MEDALLIONS OF LAMB WITH LEEKS AND TARRAGON SAUCE



Medallions of Lamb With Leeks and Tarragon Sauce image

Number Of Ingredients 12

2 boneless, skinless loins of lamb, about 1 1/2 pounds trimmed weight
Salt to taste if desired
Freshly ground pepper to taste
1 or 2 leeks, about 3/4 pound
3 tablespoons butter
3/4 cup fresh or canned chicken broth
3 tablespoons heavy cream
2 tablespoons olive oil
3 tablespoons finely chopped shallots
3 tablespoons dry white wine
1 teaspoon tomato paste
1 tablespoon finely chopped fresh tarragon, or 1/2 tablespoon dried tarragon

Steps:

  • If any fat remains on the loin of lamb pieces after they are trimmed, carefully cut it away. Place each loin of lamb on a flat surface and cut crosswise into four pieces of equal size. This will yield eight pieces.
  • Place each piece upright (grain side up) and pound lightly with a flat mallet. The flattened pieces will measure about half an inch thick. Sprinkle with salt and pepper.
  • Trim off stems of the leeks. Cut leeks crosswise into 1 1/2-inch pieces. Cut each piece lengthwise into very thin shreds (julienne). Put leeks in a saucepan and add 2 tablespoons of the butter, salt and pepper.
  • Cook leeks over moderate heat, stirring occasionally, about one minute. Add 1/4 cup of the chicken broth and cover. Continue cooking about 10 minutes. Add cream and cook, uncovered, about three minutes.
  • Meanwhile, heat olive oil in a heavy skillet and add medallions of lamb. Cook about two minutes over relatively high heat until browned. Turn pieces and continue cooking about four to five minutes to the desired degree of doneness. Transfer pieces to a warm platter.
  • Pour off fat from the skillet and wipe skillet with paper towels. Add remaining tablespoon of butter to the skillet. When it is hot add shallots and cook briefly, stirring. Add wine, chicken broth and tomato paste. Stir. Add any liquid that may have accumulated from the lamb pieces. Cook the sauce, stirring, until it is reduced to one-half cup. Stir in tarragon.
  • Spoon sauce over meat. Serve with leeks in cream sauce on the side.

Full title (doesn't fit above): Roasted Lamb Medallions with Maitake Mushrooms, Braised Pistachios and Blackberry- Recipe by Stephanie Izard, (Top Chef Season 4) I wanted so much to be able to taste this dish. The judges described the braised pistachios as somewhat of a revelation. Now I can have this at home, but will save this for something special.

1 rack of lamb, removed from bones (reserve bones)
2 tablespoons yellow miso
thyme
1/2 onion, diced
3 garlic cloves
1/2 cup red wine
2 cups chicken stock
1 pint blackberry
1 cup white balsamic vinegar
1/4 cup sugar
1/2 cup shelled pistachios
salt
1/4 lb maitake mushroom
2 teaspoons olive oil
1 teaspoon butter
pepper
1/4 cup manzanilla olives, minced
1 shallot, minced

Steps:

  • Clean silverskin from lamb and rub with miso and thyme. Refrigerate overnight. Brown bones in the oven. Meanwhile in saucepot, brown onions and garlic. Deglaze with red wine and let reduce. Add in 1 1/2 cups chicken stock and 1/2 pint blackberries; let simmer. Add in browned bones and reduce until slightly thickened. Season and strain.
  • Place remaining blackberries in nonreactive pot with white balsamic and sugar. Reduce to thicken and strain.
  • Place pistachios in remaining chicken stock; season with salt and simmer until nuts are softened.
  • Break maitakes into bite sized chunks. When time to serve, saute mushrooms in one teaspoons olive oil and butter with salt and pepper.
  • Wipe miso off of lamb, season and brown all sides. Place in oven for a few minutes then let rest. Mix together olives, shallot and remaining olive oil.
  • To Serve, place mushrooms on plate. Top with sliced lamb and spoon of tapenade. Place a few pistachios on each plate. Pour spoonful of sauce on top and drizzle with blackberry gastrique.

