3 large egg whites
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar
3/4 cup sugar
Fresh fruit such as sliced fresh strawberries, fresh raspberries, mandarin oranges or cubed fresh pineapple
Whipped cream and fresh mint leaves, optional

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Beat the egg whites, vanilla and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. , Drop meringue into 8 mounds on a parchment-lined baking sheet. Shape into 3-in. cups with the back of a spoon. Or place meringue mixture in pastry bag fitted with star tip. Pipe meringue onto parchment to form eight 3-in. cups., Bake at 275° for 45-50 minutes or until set and dry. Turn off oven and do not open door; leave meringues in oven for 1 hour. Fill with fruit. If desired, top with whipped cream and mint.

4 large egg whites, at room temperature
1/2 teaspoon cream of tartar
1/4 teaspoon salt
2 1/4 cups confectioners' sugar
8 ounces marscarpone
1/4 cup confectioners' sugar
1 cup cold heavy cream
Sugar pearls or sprinkles, for topping

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 250 degrees F. Line 2 baking sheets with parchment paper.
  • Beat the egg whites, cream of tartar and salt in a large clean dry bowl with a mixer on medium speed until foamy. Increase the speed to medium high and beat until thick and opaque, about 1 more minute. Gradually add the confectioners' sugar, about 1/4 cup at a time, and beat until stiff shiny peaks form, about 5 more minutes.
  • Transfer the meringue to a pastry bag fitted with a large round tip. Pipe eight 3-inch disks on the baking sheets, then pipe around the edge of the disks to create 2-inch-high sides. Bake at 250 degrees F until dry and crisp, about 3 hours. Let cool completely on the baking sheets. Store in an airtight container in a dry place for up to 1 week.
  • For the filling, whisk the mascarpone with the confectioners' sugar, then whisk in the heavy cream until soft peaks form. Spoon into the meringue nests; top with sugar pearls.

These strawberry shortcake meringue nests make a perfect sweet ending to a summer gathering. They take a bit of time to bake but are well worth the wait. The strawberry sauce comes together in a snap, and you can use store-bought pound cake and whipped cream to save time.

1 cup sugar, divided
4 large egg whites, room temperature
1 pinch kosher salt
½ teaspoon vanilla extract
2 cups strawberry, hulled and thinly sliced, plus 2 cups (300 G), hulled and quartered, divided
1 ½ teaspoons lemon juice
2 cups whipped cream, lightly sweetened
1 cup pound cake, cubed (1/2 in (1 1/4 cm) cubes)

Steps:

  • Preheat the oven to 200°F (93°C). Line a baking sheet with parchment paper.
  • Spread ¾ cup (150 G) of sugar on the baking sheet, then bake for 7 minutes to warm. Remove the sugar from the oven and leave the oven on.
  • In a large clean, dry bowl, beat the egg whites with an electric hand mixer on low speed until foamy, then add the salt. While beating, add the warm sugar 1 tablespoon at a time, gradually increasing the mixer speed, until thick and shiny peaks form, 5-7 minutes. Add the vanilla and fold in until just incorporated.
  • Line 2 baking sheets with parchment paper.
  • Heap 10 equal scoops of meringue onto the baking sheets, spacing at least 1 inch (2 ½ cm) apart. Use the back of a spoon to create a divot in the center of each mound.
  • Bake for about 90 minutes, until the meringues lift cleanly off the parchment. Once done, turn off the oven and let the meringues cool in the oven for 2 hours, up to overnight. When removed from the oven, the meringues should sound hollow when tapped.
  • Meanwhile, make the strawberry puree: In a small saucepan, combine the thinly sliced strawberries, ¼ cup (50 G) sugar, and the lemon juice and let sit for 10 minutes to macerate, until some of the juices have released.
  • Transfer the pan to the stove and cook over medium heat for 10 minutes, until the strawberries have slightly softened but are still vibrant red. Remove from heat and push through a fine-mesh sieve to remove any seeds. Let cool. Store in the refrigerator until ready to use.
  • To serve, heap ¼ cup (60 ml) whipped cream onto each meringue nest. Top with 1 heaping tablespoon pound cake cubes and 2 tablespoons quartered strawberries. Drizzle each with 2 tablespoons strawberry puree.

