We're getting close to the Super Bowl, and it's not about who wins the trophy, but rather who wins the snack table. If you show up with these super fun sliders, that will be you. The real secret to these beauties is placing the meatball in through the top of the roll, versus splitting and stuffing in the traditional manner. Maybe it's the symmetry, or center of gravity, that makes these just feel right in your hand. If you're short on time, using pre-made meatballs will do.

2 tablespoons olive oil, divided
1 yellow onion, diced
5 cloves garlic, minced, divided
1 pound ground beef
2 tablespoons chopped Italian parsley, plus more for garnish
1 large egg
ΒΌ cup plain bread crumbs
1 cup shredded fontina cheese, divided
2 teaspoons kosher salt
freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
3 tablespoons unsalted butter
18 dinner rolls
2 cups spicy tomato sauce
2 tablespoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat 1 tablespoon olive oil in a saucepan over medium heat. Add onion and 2 cloves garlic; cook and stir until onion is soft, about 5 minutes.
  • Place beef in a large bowl. Add onion-garlic mixture, parsley, egg, bread crumbs, and 1 large handful of fontina cheese, reserving the rest for topping. Season with salt, pepper, and cayenne. Mix by hand until just combined. Scoop meat mixture into 24 mini muffin cups; meatballs need not be perfectly round.
  • Bake in the preheated oven until no longer pink in the centers, about 12 minutes. Leave oven on. Let meatballs cool briefly while you make the garlic butter.
  • Melt butter in a saucepan over medium heat. Add remaining minced garlic once butter starts to bubble; stir, then immediately remove from heat. Stir well and set aside.
  • Line a rimmed baking sheet with foil; coat foil with remaining olive oil. Transfer rolls, still attached, to the baking sheet. Cut a hole in the top of each roll, about 2/3 of the way down. Brush garlic butter over the insides and outsides of the rolls.
  • Bake until golden brown, about 8 minutes. Pour about 1 tablespoon tomato sauce into each hole. Stuff meatballs into the holes. Top each roll with a spoonful of tomato sauce and remaining fontina cheese. Sprinkle Parmesan cheese on top.
  • Continue baking until cheese is melted, 12 to 15 minutes. Garnish with more parsley. Let rolls sit for 5 to 10 minutes to firm up; transfer to a serving platter.

You know how some dishes are so good you just can't stop until every drop is gone, well this is one of those. Deliciously seasoned and so hearty, it satisfies with every bite!

2 lb hamburger
1 c panko bread crumbs
1/2 c ketchup
2 Tbsp aged balsamic vinegar
1/3 c shallots minced
1 1/2 Tbsp garlic powder
1 1/2 Tbsp onion powder
1 1/2 tsp salt
1 tsp pepper
2 eggs
1/2 c whole milk
2/3 c parmesan cheese

Steps:

  • 1. Preheat oven to 400 degrees. Spray a sheet pan with a cooking non-stick spray. Set aside.
  • 2. In a large bowl combine hamburger, ketchup, panko crumbs, parmesan cheese, minced shallats, garlic powder, onion powder, salt, pepper, and aged Balsamic vinegar. Mix well with clean hands or a large spoon.
  • 3. Stir together eggs and milk until smooth, add to meat mixture. Mix well to combine all ingredients.
  • 4. Shape mixture into large balls ( the size of your palm) Press a Garlic Stuff Olive ( Mezzetta, Napa Valley Bistro - Garlic Stuffed Olives, get them at Kroger)into the center of the meatball, close with meat and form into a ball. Place on sheet pan 1 inch apart. Set in center of oven and bake for about 20 to 25 minutes until brown and cooked through.
  • 5. Remove the meatballs from the sheet pan, place meatballs in sauce of your choice. Dress meatballs with sauce, serve with pasta and sprinkle with parmesan cheese. ENJOY!!

My Mom knew a Spanish nurse and this is the recipe she gave her. I liked it a lot. It has white wine and green olives in it.

2 slices bread
1/4 cup milk
1 garlic clove, crushed
1/2 teaspoon nutmeg, freshly grated
1 tablespoon parsley, finely minced
1 egg
salt
pepper
2 lbs ground beef
2 tablespoons flour
1 onion, cut into rings
2 tablespoons olive oil
1/4 cup green olives, sliced
1/2 cup white wine
1 cup chicken stock

Steps:

  • Trim crusts and soak bread in milk.
  • Mix bread, crushed garlic, freshly grated nutmeg, finely minced parsley egg, and salt and pepper
  • Add ground beef.
  • Form meat into small walnut size meatballs.
  • Roll meatballs in flour.
  • Cut onion into rings.
  • Heat olive oil in heavy pan.
  • Cook meatballs until browned; remove from pan.
  • Add more olive oil.
  • Brown onions lightly .
  • Add meatballs back to pan with the sliced stuffed green olives.
  • Add wine and chicken stock.
  • Cook until thickened, about 5 minutes.
