An easy rolled, refrigerator, no bake cookie!

Steps:
- Boil unpeeled potato until soft. Let cool slightly then peel and mash.
- Stir in confectioners' sugar into the mashed potato and mix until stiff. On a piece of waxed paper or plastic wrap roll out potato mixture into 1/4 inch thick rectangle. Spread peanut butter over entire area (adjust thickness to suit taste). Roll up jellyroll-fashion wrap with plastic wrap and refrigerate for few hours. Cut into slices to serve.

- 1. Preheat oven to 400 degrees F. Coat baking sheets with cooking spray. In a large bowl, cream together brown sugar and shortening until light and fluffy. Beat in egg and almond extract, mixing well. Add melted chocolate and mashed potatoes, beating until smooth. In a small bowl, combine flour, salt, and baking soda. Alternately add flour mixture and milk to brown sugar mixture, stirring until smooth.

- Mix together with coconut,walnuts sugar and vanilla.
- Chill.
- Roll into small balls and dip in chocolate mixture.
- Chill and store in airtight container.

- 1. while the butter is melting in the microwave, whip the eggs to combine. add the sugar, cream of tartar, soda, salt, flavorings. add the butter, mashed potato flakes, flour. fold in the coconut, chips. ref 1 hr and bake on greased cookie sheet at 350 for 10 min. let set on cookie sheet a minute before removing.
