ZUCCHINI CAKES "CRAB CAKES" FOR THE POOR MAN'S BUDGET



Zucchini Cakes

I was looking for another way to use the surplus of zucchini from our garden, when I came across this recipe. I was surprised at how much they actually taste like crab cakes. Even my husband, who doesn't like zucchini, raved about this dish!

2 1/2 cups zucchini (peeled and grated)
1 cup breadcrumbs (seasoned or plain)
1/4 cup yellow onions or 1/4 cup red onion, minced
1/4 teaspoon salt
1/4 cup all-purpose flour
2 tablespoons butter, melted
1 teaspoon Old Bay Seasoning
fresh ground pepper, to taste
canola oil or olive oil, for frying
cayenne pepper (optional, for a little extra spice)

Steps:

  • Spread grated zucchini on a kitchen towel and roll up. Twist towel to wring out as much liquid as possible. If you fail to do this, your cakes will be too wet.
  • In a large bowl, combine zucchini and butter. Stir in bread crumbs, onion, Old Bay, cayenne pepper, salt, and pepper. Mix thoroughly to combine.
  • Coat your hands in oil, and shape mixture into patties. Coat each patty in flour. In skillet, heat oil over medium-high heat until hot. Fry patties until golden brown on both sides. (About 3-5 min per side).

3 cold baked potatoes
½ cup butter
½ cup chopped bell pepper
½ cup chopped onion
½ cup diced celery
½ cup milk
1 pound imitation crabmeat, flaked and chopped
½ cup shredded Cheddar cheese
¼ cup chopped fresh dill
1 pinch salt to taste
2 eggs, beaten
1 tablespoon olive oil

Steps:

  • Split and mash the potatoes in a mixing bowl; set aside. The potato skins may be left on if desired.
  • Melt the butter in a saucepan over medium-high heat; cook and stir the bell pepper, onion, and celery in the melted butter until they begin to soften, 5 to 7 minutes. Remove from heat and stir the milk into the mixture; pour the mixture over the mashed potatoes and stir to combine. The consistency should not be too runny. Allow the mixture to cool completely.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Add the crabmeat, Cheddar cheese, and dill to the potato mixture; season with salt. Lightly mix. Pour the beaten eggs into the mixture and stir to combine. If the mixture is too thin, bread crumbs or flour can be added to make more firm. Form the mixture into 24 small patties.
  • Heat the olive oil in a large skillet over medium heat; cook the patties in small batches in the skillet until completely browned and crisp, 3 to 5 minutes per side. Do not flip until bottom is fully browned and crisp; this ensures the patties will not break. Transfer to a baking dish in the oven to keep hot until all are cooked. Serve hot.

This recipe is from "The Food Of Asia" a really beautiful book published in 1998. I have not tried this recipe - it is being posted in response to a recipe request for Thai appetizers.

1 1/4 lbs shrimp, peeled & deveined
5 ounces lard
1 teaspoon salt
1/2 teaspoon sugar
2 cups fresh breadcrumbs
oil, for deep-frying
1 cup white vinegar
1/2 cup sugar
1 tablespoon cauliflower, finely sliced
1 tablespoon baby corn, finely sliced
1 tablespoon cucumber, chopped
5 bird's eye chilies (or any fresh, hot chili)
2 shallots or 2 green onions, finely sliced

Steps:

  • Chop shrimp and lard together until fine.
  • Add salt, sugar& bread crumbs and shape into small patties.
  • Deep fry until golden brown& fragrant.
  • For the accompaniment: Bring vinegar and 1/2 cup sugar to a boil- then cool.
  • Add all vegetables, chilis& shallots- set aside.
  • Serve with fried patties.

450 g firm white fish fillets
3 tablespoons rice flour or 3 tablespoons cornflour
1 tablespoon fish sauce
1 egg, beaten
1/2 cup fresh coriander leaves
3 teaspoons red curry paste
1 -2 teaspoon chopped red chile (optional)
100 g green beans, very finely sliced
2 spring onions, very finely chopped
1/2 cup oil, for frying

Steps:

  • Process the fish in processor til smooth.
  • Add rice flour, fish sauce, beaten egg, corriander, curry paste and chillis.
  • Process til combined. Transfer to a bowl.
  • Add spring onions and beans and mix together.
  • Use wet hands to form 2 tablespoons of mix at a time into flattish patties.
  • Heat oil in frying pan (skillet).
  • Cook 4 fish cakes at a time until brown on both sides, drain on paper towels, and serve with dipping sauce. Or go to Asian Dipping sauces that I am going to post, sorry I don't have the # yet) for serving.
  • DIPPING SAUCE:.
  • In small bowl dissolve 1 teaspoon of sugar in 1/3 cup fish sauce. Sir constantly. Add 2 tablespoons rice wine vinegar, 1 tablespoon lime juice, 2 small seeded and very finely chopped red chillis.
  • Finely grate 1/2 small carrot, and a peeled radish, stir into sauce just before serving.

These are wonderful to have on hand for game days or when you have unexpected guests. They freeze wonderfully and the recipe is easy to double. If you can't find the Old English, Kahuna sharp cheese spread can be substituted.

12 ounce(s) imitation crabmeat, chopped
5 ounce(s) jar kraft old english cheese spread
1 stick(s) salted butter, softened
1 1/2 teaspoon(s) garlic powder
1 teaspoon(s) old bay seasoning
2 tablespoon(s) mayonnaise
1 tablespoon(s) parsley flakes
3 dash(es) frank's red hot, or preferred pepper sauce
2 tablespoon(s) roasted red peppers, finely chopped

  • Combine softened butter, cheese spread and mayonnaise until well blended and smooth.
  • Add seasonings,imitation crab and roasted peppers mix well.

ONCE AGAIN... NOT FOR THE DIET CONCIOUS!!! made bacon pancakes for the boyfriend one day and a little while later this is what he concocted! Later we had added some smoked paprika and garlic paste to the pancake batter.

pancake batter
2 -3 eggs
2 cups sausage gravy
1 cup cooked crumbled bacon
5 cooked sausage links

Steps:

  • add desired amount of cooked bacon to already made pancake batter (we had just used simple bisquick).
  • crack egg on griddle and fry until slightly cooked on the one side.
  • flip over and instantly pour desired amount of pancake batter over egg.
  • cook pancake as you normally would.
  • chop sausage links and add to sausage gravy if desired.
  • pour gravy over your pancake and there you have it!
  • a MANcake!
