinto beans, and corn to the mixture; stir and heat until the mixture bubbles slightly, another 5 minutes.

CROCK POT MEXICAN GOULASH

Steps:
- Spray crock pot with cooking spray.
- In a large bowl stir together the chili, beans, corn, and salsa until well mixed.
- Lay one tortilla flat on the bottom of the crock pot.
- Pour one-fifth of mixture on top.
- Continue layering the tortillas and the remaining four-fifths of the mixture until all the ingredients are used up.
- Cover and cook on low for 7hrs.
- Using a sharp knife cut through all the layers, making a checkerboard design on top. Each cut out should be about 1 inch apart. (The cut up tortillas will taste a lot like pasta when the recipe is finished).
- With a large spoon stir the entire dish to mix up the cut up tortilla pieces. Or scoop out of crock pot without stirring up for a more formed meal.
- Serve in bowls, sprinkled cheese, and top with sour cream if desired.

- 1.In a large nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, tomato sauce, corn, water, chili powder, oregano and salt. Bring to a boil. Add macaroni. Reduce heat; cover and simmer for 20-25 minutes or until macaroni is tender. Sprinkle with cheese; cover and cook 2-3 minutes longer or until cheese is melted.
MEXICAN GOULASH
My neighbor bought a cookbook for her son and I was flipping through it and saw this recipe. I told her it looked pretty good. The next thing I know she was calling me up and saying, "I have almost all the ingredients to make this but do you have this and this and this.....?" Well, I did and so we made it together and split it. She had to make a copy of the recipe for me so I could make it anytime I wanted. It is so good. Great for those cold, yucky days or nights. It looks like a lot of work but it is not, trust me.

- Brown ground beef. Reserve drippings in pan and transfer beef to a slow cooker.

- 2. Cook ground beef add taco seasoning add a little water.
- 3. Dump both cans of diced tomatoes and green chillies dice up check and add to diced tomatoes melt cheese. Once done add your cooked macaroni mix well then mix in your ground beef, mix well and your done. You can play with it and add things that fit your taste

- 1. Cook ground beef, drain. Add onion soup mix, diced tomatoes, celery, chopped olives, salsa. Heat through.
- 2. Add mixed vegetables, paprika, salt and pepper. Cook on low until heated through.
- 3. Cook macaroni in separate pot until done. Drain and add to ground beef mixture. Pour into oven safe casserole dish. Sprinkle shredded cheese on top.
- 4. Preheat oven to 350 degrees. Place casserole in oven and heat until cheese is melted and bubbly.

- Brown meat, drain, and set aside. Fix Spanish rice according to directions on box.
- Mix chili beans, cream of mushroom soup (DO NOT ADD MILK OR WATER), Ro*Tel tomatoes, rice, & meat together. Heat for 15 minutes or until hot.
- How to Eat: Place about a handful of chips in a bowl, using the back side of a spoon crush chips up by pressing on the chips about 3 times. Spoon rice mixture on top of chips. Top with shredded cheese. Enjoy.
