1 (15 ounce) can kidney beans, drained
1 (15 ounce) can cannellini beans, drained and rinsed
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (10 ounce) package frozen corn kernels
1 red onion, chopped
½ cup olive oil
½ cup red wine vinegar
2 tablespoons fresh lime juice
1 tablespoon lemon juice
2 tablespoons white sugar
1 tablespoon salt
1 clove crushed garlic
¼ cup chopped fresh cilantro
½ tablespoon ground cumin
½ tablespoon ground black pepper
1 dash hot pepper sauce
½ teaspoon chili powder

Steps:

  • In a large bowl, combine beans, bell peppers, frozen corn, and red onion.
  • In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper. Season to taste with hot sauce and chili powder.
  • Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.

2 cups cooked brown rice
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15.25 ounce) can whole kernel corn, drained
1 small onion, diced
1 green bell pepper, diced
2 jalapeno peppers, seeded and diced
1 lime, zested and juiced
¼ cup chopped cilantro leaves
1 teaspoon minced garlic
1 ½ teaspoons ground cumin
salt to taste

Steps:

  • In a large salad bowl, combine the brown rice, kidney beans, black beans, corn, onion, green pepper, jalapeno peppers, lime zest and juice, cilantro, garlic, and cumin. Lightly toss all ingredients to mix well, and sprinkle with salt to taste.

I got this recipe from my mother-in-law, who got it from a colleague. She knows how much I like light bean and corn salads, so she made it with me in mind, for a bridal shower we were throwing. She thought I would love it, and I did! :) I've got a couple other bean & corn salad recipes I enjoy, but this one is a bit different because of the rice and salsa. Good for you and tastes good, too. Prep time is mostly due to the time it takes to cook the rice.

1 (15 ounce) can kidney beans, rinsed and drained
1 3/4 cups frozen corn, thawed
1 cup green pepper, chopped
1 cup fresh grape tomatoes, halved
3 tablespoons onions, chopped
1 cup cooked brown rice, cooled
1/4 cup lemon juice
1 tablespoon olive oil
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 teaspoon cumin
1 cup mild salsa

Steps:

  • Combine the salad ingredients in a large bowl.
  • Mix the dressing ingredients in a small bowl or measuring cup.

1 (8 ounce) can low sodium tomato sauce
¼ cup water
1 (1 ounce) packet taco seasoning

The produce you use should be top quality for a superior result.

2 avocados , peeled and stoned
2 x 400g cans of beans, (we used pinto bean and kidney beans, rinsed and drained

250g punnet cherry tomato , halved
bottle bought good-quality dressing (we used English Provender Company Lime & Coriander dressing)
1 red chilli , deseeded and finely sliced

EASY SUMMER "MEXICAN" BUTTER BEAN SALAD



Easy Summer

This is a great, quick, fresh tasting salad with a Mexican "flair" that's easy to whip-up for cookouts or picnics or anytime you're grilling. I got it originally from gloryfoods.com, but have modified it slightly(mainly less oil, more cayenne). It's a terrifc way to use the cukes from your garden and your homegrown tomatoes could easily be used in place of the grape tomatoes. Cannellini beans, garbanzo beans or black-eyed peas can be substituted for the butter beans. Frozen vs canned is a matter of preference.

1/2 cup minced coriander leaves
1 tablespoon minced marjoram leaves

Steps:

  • Blanch the green beans in boiling salted water for 2 minutes. Rinse under cold running water until chilled. Drain. Slice the beans in half lengthwise. Set aside.