2 whole skinless, totally lean fillets of lamb or lamb tenderloins, about 1 pound total weight
Salt to taste if desired
Freshly ground pepper to taste
1 egg
1 tablespoon water
2 tablespoons flour
1 cup fine fresh bread crumbs
1/4 cup finely grated Gruyere or Parmesan cheese
2 tablespoons corn, peanut or vegetable oil, approximately
2 tablespoons butter
1 tablespoon finely chopped fresh tarragon

Steps:

  • Cut each lamb fillet crosswise into 4 equal portions.
  • Place the pieces, one at a time and cut side down, on a sheet of plastic wrap or wax paper. Cover with another sheet of plastic wrap or wax paper. Pound lightly to flatten each piece.
  • Sprinkle the pieces on both sides with salt and pepper.
  • Beat the egg with the water and pour the mixture into a flat dish with raised edges.
  • Dip the pieces of meat in flour on both sides. Shake off excess.
  • Dip the pieces in the egg mixture, coating them well. Combine the bread crumbs and cheese and dip the pieces in the mixture to coat on both sides. Pat lightly to make the crumbs adhere.
  • Heat 2 tablespoons oil in a nonstick skillet and add as many pieces as the skillet will hold. This may have to be done in two steps, depending on the size of the pieces. Cook two minutes on one side and turn. Turn and cook two minutes on the second side. Continue cooking, adding a little more oil as necessary until all the pieces are cooked. Transfer the pieces to a serving dish as they are cooked.
  • Pour off the fat from the skillet. Wipe out the skillet and add the butter. Heat the butter until melted and add the tarragon. Cook about 4 seconds, shaking the skillet. Pour the tarragon butter over the meat and serve.

1/4 cup creme fraiche or 1/4 cup whipping cream
1/4 cup Dijon mustard
2 tablespoons fresh tarragon, minced
2 3/4 lbs pork tenderloin
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1 tablespoon canola oil
1/2 cup white wine

Steps:

  • Preheat oven to 400F.
  • In small bowl, stir together creme fraiche, mustard and tarragon.
  • Sprinkle pork tenderloins with salt and pepper.
  • Heat large skillet over medium hig heat until hot.
  • Add oil; heat until hot.
  • Cook pork 4-6 minutes or until browned, turning once.
  • Place pork in shallow roasting pan.
  • Place same skillet over high heat.
  • Add wine; bring to a boil, scraping up browned bits from bottom of skillet.
  • Pour wine mixture around pork in roasting pan.
  • Brush pork with 2 Tbs of the mustard mixture.
  • Bake 15-25 minutes or until internal tem reaches 145 Deg.
  • Place on serving platter, cover loosely with foil Place roasting pan over low heat.
  • Whisk remaining mustard mixture into pan juices.
  • Slice tenderloin into medallions; pour sauce over pork.

1 1/3 lbs lamb medallions or 1 1/3 lbs lamb steaks, visible fat trimmed
1/4 cup rosemary, chopped
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon fresh ground black pepper
2 teaspoons cayenne pepper
2 tablespoons extra virgin olive oil
2 tablespoons butter
1 cup chicken stock

Steps:

  • Place lamb in a bowl. Mix all other ingredients together except salt, olive oil, stock and butter. Massage the lamb and marinate at room temperature for 15-30 minutes.
  • Heat pan over medium high heat. Add olive oil and butter. When it just starts to smoke a little, sear lamb for 3 to 4 minutes on each side for medium doneness. Baste continuously with pan oil and butter when searing. Set lamb aside and drain oil.

8 lamb medallions
10 freshly minced garlic cloves, divided
2 teaspoons hickory bacon salt
1/4 cup olive oil
1 cup seasoned bread crumbs
1/8 cup grated Pecorino Romano
1 teaspoon bacon salt
2 cups chopped crimini mushrooms

Steps:

  • Preheat the oven to 450 degrees F.
  • Put the lamb in a bowl and add 7 cloves of the minced garlic, 2 tablespoons of hickory bacon salt, and 1/8 cup of olive oil. Mix to coat the lamb with the mixture and refrigerate for 1 hour
  • In a separate bowl, mix together the grated cheese and bread crumbs.
  • Put a saute pan on the stove over medium-high heat and add 1/8 cup of olive oil, 1 teaspoon of bacon salt, and mushrooms. Cook for 8 to 12 minutes and then add in the remaining 3 cloves of minced garlic.
  • Put medallions on a lightly greased sheet pan and put into the oven for 15 minutes. Take the sheet pan out of the oven and arrange the medallions close together. Top them with cheese and bread crumbs, then put them under the broiler until golden brown, about 2 to 4 minutes, total. Watch carefully so as not to burn the topping. Cook's Note: Be mindful that some broilers cook faster than others. Take the lamb out of the broiler and put top with the mushrooms before serving.
