8 large garlic cloves, unpeeled
3 1/2 tablespoons olive oil
1 1/2 pounds russet potatoes, peeled, cut into 2-inch pieces
1 1/4 pounds yams (red-skinned sweet potatoes), cut into 2-inch pieces
1/2 cup milk
2 tablespoons (1/4 stick) butter
1 generous teaspoon minced fresh rosemary or 1/2 teaspoon dried
6 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat oven to 350°F. Place garlic in small ovenproof cup or ramekin. Drizzle 2 tablespoons olive oil over. Bake until garlic is very soft, about 25 minutes. Cool; peel garlic, reserving oil in cup.
  • Brush 8x8x2-inch glass baking dish with 1/2 tablespoon olive oil. Cook all potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain, reserving 1 cup cooking liquid. Return all potatoes to same pot.
  • Add milk, butter, rosemary, roasted garlic and reserved oil to potatoes. Mash until smooth and fluffy, adding enough reserved cooking liquid to thin to desired consistency. Mix in 3 tablespoons cheese. Season with salt and pepper. Spoon potatoes into prepared dish. Sprinkle 3 tablespoons cheese over; drizzle with 1 tablespoon oil. (Can be made 2 hours ahead. Cover; let stand at room temperature).
  • Preheat oven to 350°F. Bake potatoes uncovered until heated through and golden on top, about 45 minutes.

1 ½ pounds baking potatoes, peeled and cubed

salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 inch square baking dish.
  • Place garlic in small ovenproof bowl, and drizzle with olive oil. Roast for 30 minutes, or until very soft. Cool and peel the garlic, and reserve the oil.
  • Boil potatoes and yams in a large pot of salted water until tender, about 20 minutes. Drain, reserving 1 cup liquid.
  • Place potatoes and yams in a large bowl with milk, butter, rosemary, garlic, and reserved olive oil. Mash to desired consistency, adding reserved cooking liquid as needed. Mix in 1/4 cup cheese. Season with salt and pepper to taste. Transfer to the prepared baking dish. Sprinkle with remaining cheese.

Steps:

  • Pierce each yam all over with fork. Working in 2 batches, cook yams in microwave 15 minutes. Turn yams over; cook until tender, about 12 minutes longer. Cut yams in half; scoop pulp into bowl. Add 3/4 cup marshmallow creme, butter, and syrup; mash until smooth. Season with salt and pepper. Whisk in eggs. (Can be made 1 day ahead. Cover; chill.)

After much trial and error, and mashing up a few of my favorite recipes, I created these. I've been told by friends and family that don't even like yams that I must make these every thanksgiving.

3 (40 ounce) cans yams, drained
1/2 cup brown sugar
1/2 teaspoon kosher salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2 large eggs, lightly beaten
3 tablespoons unsalted butter, room temperature
1/4-1/2 cup heavy cream
1 (16 ounce) bag marshmallows

Steps:

  • Preheat oven to 350 degrees.
  • Roast drained yams on a cookie sheet for 20 minutes until they are mostly dry and very lightly browned.
  • Mash yams, butter, salt, nutmeg and cinnamon together until well combined.
  • Blend the eggs and cream into yams. Start with 1/4 cup, then increase if needed, depending on how dry your yams are.
  • Pour into buttered 9x13 baking dish and cover with foil.

They taste like candy and melt in your mouth . If you like you can thicken them up with instant mashed potatos, this gives them a bit smoother texture and enables you to use a pastry gun to plate the yams for a fancier presentaion.

1 tablespoon apple cider vinegar
1/4 cup butter

Steps:

  • Sautépancetta in large nonstick skillet over medium heat until crisp. Transfer to small bowl. Add breadcrumbs and 1 tablespoon chopped sage to drippings in skillet; stir over medium-high heat until breadcrumbs are almost crisp, 5 minutes. Transfer to bowl with pancetta. Cool (reserve skillet).
  • Place yams on plate and microwave on high until very soft, 5 to 8 minutes per side, depending on size of yam. Transfer yams to work surface. Cut yams in half lengthwise; scoop out pulp and place in medium glass bowl. Discard skin. Add remaining 11/2 teaspoons chopped sage and 1 tablespoon butter to yams; mash until almost smooth. Also spelled foofoo or foufou, fufu in its many variations is a staple in western and central Africa. Traditionally, it would be made by pounding - pounding, not mashing - the boiled tubers or plantains. This version offers a modern shortcut using the food processor. Use whatever proportions of starch suit your taste. Half yam (not sweet potato) and half green plantain might be a good starting point. Serve with soup, stew, or cooked vegetables.   • Stir first 5 ingredients in bowl to blend. Pierce yams with fork. Microwave on high until tender, about 12 minutes, turning once. Cut yams lengthwise in half; scoop flesh into microwave-safe bowl. Add butter; mash. Season with salt and pepper.

1 lb ground tofu
2 TB olive or canola oil
1 cup onions, chopped
1 cup carrots, chopped
1/2 teaspoon fresh thyme leaves, minced (or 1/4 tsp dried)
2-1/2 cups vegetable stock
3 TB tamari or soy sauce
1 cup frozen peas, thawed
1 cup frozen corn kernels, thawed
1/4 teaspoon freshly ground black pepper
1/2 tablespoon cornstarch
1/4 cup water or stock
1-1/2 teaspoon fresh sage, chopped (or 1/2 tsp dried)
1/2 cup sliced almonds
4 cups Orange Mashed Yams (or mashed potatoes)
Orange Mashed Yams
3-1/2 lbs yams or sweet potatoes, peeled, cut into large chunks
juice and zest of 1 large orange (you should have 1/4 cup juice)
1 tsp lemon juice
1 TB butter
salt to taste

Steps:

  • Preheat the oven to 350°F. Heat the oil over medium-high heat in a large sauté pan. Add the tofu, onions and carrots; cook until the onions are translucent, 3 to 5 minutes. Add the thyme, vegetable stock and tamari. Simmer this mixture 5 minutes. Stir in the peas, corn and pepper. Bring to a simmer. Combine the cornstarch in a small bowl with the water until smooth. Add the cornstarch slurry to the simmering vegetables, stirring constantly. Stir in the fresh sage. Place the filling in a 9-inch pie plate or oven proof casserole dish. Top with 4 cups prepared Orange Mashed Yams. Sprinkle the pie with the sliced almonds. Bake the pie for 25 to 30 minutes until the yams and almonds are golden brown and the filling is bubbling. Orange Mashed Yams Steam the yams for 20 minutes, or boil in water for 25 minutes, until soft. Place the orange zest, orange juice, lemon juice and butter in a saucepan. Place on high heat until the butter is melted. Bring the mixture to a boil and cook for about 2 minutes or until syrupy. Remove the pan from the heat. Mash the reserved yams. You should have about 4 cups. Combine the orange juice mixture with the yams. Add the salt. Mix well.