4 large egg whites (about 1/2 cup, 125 ml), at room temperature
Pinch of salt
1/2 cup (100 g) granulated sugar
1/4 teaspoon vanilla extract
1/4 cup (35 g) confectioners' sugar

Steps:

  • Preheat the oven to 200°F (100°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.
  • In the bowl of an electric stand mixer, begin whipping the egg whites with the salt at medium speed until frothy.
  • Increase the speed of the mixer to medium-high and whip until the egg whites thicken and begin to hold their shape. Continue whipping the whites while adding the granulated sugar, 1 tablespoon at a time. Once the sugar's been added, add the vanilla and continue to whip for 2 minutes, until stiff and glossy.
  • Remove the mixer bowl from the stand and sift the confectioners' sugar over the meringue while simultaneously folding it in.
  • Divide the meringue into 8 portions, evenly spaced, on the baking sheet. (They'll all fit if you arrange 3 down each side lengthwise and 2 in the center.)
  • Take a spoon, dip it in water, tap off the excess, and make a hollow in the center of each meringue, like mashed potatoes in preparation for gravy.
  • Bake the meringues for 1 hour. Turn the oven off and continue to let the meringues dry out in the oven for 1 hour more.
  • The meringues are done when they feel dry and lift easily off the parchment paper or silicone baking mat.
  • Variations
  • Meringue nests lend themselves to many variations. Here are some of my favorites. Simply fold the additional ingredients into the meringue after adding in the confectioners' sugar.
  • Cinnamon: 1 tablespoon ground cinnamon
  • Coconut: 1/2 cup (40 g) dried shredded coconut, toasted
  • Cocoa Nib: 6 tablespoons (60 g) cocoa nibs
  • Coffee: 1 tablespoon best-quality instant coffee (crush the crystals into a fine powder with the back of a spoon first) or espresso powder
  • Chocolate: 3 tablespoons (21 g) unsweetened Dutch-process cocoa powder
  • Chocolate Chip: 1/2 cup (80 g) semisweet or bittersweet chocolate chips (regular or mini)
  • Chocolate-Chocolate Chip: 3 tablespoons (21 g) unsweetened Dutch-process cocoa powder and 1/3 cup (60 g) semisweet or bittersweet chocolate chips (regular or mini)
  • Green Tea and Black Sesame: 1 1/2 teaspoons matcha (green tea powder) and 2 tablespoons black sesame seeds
  • For Almond Meringue Nests: Replace the vanilla with 1/4 teaspoon almond extract, and press 2 tablespoons sliced almonds into the top of each meringue before baking.
  • Storage
  • Once cool, store the meringues in an absolutely airtight container until ready to serve. They can be made 1 week in advance.

1/4 teaspoon cream of tartar
1/2 cup sugar
2 pounds strawberries (to yield about 6 cups)
1/2 cup sugar

Steps:

  • Preheat oven to 200 degrees with rack in lower third. Coat two baking sheets with nonstick cooking spray; line with parchment paper.
  • With an electric mixer, beat egg whites with salt and cream of tartar until soft peaks form. Very gradually beat in sugar, adding 1 tablespoon at a time; beat until stiff and glossy.
  • Drop 8 mounds of meringue onto prepared baking sheets; twirl a teaspoon in the center of each to spread to a diameter of 4 inches and create a nest. Bake until dry but still white, about 1 1/2 hours, rotating baking sheets halfway through; let cool on sheets.
  • Use a small paring knife to hull and quarter strawberries. In a bowl, toss strawberries with sugar; let stand, at least 30 minutes. Spoon into nests.

candy eggs (jelly beans, chocolate, egg shaped malted milk balls) or a hand decorated egg

Steps:

  • 1. Preheat the oven to 250 degrees. Line two baking sheets with parchment paper (available at most grocery stores). In a mixing bowl, whip together the egg whites, cream of tartar and salt until soft peaks form.
  • 2. Then, slowly add the sugar, beating constantly until the mixture is glossy and stiff (another minute or so). Beat in the vanilla extract until just combined.
  • 3. Now you're ready to make the meringue nests. Spoon three mounds of the mixture onto each baking sheet. Use the bowl of the spoon to shape each mound into a 4-inch-wide circle with a 2-inch-deep depression in the center. Give your nests a lived-in look by sprinkling shredded coconut over each one.
  • 4. Bake for 1 hour and 15 minutes, or until the meringues are dry and the coconut has turned golden brown. Once cool, tuck one malted candy egg or jelly bean into the nest for each child in the family. Makes 6 nests.

No, these aren't sunny-side-up eggs! They're light-as-air meringues filled with homemade lemon curd and sprinkled with poppy seeds -- they make a show-stopping Easter dessert.

