Angela's Cream of Broccoli Soup image

My dear friend, Angela, used to make this soup when we were roommates. When we parted because we both got married, she gave me the recipe. It is easy, reliable and delicious. I will try and add a picture of it this weekend.

Number Of Ingredients 10

8 cup(s) chicken broth
2 large crown of broccoli
1 large onion
1 - bay leaf
1 teaspoon(s) thyme
1/4 teaspoon(s) fresh ground pepper
2 or more teaspoon(s) salt
2 tablespoon(s) butter
3-4 tablespoon(s) flour
1 + cup(s) cream or half and half

Steps:

  • Finely chop onion and cook in the chicken broth until soft. Add broccoli, bay leaf, thyme, salt and pepper. Boil briskly until broccoli starts to come apart and is quite soft.
  • Remove bay leaf and discard. Working in batches, blend until smooth and return to soup pot. Melt butter in small saucepan and add flour stirring until it is the consistency of wet sand. Add to soup and stir until smooth.
  • Bring up to a boil to until soup starts to thicken. Add cream to taste and warm up to eating temperature. Garnish with some shredded parmesan.
  • This soup can be made with asparagus, carrot, celery or some other vegetable if you don't like broccoli.
