½ (16 ounce) package uncooked orzo pasta
½ pint cherry tomatoes, halved
½ cup diced red onion
1 cup diced cucumber
1 cup pitted Mediterranean olives, cut in half
1 cup finely diced Asiago cheese
1 ½ teaspoons minced fresh garlic
½ cup extra-virgin olive oil
½ cup red wine vinegar
½ lemon, juiced
1 teaspoon salt
½ teaspoon ground black pepper
¼ cup chopped fresh basil
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, about 9 minutes. Drain well. Rinse with cold water and drain well again.
  • Combine orzo, cherry tomatoes, red onion, cucumber, olives, and Asiago cheese in a large bowl.
  • Whisk garlic, olive oil, red wine vinegar, lemon juice, salt, and pepper together in a small bowl to make the vinaigrette. Drizzle over the orzo mixture and toss lightly to combine. Add basil and parsley and mix well. Let sit for 20 minutes for flavors to blend, stirring occasionally.

DH and I really enjoyed this flavorful orzo salad from my Stonewall Kitchen "Harvest" cookbook. I served it as a side to Bobby Flay's Recipe #426408 426408, for a nice meatless meal. DH and I agreed that we could see this really being a hit at summer BBQs. Interestingly, while the zip of the vinegar was really nice and pronounced when I served it shortly after making, the flavor was less intense when I had some for leftovers the next day, so I would plan on eating this salad the same day to get the most flavor from it. We didn't make with the edible flowers. We chilled for about 30-40 minutes before serving. Prep time includes chill time in the fridge--I read the directions below to mean chill for 30 minutes before serving it, but maybe I was reading it wrong? Either way it was good!.

2 medium eggplant, cut into 8 steaks lengthwise, 1-inch thick
Extra-virgin olive oil, for grilling eggplant, plus 5 tablespoons, divided

2 (10-ounce) boxes frozen spinach, defrosted
2 roasted red peppers, pat dry and chopped
2 or 3 cloves garlic, grated
1 (16-ounce) tub hummus (recommended: Tribe of Two Sheiks 40 Spice)
Handful pitted olives, chopped
2 cups bread crumbs
1 cup toasted and coarsely chopped walnuts
Handful fresh flat-leaf parsley
1 pint grape or cherry tomatoes
1 cup feta cheese crumbles
2 to 3 stems fresh oregano, leaves stripped from stems and finely chopped
1 lemon, zested and juiced

Steps:

  • Heat grill pan to medium-high. Heat oven to 400 degrees F.
  • Place a pot of water on stove to boil for pasta. Salt water and cook orzo to al dente.
  • Brush the eggplant steaks lightly with extra-virgin olive oil and season liberally on both sides with salt and pepper. Grill 3 to 4 minutes for small eggplant and 4 to 6 minutes for large eggplant, turning occasionally, until the steaks begin to become tender but are not fully cooked.
  • While eggplant cooks, defrost spinach in microwave on defrost setting, 7 to 8 minutes. Heat 1 tablespoon extra-virgin olive oil in a skillet and add roasted peppers and garlic. Squeeze the spinach dry and separate as you add it to the skillet. Season the spinach with salt and pepper and heat through. Stir in olives and remove from heat. Place the eggplants on baking sheets. Top each steak with a few forkfuls of spinach mixture. Spread a few rounded spoonfuls of hummus evenly across the steaks on top of the spinach, covering it completely in a thin layer. Toss the bread crumbs with 2 tablespoons extra-virgin olive oil and parsley. Divide the bread crumbs and scatter them over the steaks on top of the hummus. Bake to brown bread crumbs, 5 minutes or so.
  • Toast walnuts while you cut up the tomatoes and place in a bowl. Cool nuts slightly, chop and add to tomatoes. Add the zest and juice of a lemon, 2 tablespoons extra-virgin olive oil, feta and oregano. Drain pasta, toss with tomato mixture and season with salt and pepper to taste.
  • Serve 2 steaks per person with orzo alongside.

9-10 tblsp. freshly squeezed lemon juice (divided use)
freshly grated zest from one lemon
½ cup extra virgin olive oil
1 cup green onions (scallions), white and green parts, sliced
2 cups cherry tomatoes, halved
½ cup Kalamata olives, pitted and quartered
1½ cups crumbled feta cheese
½ cup pine nuts, toasted
¼ cup fresh basil, coarsely chopped
½ tsp. salt
¼ tsp. freshly ground black pepper

Steps:

  • Cook orzo in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain well in colander - do not rinse. While pasta is cooking, remove zest from lemon with micro-plane being careful not to grate any of the bitter white pith, set aside. Juice lemons. In a large bowl, whisk together 6 tablespoons of the lemon juice and the olive oil. Add HOT, drained orzo to lemon juice/olive oil mixture, mix well. Add salt & freshly ground black pepper. Set aside until cooled to room temperature, stirring often. Meanwhile, toast pine nuts in a dry skillet over low heat until uniformly browned, empty onto a plate or cutting board to cool. Slice green onions, halve cherry tomatoes, pit and quarter olives, crumble feta cheese, and chop basil. 1 lb orzo pasta
1/4 cup lemon juice
1/4 cup extra virgin olive oil
1 lb tomatoes, diced
1 seedless cucumber, quartered lengthwise and cut into 1/2-inch pieces
1/3 cup pitted kalamata olive, coarsely chopped
8 ounces feta cheese, crumbled
salt, to taste
black pepper, to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Prepare the pasta according to package instructions.
  • In a colander, drain the cooked pasta, then rinse with cold water and drain well. Set aside.
  • Meanwhile, in a small bowl, whisk together the lemon juice and olive oil. Set aside.
  • In a large bowl, combine the tomatoes, cucumber, olives, feta cheese and the reserved pasta. Add the dressing and toss well to coat. Season with salt and pepper.

1 cup orzo pasta
1 cup diced red bell pepper
1/2 cup crumbled feta cheese
1 (2 1/4 ounce) can sliced ripe olives, rinsed and drained
1/4 cup chopped fresh basil or 1/2 teaspoon dried basil
fresh basil leaves (optional) or parsley sprig, for garnish (optional)
1 (1 ounce) packet hidden valley ranch dressing mix
3 tablespoons olive oil
3 tablespoons red wine vinegar
1 teaspoon sugar

Steps:

  • Cook orzo according to package directions, omitting salt. Rinse with cold water and drain well.
  • Mix orzo, bell pepper, cheese, olives and chopped fresh basil in a large bowl. (If using dried basil, add to dressing.).
  • Whisk together salad dressing & seasoning mix, oil, vinegar and sugar.
  • Stir dressing into orzo mixture.
  • Cover and refrigerate at least 2 hours.
  • Garnish with basil leaves before serving, if desired.

8 oz orzo
1 large garlic clove, minced
4 Tbsp capers
4-6 anchovies, minced(optional)
1/2 c kalamata olives, sliced
2 Tbsp fresh basil, chopped
1 Tbsp fresh rosemary, chopped
1/2 pint cherry tomatoes, halved
zest from 1 lemon
1 large bell pepper, diced
2 Tbsp lemon juice
2 Tbsp olive oil
fine sea salt
freshly ground pepper

Steps:

  • Cook orzo in boiling water until al dente (about 8 minutes). Drain and place in large bowl. Add garlic, capers, olives and anchovies (if using) to orzo and stir to distribute evenly. Follow by adding in chopped herbs and lemon zest and stir to combine. Add bell pepper and tomatoes and gently stir everything together. In a small bowl, combine the lemon juice and olive oil and whisk together. Pour over orzo, season with salt and pepper and stir everything together. Serve chilled or at room temperature.