1/2 teaspoon fresh lemon juice
1/4 teaspoon pure vanilla extract
1/2 cup superfine sugar
1 tablespoon cornstarch
1 teaspoon grated lemon zest
Lemon Curd for Meringue Nests
Poppy seeds, for sprinkling

Steps:

  • Preheat oven to 200 degrees. Draw eight 3-inch egg shapes on a piece of parchment. Place on a baking sheet, marked-side down.
  • Beat egg whites, lemon juice, and vanilla on medium-low until soft peaks form, about 4 minutes. Reduce speed to low and gradually add sugar. Increase speed to high and beat until stiff, glossy peaks form, about 3 minutes. Sift cornstarch over bowl and fold into whites with lemon zest.
  • Fit a pastry bag with a large fluted tip (such as Ateco #825) and fill bag with meringue. Secure corners of parchment to baking sheet with dabs of meringue. Pipe a border of meringue along the inside of an egg shape, then add an extra layer around perimeter to form a 1-inch collar. Pipe a dab of meringue in the center and smooth with the back of a spoon to create an indentation. Repeat with remaining egg shapes.
  • Bake 1 hour. Reduce heat to 175 degrees and bake until meringue has dried and is firm enough to pull off the baking sheet, 3 to 4 1/2 hours. Let cool completely before filling with curd and sprinkling with poppy seeds.

I've recently tried several meringue recipes (Pavlova) and really enjoy making them, I love the taste and the impressive presentation. So with summer berries to soon be in season I really want to save this one to try. Bet the grapefruit will add a unique taste. Prep times does not include drying time for the nests

1/8 teaspoon cream of tartar
1/2 cup sugar
1 teaspoon grapefruit peel, Ruby Red freshly grated
4 ounces blueberries
4 ounces raspberries
2 lbs strawberries, hulled and cut in half
1/4 cup sugar
1/4 cup grapefruit juice, fresh, ruby red

Steps:

  • PREPARE MERINGUE NESTS:
  • Preheat oven to 200°F.
  • Line large cookie sheet with parchment paper or silicone baking mat.
  • In large bowl, with mixer on high speed, beat egg whites and cream of tartar until soft peaks from.
  • Sprinkle in sugar 2 tablespoons at a time, beating until sugar dissovles and meringue stands in stiff, glossy peaks when beaters are lifted.
  • With large rubber spatula, gently fold grapefruit peel into meringue until well combined.
  • Divide mixture into 8 even mounds (heaping 1/4 cup measuring cup) on prepared sheet, spacing about 2 inches apart.
  • Pressing back of spoon into center of each meringue, form mounds into 3 inch round nests.
  • Bake 2 hours or until firm.
  • Turn off oven; leave meringues in oven 1 hour or overnight to dry.
  • When dry, carefully remove from parchment.
  • Meringues can be stored in tightly sealed container at room temp up to 2 weeks.
  • PREPARE BERRIES:.
  • In large bowl, combine blueberries, raspberries, and half of strawberries.
  • In 12 inch skillet, combine sugar and grapefruit juice.
  • Heat to boiling on medium, stirring occasionally.
  • Boil 2 minutes or until sugar dissolves and mixture is clear pink.
  • Add the first half of strawberries and cook 1-3 minutes or until berries release their juices and have softened slightly.
  • Pour mixture over un-cooked berries in large bowl.
  • Stir gently until well combined.
  • Place meringue nexts on serving plates.
  • Divid berries among nests and drizzle grapefruit syrup all around.
  • Serve immediately.

CARDAMOM MERINGUE NESTS

6 egg whites
350g caster sugar
2 tsp cardamom powder
1 tsp cocoa

Steps:

  • Heat oven to 150C/130C fan/gas 2 and line 2 baking trays with baking parchment. Put egg whites in a clean bowl and beat with an electric whisk until they resemble stiff peaks. While whisking, add the sugar, 1 tbsp at a time - meringue will thicken and become glossy. Fold in cardamom.
  • Using a metal spoon, dollop small spoonfuls of meringue, evenly spaced, onto the baking sheets, to make around 48 mini meringues. With the back of the spoon, lightly flatten and hollow out the centres. Sieve a dusting of cocoa over them and bake for 1 hr until crisp. Turn off the oven and leave meringues in the oven to cool. Pile high on a plate and serve with flavoured creams (see tips below).

Use this rich curd to fill the center of our festive Egg-Shaped Meringue Nests.

Number Of Ingredients 4

2 large eggs plus 4 large egg yolks
3/4 cup sugar
1 tablespoon grated lemon zest, plus 1/2 cup fresh lemon juice (from 2 to 3 lemons)
4 tablespoons unsalted butter

Steps:

  • Whisk together eggs and yolks, then combine with sugar and lemon juice in a small heavy-bottomed saucepan. Cook over low heat, stirring constantly, until mixture coats back of a spoon, 12 to 14 minutes. Strain into a small bowl. Add butter a little at a time, stirring until smooth. Stir in lemon zest. Press parchment or plastic wrap directly on surface of curd to prevent skin from forming. Let cool completely in refrigerator before using, at least 2 hours and up to 2 days.
