1 White cake mix
3 Egg whites
2 Tbsp. Olive oil
1 Can frozen margarita mix thawed
1 Tbsp. Fresh lime juice
Zest from one lime
8 oz. Cream cheese softened
½ C. Butter softened and unsalted
1 Tbsp. Fresh lime juice
1 Tbsp. Lime zest
5 C. Confectioners sugar

Steps:

  • Preheat the oven to 350 degrees and grease two 9 inch cake pans well.
  • Add the ingredients for the cake to a mixing bowl, and beat on high until smooth.
  • Pour the batter evenly between the two cake pans and bake for 35 minutes, or until cooked through. Allow cooling to room temperature on a rack.
  • Once cooled, run a knife around the edges of the cakes, and turn them out onto a cooling rack.
  • Add the butter and cream cheese for the icing to a mixing bowl, and beat until light and fluffy.
  • Place the lime juice, zest, and confectioners sugar for the icing to the mixing bowl, and beat until a smooth and creamy icing has formed.
  • Place one layer of the cake on a serving tray or platter.
  • Add a layer of icing to the top of that layer of cake.
  • Put the other layer of cake on top of the first, and continue to ice the top and sides of the cake completely.
  • Garnish with fresh lime slices and zest before serving.

1 package lemon cake mix (regular size)
1 package (3.4 ounces) instant lemon pudding mix
1 can (10 ounces) frozen nonalcoholic margarita mix, thawed
4 large eggs, room temperature
1/2 cup butter, softened
2 tablespoons lime juice
3 teaspoons grated lime zest
GLAZE:
1-1/2 cups confectioners' sugar
3 tablespoons lime juice

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. In a large bowl, combine cake mix, pudding mix, margarita mix, eggs, butter, lime juice and zest; beat on low speed for 30 seconds. Beat on medium for 2 minutes., Transfer batter to prepared pan. Bake 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely., Meanwhile, combine glaze ingredients. Drizzle over cake.

1 (18 1/4 ounce) box white cake mix (no pudding in the mix)
1 (10 ounce) can frozen margarita mix, thawed (undiluted)
3 egg whites
2 tablespoons vegetable oil
1 tablespoon grated lime zest
8 tablespoons unsalted butter, softened
1 (8 ounce) package cream cheese, softened
2 tablespoons key lime juice
1 teaspoon key lime zest or 1 teaspoon lemon zest
4 -5 cups confectioners' sugar

Steps:

  • In large bowl, combine cake mix, Margarita mix, egg whites and vegetable oil using electric mixer.
  • Stir in lime zest; mix completely.
  • Fill prepared pans 2/3 full.
  • Bake according to box directions (usually 325 degrees - be sure to check box!) 22-24 minutes or until toothpick inserted in center of cupcake comes out clean.
  • Cool in pan on cooling rack 5-8 minutes.
  • Remove cupcakes from pan; cool completely.
  • FOR ICING:.
  • In large bowl, cream butter, cream cheese, juice and zest with electric mixer until light and fluffy.
  • Add 4 cups confectioners' sugar, one cup at a time; continue beating until light and fluffy.
  • If icing is too thin add additional confectioners' sugar 1 tablespoon at a time.