1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
1/2 lb green beans
salt
3 tablespoons olive oil
3 green onions, sliced
1 -2 jalapeno pepper, seeded and chopped
1 large garlic clove, sliced thin
1 cup cotija queso seco cheese, crumbled
1/4 cup fresh cilantro, chopped
1/3 cup fresh lime juice
1/4 cup sugar

Steps:

  • Cut the ends off the green beans and slice into pieces about an inch long. Fill a medium sized pot halfway with salted water. Bring to a boil and add the green beans to the pot and boil for 5 minute, or as long as it takes for the beans to get tender. Green beans can be highly variable in how long it takes to cook them to tenderness. More mature beans can take longer - up to 20 minutes.
  • Drain the green beans and put in the bowl with the pinto and black beans. Drizzle the olive oil over everything and toss to combine. Mix in the green onions, jalapeno, garlic and Cotija cheese.
  • In a separate bowl, mix the lime juice and sugar until the sugar dissolves - then add it to the salad. Coat the beans well and let marinate for at least 1 hour, preferably several hours. Right before you serve, toss in the cilantro. Add more salt to taste if needed.

3 cups cooked garbanzo beans (a.k.a. chickpeas) (about 2 cans)
1 red bell pepper
3 carrots
½ large jicima root (or any crunchy veg)
1 cup chopped spinach
½ cup cilantro
Dressing:
1 large, ripe mango
¼ cup freshly squeezed lime juice
2 large green onions, with tops
3 Tbsp. extra virgin olive oil
½ tsp. sea salt
½ chipotle pepper in adobo sauce (substitute ¼ tsp. ground chipotle or use your favorite chili spice)

Steps:

  • 1. Peel mango and place in a blender with all other dressing ingredients. Blend on high until uniform and creamy. It will look like a smoothie. Season to taste. 2. In a large bowl, pour dressing over garbanzo beans and let sit while you prepare the rest of the salad filling (at this point you will undoubtedly say, “Sarah, there’s way too much dressing.” Trust me.). 3. As you chop up the vegetables for the salad, add them as you go and stir to get an idea on how much more you need. Stop when the salad is well-dressed but not super gloppy. 4. Serve with sliced avocado and lime wedges on the side. Garnish with more cilantro, sprouts, pumpkin seeds, or whatever you have on hand.

Fantastic Mexican Corn and Bean Salad (Vegetarian) image

This recipe makes a large amount but don't worry when you taste this you won't be able to keep your spoon out of the bowl it is *that* delicious! Plan ahead this salad *must* chill for 24 hours before serving. Adjust the Tabasco and all seasonings to taste. This is perfect for a barbecue get together or to take to a potluck!

1 (15 ounce) can garbanzo beans (rinsed and drained, you can use 2 cans if desired)
1 (15 ounce) can red kidney beans (rinsed and drained)
1 (15 ounce) can black beans (rinsed and drained)
1 green bell pepper, seeded and chopped
1 small jalapeno pepper (seeded and finely chopped) (optional)
1 (15 ounce) can corn niblets, drained (can use two cans)
1 red onion, sliced
2 cups grape tomatoes (or to taste, added in just before serving)
1/2 cup vegetable oil (or use Canola oil)
1/2 cup red wine vinegar
2 tablespoons fresh lime juice
3 tablespoons white sugar
1/2 teaspoon garlic powder (or to taste or use 1 teaspoon fresh minced garlic)
1 teaspoon cumin
2 teaspoons chili powder
1/4 cup finely chopped cilantro
2 teaspoons seasoning salt (or to taste, or use 1 teaspoon white salt or to taste)
1/2 teaspoon black pepper (or to taste)
Tabasco sauce (to taste, or use cayenne pepper to taste)

Steps:

  • In a bowl whisk together, oil, vinegar, lime juice, sugar, garlic, cumin, chili powder, cilantro, seasoned salt and black pepper until well combined.
  • Add in Tabasco or hot sauce to taste.
  • In a large glass bowl toss together all the beans, bell pepper, jalapeno pepper, corn and sliced red onions.
  • Pour the dressing over the bean mixture; toss to coat the season with white salt and more black pepper if needed.
  • Cover and chill 24 hours mixing once or twice during chilling time.
  • Just before serving mix in the grape tomatoes.
