Mediterranean-Style Baked Grouper with Tomatoes and Olives image

Easy baked grouper recipe, prepared Mediterranean-style with a few spices and bold fresh flavors, including garlic, lemon juice, tomatoes and olives. 1 1/2 lb grouper fillet (or a similar fish)
kosher salt
1 tbsp dry oregano
1 to 1 1/2 tsp ground cumin
1 tsp sweet paprika
1/2 tsp black pepper
4 large garlic cloves, minced
Juice of 1 large lemon, more for later
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
6 to 8 oz cherry tomatoes, halved
6 to 8 pitted kalamata olives, sliced
Chopped fresh dill (about 1/4 oz or so)

Steps:

  • Heat oven to 400 degrees F.
  • Pat the fish dry and season with salt on both sides. In a small bowl, combine the spices (cumin, oregano, paprika, and black pepper), and season the fish with the spice mixture on both sides.
  • Place seasoned fish in a lightly-oiled baking dish. Add minced garlic on top, then add lemon juice and a generous drizzle of extra virgin olive oil (I used Early Harvest Greek EVOO). Arrange cherry tomatoes and olives on top of the fish fillets.
  • Bake in heated oven for 12 to 13 minutes, or until the fish is opaque and easily flakes with a fork.
  • Remove from heat and add fresh dill (or your favorite herb). Enjoy!

1 ¼ pounds fresh grouper fillets (about one-inch thick, cut into four individual serving size pieces)
1 lemon (zested and juiced)
¾ cup large green olives (rinsed, pitted, and coarsely chopped)
2 tablespoons capers (drained and rinsed)
4 tablespoons extra virgin olive oil
½ cup Italian parsley leaves (loosely packed and coarsely chopped)
1 teaspoon kosher salt
½ teaspoon ground black pepper

Steps:

  • In a small saucepan over low heat, combine the lemon zest and juice, olives, capers, and three tablespoons of olive oil. Stir to combine, and keep warm. Do not bring to a boil. Do not boil.
  • Pat the fillets dry with a paper towel and season with salt and pepper.
  • Add the remaining tablespoon of olive oil to a large nonstick skillet over medium-high heat. When the pan is hot, place the fillets top-side down in the pan and cook three minutes on each side for a total of six minutes. This is for a one-inch-thick fillet. If your fillets are thicker or thinner, they may take more or less time.
  • Using a slotted spatula, transfer the fish to a platter and cover loosely with aluminum foil to rest for about 5 minutes.
  • To serve, top the fish fillets with the olive mixture. Garnish with parsley and serve immediately.

Broiled grouper fillets are livened up with creamy lemon-basil sauce. It will have your family asking for seconds.

4 grouper fillets (or other firm white fish)
1 teaspoon sea salt
1 teaspoon freshly cracked black pepper
1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
2 cloves garlic, grated
1/2 teaspoon freshly cracked black pepper
1/2 cup dry white wine
3 tablespoons freshly squeezed lemon juice
1/4 cup heavy cream
3 tablespoons chopped fresh basil

Steps:

  • Set oven control to broil. Spray cookie sheet with cooking spray. Place fish fillets on cookie sheet. Sprinkle both sides of fillets evenly with salt and 1 teaspoon of the pepper.
  • Broil about 10 to 15 minutes until fish flakes easily with fork.
  • Meanwhile, in large skillet, melt butter over low heat. Add garlic and remaining 1/2 teaspoon pepper. Cook and stir until garlic is fragrant. Add wine; heat to boiling over medium-low heat. Boil until sauce is reduced by half. Stir in whipping cream and basil. Simmer until thickened.
  • To serve, place broiled grouper on individual plates. Top with cream sauce.
