1 cup pancake/waffle mix
½ cup milk
1 egg
2 tablespoons butter, melted
1 cup apple - peeled, cored and sliced
½ teaspoon ground cinnamon
⅓ cup pecans, chopped
3 tablespoons maple syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Mix together pancake mix, milk and egg until blended. Set aside.
  • Pour melted butter in 9-inch pie plate. Place apple slices in bottom of pie plate. Sprinkle cinnamon and pecans over apples and drizzle syrup over top. Pour batter over apples.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes or until top springs back when touched. Loosen edges and invert onto serving platter. Cut into wedges before serving.

2 tablespoons Coconut Sugar
2 teaspoons Ground Cinnamon
1 teaspoon Baking Powder

2 cups Unsweetened ALmond Milk
1/2 cup Unsweetened Applesauce

Steps:

  • Preheat the oven to 375'F. Lightly grease a 2 quart casserole dish.
  • In a large bowl, combine rolled oats, sugar, cinnamon, baking powder, ginger, salt, and nutmeg. Mix well.
  • In a separate bowl, combine almond milk, applesauce, maple syrup, and vanilla and stir well to combine.
  • Pour the liquid mixture over the oat mixture and stir until combined. The mixture will be soupy. Stir in the apples and pear.
  • Spoon the oatmeal into the casserole dish and smooth out the top. Sprinkle the walnuts on top and gently press them down into the oatmeal with your hands.
  • Bake, uncovered, for 35-45 minutes until the oatmeal is bubbly and the apples are fork tender.
  • Cool the oatmeal for 5-10 minutes before serving. Enjoy with a splash of almond milk and drizzle of maple syrup if desired.
  • Cool the oatmeal completely before wrapping it up and placing it in an airtight container. It will keep in the fridge for 5 to 6 days or in the freezer for 2 to 3 weeks.

1 whole unsmoked leg of gammon (about 4.5kg-5kg), on the bone
150ml apple juice
2 cinnamon sticks
2 star anise , plus 8-12 to serve (optional)
10 whole peppercorns
6 cloves
4 bay leaves
pared zest 1 orange
5 small apples (we used Braeburn)
edible gold spray , to decorate (optional)
bay leaves , to decorate (optional)
pared orange zest , to decorate (optional)
250ml maple syrup
50ml apple juice
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp ground cloves
2 tbsp wholegrain mustard

Steps:

  • If your gammon needs to be soaked to draw out some of the salt (ask your butcher), place in a clean bucket or a preserving pan and cover with cold water. Chill overnight, or for up to 3 days.
  • Heat oven to 160C/140C fan/gas 3. If the ham has been soaking, drain it well and place in a large, deep-sided roasting tin. Pour in the apple juice and top up with 400ml water. Add the spices, bay leaves and orange zest. Cover the ham tightly with a few large sheets of foil, scrunching it around the edges of the tin so no steam can escape, then bake for 5 hrs. Meanwhile, mix together the ingredients for the glaze in a saucepan, then bubble until reduced to a sticky glaze. Score the apples around their equator with a small, sharp knife.
  • Remove the ham from the oven and increase the temperature to 200C/180C fan/ gas 6. Carefully transfer the ham to a board - the easiest way to do this is to leave it to cool for 10 mins, then pop on clean washing- up gloves to lift it. Pour away the cooking liquid and discard the aromatics. Use a small, sharp knife to cut and peel away the rind, leaving a thin layer of fat attached to the meat. Line your roasting tin with a few sheets of foil and place the ham in the middle, fat-side up. Use a sharp knife to lightly score the fat in a criss-cross pattern. Return the ham to the oven and bake for 30 mins until the fat starts to crisp and caramelise.
  • If the glaze has become a little thick, splash in a drop of water to loosen it, then brush all over the ham. Place the whole apples in the tin too, and return to the oven for another 20-30 mins, basting the ham every now and then, until dark and sticky all over.
  • Before serving, mash the whole apples (discard the stalks, skin and pips) with a little of the sticky sauce from the roasting tin. We decorated our ham with star anise, sprayed with edible gold spray, and arranged bay leaves and orange peel around the board. Serve warm slices of the ham with the apple sauce, or cold in sandwiches. Will keep for up to 1 week in the fridge, or slice and store in the freezer for up to 2 months.

Steps:

  • Preheat oven to 400°F (200°C).
  • Peel the apple and cut in half. Using a melon baller, carve out the core of the apple halves.
  • Using a sharp knife, make vertical incisions into the apple, about a quarter of an inch apart, without cutting all the way through the apple halves. (You can use a set of chopsticks as safety bumpers to make sure that your knife can't cut all the way through.)
  • In a small bowl, mix together the maple syrup, nutmeg, and cinnamon. Use a pastry brush to coat the apple halves with the maple spice mixture.
  • Bake for 30 minutes until the apples are tender and lightly browned.
  • Top each apple half with a small scoop of frozen yogurt and a sprinkle of chopped almonds and serve.

4 cups dried navy beans
10 cups water
1 pound sliced bacon, quartered
1 large onion, chopped
2 teaspoons salt
1 teaspoon ground mustard
1 cup maple syrup
3 medium tart apples, peeled and sliced
1/4 cup butter, softened
1 cup packed brown or maple sugar

Steps:

  • Place beans in a soup kettle or Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. , Drain and rinse beans; discard liquid. Return beans to the pan; add 10 cups water. Bring to a boil Reduce heat; cover and simmer for 30 minutes. Drain, reserving 1/2 cup liquid., Line the bottom of a 4-qt. baking dish with bacon. In a large bowl, combine the beans, onion, salt and mustard. Spoon over bacon. Pour syrup over the top. Cover and bake at 350° for 3 hours, gently stirring occasionally and adding reserved bean liquid if needed., Arrange sliced apples over the top. 1/2 teaspoon nutmeg
1/3 cup brown sugar, packed
1/3 cup yogurt, low-fat
1/4 cup raisins
1/4 cup maple syrup

Steps:

  • A large, firm, tart apple is best.
  • Use Ida Red or Northern Spy.
  • A Cortland can be used.
  • However, if you use a McIntosh, you must shorten the cooking time.
  • Core apples and remove top inch of peel.
  • Make a shallow out through skin around centre of each apple to prevent skin from bursting.
  • Place apples upright in baking dish or pie plate.
  • In a small bowl, combine brown sugar, raisins, cinnamon and nutmeg.
  • Spoon into centres of each apple.
  • Add water to cover bottom of dish.
  • Bake, uncovered in 375 F for 25 to 30 minutes for less firm apples and up to 50 minutes for firm varieties or until apples are tender when pierced with a toothpick.
  • Combine the yogurt and maple syrup to make the sauce.
  • Pour over the baked apples.
