Steps:

  • Peel mango and cut into cubes.
  • Put mango, milk, sugar, yogurt into blender.
  • Blend till smooth.
  • Pour into tall glasses and serve icy cold.
  • Sprinkle with cinnamon.

4 mangoes
1 cup sugar, divided
1 1/2 tablespoons cornstarch
1 cup water
1 tablespoon lemon juice
2 teaspoons unsalted butter, cut into several small pieces
1 1/2 tablespoons cinnamon sugar
1 cup (4 1/2 ounces) all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons shortening
1/2 cup milk

Steps:

  • Preheat the oven to 375 F.
  • Spray a 1 1/2-quart baking dish lightly with nonstick cooking spray.
  • Peel and slice-or dice-the mangoes . You should have about 4 cups.
  • In a medium saucepan, combine 2/3 cup of the sugar with the cornstarch. Stir to blend. Add the water and lemon juice along with the mango.
  • Place the saucepan over medium-high heat and bring to a boil. Reduce the heat to low and simmer for about 5 minutes, or until the fruit is just tender.
  • Pour the hot sliced mango and syrup into a 1 1/2-quart baking dish; dot with butter and sprinkle with the cinnamon sugar.
  • In a medium bowl, combine the flour, the remaining 1/3 cup of sugar, baking powder, and salt; blend well. Cut the shortening into the flour mixture until it resembles coarse meal. Add the milk and stir to blend.
  • Drop spoonfuls of the dough over the hot fruit mixture.
  • Bake in the preheated oven for about 25 to 30 minutes, or until the topping is golden brown.
  • Serve the mango cobbler warm or cold with ice cream or whipped cream.

2 ripe mangoes (about 1 pound-may use frozen)
2 cups orange juice
8 ice cubes
2 -3 limes, juice of
sparkling water (or club soda, tonic, etc.)
mint sprig (to garnish, or lime wedges, or both)

Steps:

  • Peel the mangoes and cut as much of the flesh off as you can.
  • Add orange juice and ice and puree in food processor or blender until smooth.
  • Add lime juice to taste.
  • Pour into a pitcher over the ice cubes and let the foam settle a few moments, then thin with the sparkling water.
  • Serve with a sprig of mint and/or a lime wedge. Enjoy!

1 1/2 ounces orange juice
1/2 ounce fresh lemon juice
1/2 ounce Cointreau liqueur
3 ounces mango nectar

mango, slice (optional, for garnish)

Steps:

  • Fill tall glass with 5-6 ice cubes. Add the vodka, orange juice, lemon juice, cointreau, and nectar. Stir gently. Add mango slice for garnish, and serve immediately.

I never particularly cared for mangos until I tried this recipe. This recipe came from a friend in Hawaii and is the only bread I now make.

2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
2 teaspoons ground cinnamon
½ cup butter, softened
½ cup vegetable oil
1 ½ cups white sugar
3 eggs
1 teaspoon vanilla extract
3 cups peeled, seeded and chopped mango
½ cup raisins
½ cup chopped walnuts
½ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, sift together flour, baking soda, salt and cinnamon. In a large bowl, beat together the butter, oil and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla. Blend this mixture into the flour mixture; just to combine. Fold in the mango, raisins, walnuts and coconut; mixing just enough to evenly combine.
  • Let stand for 20 minutes then bake in preheated oven for 50 to 60 minutes or until a toothpick inserted into center of the loaf comes out clean.
