A cake layer topped with marshmallows topped with peanut buttery Rice Krispies® topping. Simply delicious.

cooking spray
¾ cup flour
¾ cup white sugar
½ cup butter, softened
2 eggs
1 teaspoon vanilla extract
½ teaspoon baking powder
½ teaspoon salt
½ (16 ounce) package miniature marshmallows, or more to taste
1 cup peanut butter
1 (6 ounce) package butterscotch chips
1 ½ cups crispy rice cereal (such as Rice Krispies®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Beat flour, sugar, butter, eggs, vanilla extract, baking powder, and salt together in a bowl; pour into prepared baking dish.
  • Bake in the preheated oven until golden, about 20 minutes. Pour marshmallows over the cake layer and return to oven; bake until the marshmallows puff, about 2 minutes more.
  • Stir peanut butter and butterscotch chips together in a saucepan over medium heat until melted; add crispy rice cereal. Spread peanut butter mixture over marshmallow layer; cool completely before cutting into bars.

I took a recipe off of a bag of Kraft Marshmallows and revised it to work with the ingredients I had on hand. This is the results. I would recommend cutting it into small squares. It is very rich and a little goes a long way!!!

Yield 30-32 small squares

Number Of Ingredients 7

1 (18 1/2 ounce) box dry yellow cake mix
1/2 cup butter, melted
1 large egg
3 cups mini marshmallows
1/2 cup peanut butter chips
1/2 cup mild chocolate chips
1 cup roasted peanuts, chopped

Steps:

  • Preheat oven to 375°F.
  • Mix the cake mix, butter and egg until well blended; it will be a stiff, dough like consistency.
  • Press onto bottom of a lightly greased 13x9 baking dish.
  • Bake for 15-20 minutes, or until toothpick inserted in center comes out clean.
  • Sprinkle marshmallows on top of crust.
  • Mix peanut butter and chocolate chips and sprinkle on top of marshmallows.
  • Sprinkle nuts on top of chips.
  • Place back into the oven and bake and additional 2-3 minutes, or until marshmallows begin to puff.
  • Cool completely and cut into small squares.
