peanut oil or canola oil
2 large oval idaho potatoes, peeled
sea salt or kosher salt
minced fresh flat-leaf parsley (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Pour at least 1 inch of oil into a deep pot and heat it to 350 degrees.
  • Slice the potatoes into thin matchsticks (1/8 inch thick) with a vegetable slicer or mandolin, dropping them into a bowl of cold water as you cut.
  • Drain the potatoes and dry them thoroughly with paper towels.
  • Drop the potatoes in batches into the hot oil and cook for 3 to 5 minutes, until golden brown.
  • Remove from the pot with a wire basket skimmer or slotted spoon and drain on paper towels.
  • Place on a baking sheet, sprinkle with salt, and keep warm in the oven while you cook the rest of the potatoes.
  • Sprinkle the potatoes with parsley, if desired, and serve hot.

Herbed New Potatoes image

4 tablespoons (1/2 stick) unsalted butter
2 1/2 pounds small white or Yukon gold potatoes, scrubbed but not peeled
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped mixed fresh green herbs, such as parsley, chives, and dill

Steps:

  • Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.

ROSEMARY ROASTED POTATOES



Rosemary Roasted Potatoes image

3 pounds baby Yukon Gold potatoes
1/3 cup olive oil
4 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 tablespoons finely chopped fresh rosemary (divided)

Steps:

  • Preheat oven to 425 degrees F.
  • Slice the bottom off each potato and cut crosswise at 1/8-inch intervals, cutting to within 1/4 inch of the bottom. (You can place the potato on a large spoon so the edges of the spoon prevent you from slicing completely through the potato.)
  • Place the potatoes in a large bowl, add the olive oil, salt and pepper and 1 tablespoon of the rosemary and toss well, working the salt mixture in between the slices. Arrange the potatoes on a sheet pan cut side up.
  • Bake the potatoes for 30 minutes, until they are tender and golden and crisp on top

  • Sprinkle with remaining rosemary and serve.
