Easy stuffed celery sticks are ready on your table in minutes which makes them the perfect last-minute appetizers for any party or family gathering.

6 large celery stalks, ends trimmed off and cut into 4 pieces, see note 1
4 ounces cream cheese, about ½ cup (120 grams)
½ small red onion, (about ¼ cup chopped)
¼ cup pecans (25 grams)
⅓ cup pecorino cheese powder (35 grams), see note 2
paprika, for sprinkling
black pepper, for sprinkling

Steps:

  • In a food processor, process cream cheese, onion, pecans and pecorino.
  • With a spoon, fill each celery cavity with a cream cheese mixture.
  • Sprinkle with paprika and black pepper and serve!

Stuffed Celery Bites (Italian Style) image

A tasty twist on a favorite appetizer. Enjoy! For easiest preparation, spread the cream cheese mixture in the celery first, then slice into 2-inch pieces.

nonstick cooking spray
2 tablespoons pine nuts
1 garlic clove, minced
8 stalks celery
1 (8 ounce) container cream cheese (or cream cheese with sun-dried tomatoes)
1/4 cup shredded Italian cheese blend
2 tablespoons dry roasted sunflower seeds
celery leaves (optional)

Steps:

  • Lightly coat a skillet with nonstick cooking spray. Add pine nuts and minced garlic. Cook over medium heat for 3 to 5 minutes or until nuts are golden brown, stirring frequently. Set aside.
  • Remove tops and wide base from celery stalks.
  • In a small bowl stir together the creeam cheese and Italian cheese blend. Spread or spoon cheese mixture into celery.
  • Cut each filled stalk of celery into 2-inch pieces.
  • Sprinkle half the pieces with the pine nut mixture and half with the sunflower seeds.
  • If desired, top with celery leaves.

2 tablespoons pine nuts
1 garlic clove, minced
8 stalks celery
1 (8 ounce) container sun-dried tomato cream cheese
1/4 cup Italian cheese blend, shredded
2 tablespoons shelled dry roasted sunflower seeds

Steps:

  • Lightly coat a skillet with cooking spray. Add pine nuts and garlic.
  • Cook over medium heat for 3-5 minutes or until nuts are golden brown; set aside.
  • Remove tops and wide base from celery.
  • Using a vegetable peeler, remove two thin strips from the rounded side of the celery, creating a flat surface.
  • In a small bowl combine the cream cheese and the shredded cheese.
  • Spread or spoon cheese mixture into celery.
  • Cut each filled stalk into 2 inch pieces.
  • Sprinkle half the pieces with the pine nut mixture and half with the sunflower seeds.

1 teaspoon vinegar
1 teaspoon curry powder
2 tablespoons milk
6 tablespoons mango chutney
1 salt and pepper to taste
12 celery stalks, cleaned

  • Mix well the cream cheese, vinegar, curry powder, milk, chutney, salt and pepper. Stuff into celery stalks. Cut celery into 2-inch pieces. Chill until serving time.

6 celery ribs
1/4 cup canned crushed pineapple, drained
1/2 cup soft light cream cheese
2 tablespoons creamy peanut butter
1 tablespoon honey
1/4 cup dried fruit
1/4 cup dry-roasted nuts, finely crushed

Steps:

  • Rinse the celery, them trim off the leafy parts, and cut into 10-inch pieces.
  • In a medium-sized bowl, combine the drained pineapple, cream cheese, peanut butter, and honey.
  • Stir with a rubber spatula until well mixed.
  • Stir in the raisins or fruit bits and hot sauce, if desired.
  • Using a table knife, fill the groove of each celery stalk with the cheese mixture.
  • Sprinkle the crushed nuts over the stalks.
